Tour description

Take a deep dive into the world’s most popular dish on a carefully crafted naples pizza tour..

If you want to take your love of pizza to the next level, this is the tour for you. We’ll take you behind the scenes of some of Naples’ best-loved pizzerias and introduce you to the ingredients, history, and people behind this humble working-class meal-turned-international phenomenon. With a Naples local (and fellow pizza lover) leading the way, you’ll gain a deeper understanding of pizza and what sets Naples’ original recipe apart—all before the pizzerias even open to the public.

Discover the ingredients and techniques perfected by Neapolitan artisans and pizzaioli throughout the centuries.

Start your Naples pizza tour at a local produce shop, where you’ll get a crash course in the simple yet flavorful ingredients that make up this culinary staple. We’ll introduce you to our friends Angelo and Tina, whose homemade tomato sauce is one of our personal favorites (and after one taste, you’ll understand why). You’ll also try the raw material itself: tomatoes so fresh they taste like they’ve just been plucked from the vine.

Next, we’ll stroll through the streets of the Spanish Quarter, dotted with a unique mix of religious iconography interspersed with murals dedicated to Diego Maradona. It’s a fitting leadup to the first pizzeria on our tour, named in honor of the Argentine soccer great who once played for Napoli. Step into the kitchen and watch as pizza dough is expertly crafted from a few simple ingredients before biting into a crispy and delicious fried pizza.

At our next stop, you'll learn why only certain types of wood can be used to fuel the traditional ovens that give Neapolitan pizza its irresistibly crunchy crust. Hear from the expert team as they share their wisdom on creating pizza perfection and watch as the oven is fired up for the day. (Craving pizza already? No worries—we’ll be back to try the finished product very soon.)

Before that, though, you’ll head to a small neighborhood grocery store for an introduction to all things cheese. In addition to tasting a selection of top-quality cheeses, you’ll learn about the differences in texture and flavor—and even hear which kind was used before mozzarella became the preferred cheese for pizza.

Get insights that will help you further appreciate every bite.

It's time for the highlight of your Naples pizza tour: a taste of truly authentic pizza napoletana . Head back to the pizzeria where we fired up the oven earlier and sit down to tuck into a freshly made Margherita pizza. The centuries-old techniques and top-quality ingredients you’ve discovered throughout the morning will make your meal even more memorable.

In two and a half delicious hours, you’ll take your love of pizza even further than most. With your guide's expertise, you'll learn how every aspect of Neapolitan pizza—the ingredients, the preparation, and the history behind it—makes the final product so much more than the sum of its parts.

two Pizzeria da Michele pizzas as seen from above on a naples pizza tour, one of the best things to do in italy

Our Delicious, Independent Naples Pizza Tour

This Naples pizza guide was written in partnership with Expedia.com.

Naples and pizza: those are two words that simply go together, so when we decided to head down to Naples and explore the city, we immediately knew that the best way to structure our visit would be through a Naples pizza tour.

Rather than head out for a single day, though, we wrote our own, marking down our best picks for pizza in Naples and embarking on a multi-day independent Naples pizza tour.

We teamed up with Expedia for our explorations, with their Naples city guide helping us find nearby sights to break up the doughy madness (and also making us desperate to make a return trip when it’s the right season to visit the Amalfi Coast).

But while November may not be beach season, it is the perfect time for pizza in Naples, and we definitely had an unforgettable experience in the city.

We finished this Naples pizza tour so completely stuffed that we probably won’t taste another slice for weeks!

How We Put Together Our Naples Pizza Tour

Our naples pizza tour stops, okay, but which one is your favorite, more epic naples pizza tour stops.

Essentially, we did lots and lots of googling to put this Naples pizza tour together.

We’re hardly the first people to want to eat their weight in pizza while in Naples–even the Michelin Guide has put in their share of work in rounding up the best pizza in Naples, and pizza features prominently on any guide to what to eat in Naples –so many articles later, we cultivated a list of Naples pizza shops that we thought would show us a cross-section of the pizza culture in the city.

Our picks ranged from classic and historical (including where pizza margherita was invented) to trendy and modern, and all five shops are within walking distance of Naples’ major tourist attractions.

Want to follow in our footsteps? We highly recommend it–eating our way through the best pizza in Naples was incredibly fun, perfectly manageable over a few days in Naples, and a fantastic way to structure a visit to the city.

Naples Pizza Tour: Pizzeria Matteo

L’Antica Pizzeria da Michele

L’Antica Pizzeria da Michele may have gotten an uptick in publicity from Julia Robert’s filming Eat Pray Love th ere–but since the pizzeria opened in 1870 and they’ve been recognized by the Michelin Guide, they’ve definitely been popular in Naples for much longer than that!

Not only is the pizza here completely delicious, boasting our favorite crust that we tasted in the city, the atmosphere is incredible: the menu is tiny (two choices: pizza margherita or pizza marinara), customers sit squished close together at tiny tables, and the pizza oven is completely visible along the back wall of the restaurant.

Surprisingly, given its popularity, this was also the least expensive pizza we had in a restaurant in Naples–each pie was 4 Euros, and the prices can only rise as high as 5 Euros (if you opt for the bigger size or double the cheese).

This is the only place we waited for a table for–about 30 minutes on a weekday in November–rumor has it that you can avoid the wait by showing up right when they open at noon.

Naples Pizza Tour: Margherita Pizza

Pizzeria di Matteo

Looking for cheap prices, a giant menu, and great pies just steps away from Naples’ Duomo? Welcome to Pizzeria Matteo.

This was neither our favorite nor least favorite stop on our Naples pizza tour: the atmosphere was a bit lacking inside, but the pizza (we opted for rucola and parmesan) was tasty and the prices were competitive, coming in at only 6 Euros for our pizza.

The location itself is a bit of a selling point, as most people visiting Naples will almost certainly be close by at some point.

Pizzeria de’ Figliole

Before arriving in Naples, if someone had stated that they were eating fried pizza, I would have immediately assumed that they were at a carnival or fair in the USA, home of deep-fried just-about-anything.

But, no–fried pizza is as Neapolitan as they come, dating back hundreds of years. It was originally considered a poverty food, but seeing as it’s completely delicious, it has stuck around over the decades and remained a favorite in Naples.

No Naples pizza tour could be complete without sampling at least one fried version, and Pizzeria de’ Figliole is the place to go to try it.

Ingredients are already chopped and prepared under the glass countertop, and when we walked in and ordered, the woman behind the counter started stuffing some dough on the spot!

In less than five minutes, we watched our fried pizza get assembled, dumped into and then scooping out of the deep fryer, wrapped in paper, and delivered to us as a takeaway order–all for a whopping 4 Euros.

Naples Pizza Tour: fried pizza making at Pizzeria de’ Figliole

Pizzeria Brandi

Before arriving at Pizzeria Brandi, we had heard it described as a historical must-see on a Naples pizza tour (margherita pizza was invented here!), but not actually a remarkable pizza.

Well, everyone has different tastes… but we loved this pizza.

The crust, sauce, cheese, and basil combined into a perfect flavor (we ordered the margherita, of course), and the price was fair at 6.5 Euros for a pie.

The restaurant itself was also cozy and warm, boasting lots of dark wood and feeling like every bit like the nostalgic Naples pizza joint that it is.

Naples Pizza Tour: Pizzeria Brandi original margherita

Pizzeria Gino e Toto Sorbillo

Sadly, this is the only destination on our Naples pizza tour that we would rate slightly disappointing… and by slightly disappointing, I mean that we would have raved about this pizza when eating anywhere but Naples, but it just couldn’t quite stack up to its impressive neighbors.

That being said, this pizzeria is one of the most commercially successful in Naples, with locations in Milan and New York in addition to its Naples locations… so if you happen to be in Milan or NYC where the competition for Napoli-style pizza is less stiff, you’ll likely be thrilled with this pizza!

Sorbillo is known for its inventive ingredients, so if you’d like to step outside of a traditional pizza order in Naples, this is the place to do it.

Naples Pizza Tour: Pizzeria Sorbillo

That’s always the first question, right?

And, just like answering what our favorite country is, it’s hard to say.

If we had to choose one of these pizza shops that you just simply couldn’t skip on your own Naples pizza tour, though, it would be L’Antica Pizzeria da Michele.

S ure, it’s popular, but the combination of the utterly delicious pizza and distinct environment makes it an unmissable Naples pizza tour experience in our minds!

That being said, when we eventually return to Naples, we’ll probably be most likely to return to Pizzeria Brandi–we loved the cozy atmosphere and their delicious (and original!) margherita pizza.

Naples Pizza Tour: Streets of Naples

Even once we narrowed down our list of possible stops on our Naples pizza tour, there was simply no way we were going to hit them all–these locations didn’t make the cut, either due to location or time, but they’re still on our list for next time!

This pizzeria is known for its modern twist on Naples pizza tradition, and for the beautiful views from the terrace at its Chiaia location.

Pizzeria La Notizia

Pizzeria La Notizia has two locations in Naples, located right down the street from each other–making them a perfect addition to a Naples pizza tour!

The 53 Via Michelangelo da Caravaggio location is known for its traditional pizzas, and down at 94 Via Michelangelo da Caravaggio, Pizzeria La Notizia has a more experimental style.

Naples Pizza Tour: Streets of Naples

Pizzeria dal Presidente

Pizzeria dal Presidente is famous for–what else–having a president eat there. President Bill Clinton ate at this pizzeria while in office, and it has been famous ever since.

We passed by partially because of how cheesy the advertisements outside were–lots of promotion of various celebrities who ate there–but it is a popular pizzeria, and the advertising makes some sense as there are some would-be imposters with similar names nearby.

Pizzeria Starita

Pizzeria Starita is famous in part for Sophia Loren filming a scene there for her 1954 movie “The Gold of Naples”.

However, as the pizzeria was founded in the 1940’s and is popular to this day–even getting a nod from the Michelin Guide–it’s still definitely well worth a visit on a Naples pizza tour.

FAQs about pizza tours in Naples

Why is naples known for pizza.

Naples is known for pizza because it is widely considered to be the birthplace of modern pizza.

The traditional ingredients used and cooking techniques developed here were then adopted by other regions around Italy and beyond.

Other popular pizzas include Marinara (with garlic and tomato sauce), Margherita (with tomato sauce and mozzarella) and the pizza fritta (fried pizza).

It is believed that the pizza Margherita was invented in the late 19th century to celebrate the unification of Italy and its new flag.

It was named after Queen Margherita who was the Queen of the newly formed Kingdom of Italy.

  • Go20680131356 0 contributions 5.0 of 5 bubbles History, Food, Zest For Life, Naples This was our second time staying in Sorrento and our second visit to Naples, the first visit did not go well, but knew from watching videos there must be more to the city than what we experienced. We decided to give it another go and picked a tour which had sight seeing and food, this tour was perfect for what we wanted. Antonella, the guide, started as she meant to go on with a text before ensuring we knew where to meet and offering help if we had any problems getting there. After that her enthusiasm for the city she obviously loved was infectious, she was knowledgeable and informative as well as protective in the busy streets. As there was only two of us in the tour on Monday she was as happy to structure the tour around us and our interests. Once the tour had finished she recommended places to go that fit in with our plans for the rest of the day, I feel if we had been there all week she would have been happy to have continued doing this. You may be able to tell from this we were sold on Antonella and as a result in Naples, it's history and its food. Next year we plan to return and stay in Naples as opposed to Sorrento. Obviously we recommend this tour ☺️ Read more Written February 14, 2024

Best Pizza in Naples – 18 Pizzerias Not To Miss

By Author Daryl and Mindi Hirsch

Pinterest image: photo of pizzas with caption reading

Our ultimate Naples Pizza Guide features 18 outstanding pizzerias. Give it a read and discover where to eat the best pizza in Naples and beyond.

Margherita del Monaco Pizza at Bro Ciro and Antonio Tutino in Naples

We can’t get enough pizza in Naples.

From neighborhood joints to some of the world’s most lauded pizzerias, we’ve eaten at a lot of Naples pizza restaurants and have loved every bite. This is a pizza city that keeps giving. In fact, our most recent 2024 visit revealed pizzerias that we couldn’t resist trying.

Daryl Holds a Pizza Don Vincenzo at Antico Pizza Port Alba in Naples

Not everybody shares our passion for Napoli. Some pass through the city without truly experiencing the rustic, provincial city. Perhaps they’re in for the day during a Mediterranean cruise or maybe they’re freaked out by the grunginess near Naples’ Central Train Station. But we keep returning to Napoli to admire this once greater and still great city that doubles as a world pizza capital.

Margherita Pizza at Antico Pizza Port Alba in Naples

Starting with flatbreads introduced by Greek conquerors millennia ago to the alleged invention of Margherita pizza in 1889 for Queen Margherita, Naples has enjoyed a long love affair with its most famous creation. Despite this storied history, or perhaps because of it, pizzaiolos in Naples know how to make some mighty fine pizzas. And they make a lot of them.

Naples Pizza Scene

Pizzaiolo and Pizza Oven at Bro Ciro and Antonio Tutino in Naples

The city’s pizza history is continuing to evolve. Not only did UNESCO recognize the art of Neapolitan ‘pizzaiuolo’ in 2017, but many Naples pizzerias are now adding gluten-free and vegan options to their menus. And, in a move that shot through the city like a lightning bolt, one pizzeria stalwart (Gina Sorbillo – see below) recently brought pineapple into the Naples pizza zeitgeist.

While there’s arguably no bad pizza in Naples, some pies are better than others. After five visits and eating more pizzas than we can count with all of our fingers and toes, we keep finding new gems. Depending on your itinerary in Italy’s pizza capital, you can eat at one or all of our favorite pizzerias. Most are in the city but three, while in Campania, justify a day trip.

The Naples pizza scene is stronger than it’s ever been. The competition among the city’s best pizzerias is fierce due to a cadre of pizzaiolos who have refined their craft over generations and have access to amazing ingredients.

Take a Secrets of Naples Pizza Tour if you have limited time and want a fun Naples pizza experience.

Pizza with Fresh Tomatoes at 50 Kalo in Naples

Since the 2010s, with the emergence of great modern pizzaiolos like Enzo Coccia, Franco Pepe (in nearby Caiazzo) and Ciro Salvo, this scene has experienced a convergence of back-to-basics artisan techniques and farm-to-table gastronomy that takes full advantage of what many believe to be the greatest agricultural region on earth.

Classic pizza joints like Di Matteo, Sorbillo and da Michele continue to hum along, making pies using rigid standards established over decades. However, there’s something else going on here. New guard pizzaiolos Isabella De Cham, Ciro Oliva and the Tutino brothers are transforming the scene into a singular, incomparable experience.

These are our picks for the pizzerias serving the best pizza in Naples:

10Pizzeria Diego Vitagliano – Contender For Best Pizzeria In The World

Pistadella Pizza at Diego Vitigliano in Naples

The pizzas at 10Pizzeria Diego Vitagliano are special. The contemporary pizzeria has catapulted to the top of this guide for good reason. Its Neapolitan pizza, crafted with high-hydration dough and locally sourced ingredients , has a crust that’s simultaneously supple and airy yet slightly crunchy on the edges.

Diego Vitigliano may not be a household name in America but things are different in Naples where pizzaiolas are revered just a level below football legend Diego Maradona. Not only does Vitigliano have three Naples pizzerias (plus one in Qatar), but he also topped the global ‘top 50 pizza” list in 2023 which is a big deal in Italy.

Read more about 10Pizzeria Diego Vitagliano .

Diego Vitagliano has multiple locations. We ate pizza at the flagship Bagnoli pizzeria located at Via Nuova Agnano, 1, 80125 Napoli NA, Italy .

50 Kalò – Artisan Pizzeria With Pizzazz

Pizza with Squash Blossoms at 50 Kalo in Naples

Ciro Salvo has been a leading force in defining modern pizza in Naples since he opened 50 Kalò in tony Megellina in 2014. Sure, there are many great pizza shops in Naples, but Salvo pioneered the new pizza movement by serving pies topped with the best locally sourced artisanal ingredients. He takes pride in crafting his dough with a special flour blend and a slow fermentation process . The result is great pizza that we love eating every time we pass through the city.

Salvo’s team executes Neapolitan pies with world-class symphonic precision. The crusts are beautifully caramelized, just on the edge of black, with a supple texture. When you eat at 50 Kalo, take note of the tiny dots of brown on the cheese. Every pizza that emerges from the pizza oven has this distinct caramelized look. Trust us, it’s a beautiful thing.

Read more about 50 Kalò .

50 Kalò is located at Piazza Sannazaro, 201/c, 80121 Napoli NA, Italy .

Pizzeria Concettina Ai Tre Santi – Innovative Pizzeria In A Classic Neighborhood

Il Sole della Sanita Pizza Pizza at Pizzeria Concettina ai Tre Santi in Naples

Ironically, one of Naples’ most innovative pizzerias has been operating in one of the city’s oldest neighborhoods since 1951. Decades later, fourth generation pizzaiolo Ciro Oliva runs Pizzeria Concettina ai Tre Santi with a fresh attitude and an innovative rethinking of pizza. He also isn’t afraid to top some of his pies with unique ingredients like crumbled taralli and even dehydrated sea algae.

Beyond pizza, Pizzeria Concettina ai Tre Santi’s menu standouts include a special frittatina genovese starter and a curated selection of beer and wine. The pizzeria offers a 7-course tasting experience for diners who make advance reservations and arrive with big budgets and even bigger appetites.

Whether or not you decide to splurge on a tasting menu, be sure to stroll around the pizzeria’s Rione Sanità neighborhood before or after your meal. You can get a taste of local market culture during the day or do a fun aperitivo experience at night.

Read more about Pizzeria Concettina ai Tre Santi .

Pizzeria Concettina ai Tre Santi is located at Via Arena della Sanità, 7 Bis, 80137 Napoli NA, Italy .

Pizzaria La Notizia – Pizzeria Helmed By A World-Famous Pizza Master

Pizza Slice at Pizzaria La Notizia in Naples

Enzo Coccia’s Pizzaria La Notizia, located way up the hill just past Vomero, wowed us during our first visit to Naples. We’re happy to report that the pizza mecca hasn’t lost it luster.

Coccia actively ‘holds court’ among guests who sit ‘cheek to jowl’ in Pizzaria La Notizia’s whimsically decorated dining room. The pizzas are amazing, featuring great Neapolitan pizza dough and some of the finest Campania ingredients like bright yellow piennolo tomatoes and strutto , a local lardo.

The team at Pizzaria La Notizia also makes show stopping calzones . We recommend ordering a dreamy pocket of goodness filled with sausage and ricotta in addition to a pizza.

Read more about Pizzeria La Notizia .

Pizzaria La Notizia has two pizzerias in Naples. We’ve eaten multiple times at the original pizzeria located at Via Michelangelo da Caravaggio, 53, 80126 Napoli, Italy.

Pizzeria Da Attilio – Naples’ Stuffed-Crust Star

Sol Nel Piatto Pizza on Sidewalk at Pizzeria Da Attilio in Naples

Pizzeria da Attilio is a must-visit for pizza fans who make the journey to the city where modern pizza was invented. Attilio Bachetti, a third generation pizzaiolo , runs his family’s pizzeria in a cozy space just off Via Toledo and mere steps from the street’s cavalcade of caffes and gelaterias.

Featured on David Chang’s Ugly Delicious and open since 1938, this pizzeria serves typical Margherita pies as well as uniquely shaped eight-crimped star pizzas. These star-shaped pies are no gimmick. Attilio’s pies are the real deal with each fluffy prong stuffed with luscious ricotta cheese. You’ll want to eat every morsel of the crust. The rest of the pie is equally worth eating.

Read more about Pizzeria da Attilio .

Pizzeria da Attilio is located at Via Pignasecca, 17, 80134 Napoli, Italy.

Bro Ciro & Antonio Tutino – Edgy Pizza Near Piazza del Mercato

Margherita del Monaco Pizza Slice at Bro Ciro and Antonio Tutino in Naples

There aren’t just two ‘bros’ at Bro Ciro & Antonio Tutino. There are also two kinds of pizza – traditional and edgy – and they’re both worth eating.

The Margherita Del Monaco pizza we ate was fairly simple despite the addition of provolone del Monaco (produced locally in Campania, not the country of Monaco) to the Neapolitan classic. The same can’t be said about the edgy Our Mamma do Carmine pie topped with a melange of ingredients that included grilled artichoke, artichoke cream and oxidized artichoke powder. We’re not sure what the first Tutino generations would have thought about this level of gastronomy but the pie tasted great with a sensible combination of artichoke flavors and textures.

Inside Bro Ciro and Antonio Tutino in Naples

Ciro and Antonio Tutino are real life brothers with a pizza pedigree that spans five generations . Their grandfather, another Ciro, operates Pizzeria Tutino (see below) with his brother Giuseppe. Clearly, the art of making Neapolitan pizza is in the family’s gene pool. It’s also on full display at Bro Ciro & Antonio Tutino.

Open since 2019 and located adjacent to Piazza Mercato, Bro is a stylish two-story restaurant that attracts an equally stylish crowd of young professionals. That crowd fills both floors nightly while the restaurant’s wood-burning oven does its duty on the ground floor. The brothers man that oven (we met Ciro during our meal) and produce pizzas notable for their airy, crispy crusts and top notch ingredients.

This is a pizzeria we’ll be watching with interest.

Bro Ciro & Antonio Tutino is located at Piazza Mercato, 222b, 80142 Napoli NA, Italy .

Gino Sorbillo – Classic Pizza In Centro Storico

Margherita Pizza at Sorbillo Seaside in Naples

Follow the crowds on Via dei Tribunali to find Gino Sorbillo, arguably the most popular pizza joint in Naples . It’s not just tourists. Many native pizza traditionalists swear by Sorbillo since this is the pizza they grew up with.

We ate a solid margherita there made by ‘the book’. But we also swooned over a pie topped with tomato sauce and briny anchovies. Its seemingly simple, sweet, funky, salty flavor combo still sticks in our taste memory. We later ventured to Sorbillo’s seaside pizzeria for the opportunity to repeat the experience but with a view.

Pizza at Sorbillo in Naples

Gino Sorbillo (the man) has been busy expanding his pizza empire to include fried pizza and global franchising. In 2024, he added a pineapple pizza to his flagship menu, a move that generated international press and provoked heated local debate.

Gino Sorbillo has multiple Naples locations. We’ve eaten pizza at the flagship Centro Storico pizzeria located at Via dei Tribunali, 32, 80138 Napoli, Italy as well as at the seaside Gino Sorbillo Lievito Madre al Mare located at Via Partenope, 1, 80121 Napoli, Italy.

Starita – Pizzeria That Sofia Loren Made Famous

Pizza at Starita in Naples

Located at the top of a steep hill in the Materdei neighborhood, Starita has been part of the city’s fabric since 1901. Made famous by the Vittorio De Sica film L’Oro di Napoli starring Sophia Loren, this multi-generation pizzeria serves a full pizza menu featuring a variety of pies plus a range of classic Neapolitan starters. Its signature pizza, the Montanara Starita, is a fried and baked beauty that’s topped with tangy tomato sauce, basil and two different cheeses.

During our meal, we shared two pies, including an excellent Marinara pie topped with the reddest Pomodoro tomatoes we’ve ever seen, plus some fried treats and craft beer. Needless to say, we walked back down the hill in an attempt to burn off a few calories.

Fun Fact Beyond Naples, Starita has locations in Florence, Milan, Turin and Bangkok. Yes, Bangkok.

Starita is located at Via Materdei, 27/28, 80136 Napoli, Italy.

L’Antica Pizzeria Da Michele – Monumentally Famous Pizzeria

Pizza at Da Michele in Naples Italy

L’Antica Pizzeria da Michele is perpetually crowded. Is it because the historic pizzeria was featured in the movie Eat, Pray, Love or is it because its value-priced pizzas are ginormous? It’s fair to guess that the answer to both is yes.

Da Michele’s pizzas aren’t just huge. They’re also round-ish and come in two basic options – classic Margherita with cheese, tomato sauce and a single basil leaf or two and cheeseless Marinara topped with traditional tomato sauce flavored with garlic and oregano.

Naples pizza prices are the best bargain in town and they’re especially low at L’Antica Pizzeria da Michele. Its monumental popularity has always drawn detractors but the pizzeria is such an institution that it would be unthinkable to not include it on a Naples pizza tour. Whether or not it’s your favorite, this is the pizza to which you’ll want to compare all other pies.

Read more about L’Antica Pizzeria da Michele .

The original L’Antica Pizzeria da Michele is located at Via Cesare Sersale, 1, 80139 Napoli, Italy.

La Masardona – Fried Pizza Standard Bearer

Diavalo Fried Pizza at Antica Friggitoria La Masardona in Naples

La Masardona has specialized in fried pizza since 1945. Named after matriarch Anna Manfredi who earned the nickname La Masardona while delivering a letter to a neighbor, the historic pizzeria delivers archetypal fried pizza to a plate.

Focusing exclusively on pizza fritta , Enzo Piccirillo stays true to his family’s pizza traditions at La Masardona. With more than a dozen choices and ingredients like fresh ricotta, sautéed escarole, salami and octopus, the only challenge is deciding what to order.

And then there’s dessert. If you have space, you can order a chocolate-topped straccetti or a chocolate-filled battilocchio .

La Masardona is located at Via Giulio Cesare Capaccio, 27, 80142 Napoli, Italy.

Isabella De Cham – More Than Just Fried Pizza

Stracciata Pizze Fritte Aperte at Isabella de Cham in Naples

Isabella De Cham is a woman who didn’t grow up with pizza making in her blood. But don’t judge De Cham’s self-named Rione Sanità pizzeria based on the pizzaiola’s gender and lineage. Her fried pizza is some of the best in Naples.

De Cham developed her Pizza Fritta specialty while working at La Masardona (see above) but her baked pizzas are great too. We enjoyed one of each – an ‘open’ Stracciata pizza fritte topped with prosciutto and bufala straciatella plus a traditional pie topped with sausage and friarielli.

Salsiccia e Friarielli Pizza at Isabella de Cham in Naples

You’ll want to pair your pizza with craft beer. Also, try to save room for De Cham’s Millefritta Pastiera, a unique take on the beloved Neapolitan dessert . Another option is to pop next door to Pasticceria Poppella and eat a Fiocca di Neve instead.

Isabella de Cham is located at Via Arena della Sanità, 27, 80137 Napoli NA, Italy .

Antica Pizzeria Di Matteo – Traditional Pizzeria In The Heart Of The Action

Margherita Pizza and Utensils at Pizzeria Di Matteo in Naples

Antica Pizzeria Di Matteo sells a tempting selection of fried treats that attracts a constant queue in front of its Centro Storico storefront. This is the spot where then President Bill Clinton ate fried ‘pizza pockets’ when he was in town for the 1994 G7 summit. While we’re curious if Clinton remembers eating that fried pizza, he’s certainly not forgotten in Napoli where his visit is revered like a modern day version of the Princess Margherita legend.

Neapolitan locals have been chowing down at Di Matteo since the multi-generational pizzeria opened in 1936. Arriving minutes after the pizzeria opened, we bypassed a swelling queue and secured a table before the upstairs dining room filled. Made with simple, local products including a generous soaking of olive oil, the Margherita pizza was a classic melange of Neapolitan ingredients and the Pizza Fritta Tradizionale, loaded with provola, ricotta, tomato, ham and salami, was a pleasurably rich, airy mouthful.

Antica Pizzeria Di Matteo is located at Via dei Tribunali, 94, 80138 Napoli NA, Italy .

Pizzeria Tutino – Pizza Pockets Near the Train Station

Pizza Pockets at Pizzeria Tutino in Naples

Crowds of locals queue for Pizza Tutino’s signature fried pizza pockets called portafoglio but don’t discount this pizzeria’s pizza. Located just a few blocks from Piazza Garibaldi and the Napoli Centrale train station, Pizzeria Tutino has been baking pies in wood-fired ovens since 1935.

Guests who ascend the pizzeria’s stairwell are rewarded with a range of classic, creative and fried pies. We tried two different pizzas – a classic Bufalina pie topped with tomatoes, mozzarella di bufala and fresh basil and a fried Ripieno al Forno pie stuffed with ricotta, mozzarella, prosciutto, salami, tomatoes and basil. After just a bite or two of the generous pies, we immediately remembered why Naples is our favorite pizza city.

Pizzeria Tutino is located at Via Cesare Carmignano, 79, 80142 Napoli, Italy.

Antica Pizzeria Port’Alba – Possibly The Oldest Pizzeria In The World

Outside Antico Pizza Port Alba in Naples

After eating lunch at the world’s oldest restaurant in Madrid, it made sense for us to eat pizzas at the world’s oldest pizzeria – Antica Pizzeria Port’Alba. With roots dating back to 1738, the pizzeria opened its current location in 1830. It’s now helmed by Gennaro Luciano, a noted pizzaiola who was working the oven during our meal. Needless to say, he was not the opening pizza chef.

Making Pizzas at Antico Pizza Port Alba in Naples

Conveniently located mere steps from Piazza Dante, Antica Pizzeria Port’Alba’s menu has dozens of choices which turned our selection process into a challenge. The two pies we ordered were solid. Plus, as bonus, we can now say that we’ve eaten pizza at the oldest pizzeria in the world.

Antica Pizzeria Port’Alb a is located at Via Port’Alba, 18, 80134 Napoli NA, Italy .

Pizzeria Brandi – Historic Pizzeria That Allegedly Invented Margherita Pizza

Pizzeria Brandi in Naples

Eating a Margherita pizza at Pizzeria Brandi is a must since the upscale pizzeria may have invented the Margherita pizza recipe in the late 19th century. However, we have our doubts. According to one historical account, pizzas with tomatoes, cheese and basil had been in existence since the late 1700s. Either way, based on longevity alone, there’s no denying that Pizzeria Brandi is historic.

Pizza at Pizzeria Brandi in Naples

What did we think of the pizza at this historic Naples pizzeria ? Truth be told, Brandi didn’t make our favorite pies. Plus, they cost twice the price of pizzas at Da Michele and Gino Sorbillo. That being said, the pizza at Pizzeria Brandi is likely better than any pizza you’ll eat in your hometown, assuming you weren’t born in Naples.

Pizzeria Brandi is located at Salita Sant’Anna di Palazzo, 1/2, 80132 Napoli, Italy.

Bonus – Neighborhood Pizzerias

Pizza and Pizza Oven at Pizza and Baba in Naples Italy

With so many neighborhood pizzerias in Naples, you’re never far away from your next pizza. It’s cheap. It’s tasty. And, sometimes, it’s what’s for dinner.

Neighborhood pizza shops are located all over Napoli. Just walk until you bump into one or you find them during a pizza tour like we did.

We say plan ahead and do both in the same day!

Whether or not you order a pie toppped with the salty fish is optional but recommended.

I’m you found Pizzeria Concettina ai Tre Santi. As you may know, it has a Michelin star. More importantly, it came about during the first stage of a major neighborhood revitalization program initiated by community volunteers who formed the group, La Paranza. The Rione Sanità neighborhood has a fascinating history that has not always been positive for its residents. Now, thanks to La Paranza, the neighborhood has been making a huge comeback which includes local businesses like this pizzeria, the church at its center, after school programs, an orchestra, a B&B, and, most significantly, the Catacombs of San Gennaro and San Gaudioso—must sees in Napoli. The restored Basilica di Santa Maria della Sanità is an outstanding “find.” Here’s a link to the Catacombs: https://www.catacombedinapoli.it/en/places/information-rione-sanita-naples. Excellent blog entry!!!

Thursday 21st of April 2022

Thanks for your comment. FYI, Pizzeria Concettina ai Tre Sainti does not currently have a Michelin star or bib gourmand rating. However, the guide has recognized the pizzeria for its "modern and imaginative pizzas...and...fried specialties."

Monday 20th of December 2021

Very touristy guide. No local would go to any of these places.Pizza in Italy is food for poor people, if you have to wait one hour and pay more than 6/7 euros you’re doing it wrong. There are literally places down every corner and they are all good & different. I would recommend “antica pizzeria prigiobbo” quartieri spagnoli area.

Thursday 23rd of December 2021

We encountered numerous locals at all of these pizzerias but we appreciate your input nonetheless.

Hey, thanks for the most excellent blog on pizza! Making me hungry:)

Saturday 7th of March 2020

I gotta say this as might be controversial I’m half Italian half English father from Naples I’ve been to Naples loads of times and going for a month soon I’ve eaten in Michele three times cheap but not great soggy almost falling as you eat it I was really disappointed!! I think the pizza place on the other side of the road called Trianon is actually the best I’ve ever had unfortunately the second time I went was not as good as the first also sorbillo the best for me I’m going to try the others on your list Kalo 50 I think u said sounds good. ????

Sunday 27th of January 2019

Really cool post!

We are going to Naples next week and are planning on going to Pepe in Grani, La Notizia and Pizzeria da Attilio for sure. Between Gino Sorbillo and Da Michele, which one would you choose?

Wednesday 30th of January 2019

We would choose da Michele for the excellence and simplicity of their pies. Sorbillo is good but we believe da Michele is better. If you go to da Michele, be sure to arrive early to beat the crowds.

The Ultimate Naples, Italy Pizza Tour Itinerary

Johnny

It’s no question that pizza is the world’s food. You can find this Italian staple in pretty much every single country in the world now. Whether it’s on a beach in Madagascar , or in the mountains of Peru , pizza is universal and done in some form everywhere.

Sorbillo pizza naples

However, not all pizza is created equal. Most definitely not. Pizza originated in Italy and specifically originated in the Naples area (or so they say). The traditional Neapolitan style pizza is in my opinion also the most superior. Like when I was in Mexico City and spent days eating different style of tacos , I spent all my time in Naples essentially eating at different pizzerias. It was a whirlwind of a few days as I ate pretty much nothing nothing else but pizza, beer, and wine.

Naples pizza

If you like pizza and are visiting Naples for any amount of time, you will have all you need in this post as I visited the most famous pizzerias. If you are also a pizza fanatic, then you can also attempt this dangerous gauntlet, otherwise just choose the restaurant that most appeals to you!

Fried pizza naples

Naples was the first stop on my epic multi week trip through the Amalfi Coast and Capri.

History of pizza in Naples

The fact that you found this post on Google means you probably already know something about pizza, Naples, and how they’re related to each other. The history of the pizza and specifically the original type of Neapolitan pizza you’ll find in Naples is fascinating. It’s not just some random guy that mashed up a few things together but the amalgamation of numerous cultures and people that were thriving in Naples centuries ago. Naples was one of the biggest port cities in Europe. It was a hub for international trade, and home to people from all over the world.

Italian pizza: all you can knowItalian feelings

The world pizza, actually originated from the Arabic word for pita, or bread. The original Arab bread was large and round. It was made from flour and water, and baked in an oven. These were baked all over town and would serve as the base for the Neapolitan pizza.

Mozzarella, specifically the buffalo mozzarella, is the next essential ingredient. Buffaloes are not indigenous to Italy or any part of Europe for that matter. In fact, they were brought in from India by the Normans to do hard labor. It wasn’t until much later that people discovered their milk is also delicious.

Tomatoes, of course, serve as the last pillar of the Neapolitan pizza. Tomatoes are not indigenous to Europe either. They are a Central and South American fruit brought to Europe after discovering the Americas. The original tomatoes were round and yellow, hence why they are called “pomo d’oro” or golden apples. They were originally thought to be poisonous and used more as decorative “exotic” plants that no one tried to eat. It was only later that people discovered how delicious they were and now Campania is famous for its tomatoes.

Pizza started out as flatbread with tomatoes before someone decided to put it all together to what we know today. Basil, tomatoes, buffalo mozzarella and dough. The colors thereafter inspired the modern day Italian flag (or so the saying goes, but I’d like to believe this is true).

What makes Naples style pizza so unique?

Neapolitan pizza has a very thin crust at the base, with dough that puffs up around the sides and provides for a very airy crust. The dough must be made with highly refined Italian type 0 or 00 wheat flour, Neapolitan or fresh brewer’s yeast (not dry yeast), water, and salt. It must be kneaded by hand or with a low-speed mixer and formed by hand, without the help of a rolling pin.

pizza in naples

The pizza is cooked in a wood oven that is heated to insane temperatures at 400c and cooked for only 60-90 seconds. That’s why getting a pizza is very quick in Naples and it’s not meant to be this long drawn out dinner. Some pizzerias have huge lines and look impossible to overcome, but they move fast because pizza in Naples is not meant to be an all night affair.

The dough is topped with raw, pureed San Marzano tomatoes from Italy. It can use only two types of mozzarella cheese. One is  fior di latte  made from cow’s milk and the other is  mozzarella di Bufala,  made from water buffalo milk, typically raised in the Campania and Lazio marshlands in Italy. Finally, Neapolitan pizza is topped off with fresh basil and extra-virgin olive oil. The ingredients must be all-natural and fresh.

Because that crust is so light (even though quite large,) certain areas become charred very quickly, which is why it’s important not to overcook and completely burn this type of crust. But just as large as that crust is on the sides, it’s just as thin on the bottom. In fact, Neapolitan pizza is so thin on the bottom that it’s not usually possible to even pick it up with your hands. Always be sure to offer a fork and knife when serving up this dish!

Gina e Toto Sorbillo

The most famous pizzeria in Naples is probably Sorbillo and Michele. If not famous, then for sure the biggest tourist attractions because Sorbillo has 12,000 Google Maps reviews and Michele has almost 20,000. Not many places like this in the world that get this type of recognition!

Sorbillo pizza

Sorbillo is located on Via Tribunali, one of the main streets in central Naples. They have a large restaurant space by other pizzeria standards and it’s impossible to miss. As you approach it, you will see the large crowds of people lined up waiting to sample the deliciousness that is Sorbillo pizza.

sorbillo pizza naples

Don’t be intimidated by the crowds. They look huge and insurmountable but remember that the lines move quick because the pizza takes a minute to cook. Simply walk up to the front, put your name in with the doorman and wait for your name to be called. There are a bunch of bar vendors next door to Sorbillo that sell drinks for a very friendly price. €2 Aperol spritz is on the menu as well as wine, beers, and cocktails.

Sorbillo pizza

There looked to be about 20-30 people in front of me and the time flew by with the help of all the drinks. I think we waited about 30-40 minutes to get in.

sorbillo pizza naples

I ordered the Diavola pizza which is a standard margerita pizza with spicy salame, usually my go to dish. I know traditional Napoli style pizza is just the cheese, sauce, and basil but I just love having meat with my pizza.

sorbillo pizza naples

The pizza comes out piping how as you’d expect and it is incredibly tasty. Eating it is a bit of an art but I was told I could cut it into slices, fold it in half and tuck the end of the pizza into itself so it’s kind of a sandwich. This way you can get a bit of all the flavors in one bite.

Sorbillo’s pizza is absolutely delicious. The crust is amazing, the sauce aromatic, and the cheese is divine. I really enjoyed the texture of the dough which is what I used to distinguish from different pizzerias.

sorbillo pizza naples

In the end, we had two pizzas, two glasses of red wine, coperto for 2 and the bill was €22. You should never expect to spend much on a pizza in Napoli because it is not meant to be an upscale luxurious experience. It’s a street food through and through, originally meant for working class.

Location: Via dei Tribunali, 32, 80138 Napoli NA

L’antica Pizzeria Da Michele

Michele pizzeria naples

Not far from where I was staying is the even more famous Pizzeria Da Michele. It’s a bit of an institution for locals and tourists alike. At all times of the day, you can expect long lines waiting for this pizza. I visited during October 2019 and the lines were at least 20 people deep. The trick is to come here when the first open at 11:30am to snag a table.

michele pizzeria naples

Michele  only has two pizzas: Margerita and Marinara.  They don’t stray from their roots and you can’t order any other styles of pizza. Margerita is the classic pizza with cheese, and Marinara is without the cheese. Almost all Napoli style pizza is topped with extra virgin olive oil but Michele uses soybean oil which gives it a more full and creamy flavor.

michele pizzeria naples

The pizza is very delicious with a perfect dough and crust. The cheese is fiore di latte (cow’s milk) and goes perfect with their home made sauce. The pizza is also much bigger than other ones and I was very full after consuming the whole thing.

It’s a must visit so make sure to stop in on any trip to Naples.

Location: Via Cesare Sersale, 1, 80139 Napoli NA

Pizzeria Di Matteo

Pizzeria matteo naples

Located down the same street as the famous Sorbillo, Matteo is no slouch either in its popularity amongst locals and tourists alike. Pizzeria Di Matteo specializes in traditional pizzas as well as fried pizzas which are a Naples street food delicacy.

The lines here are not as long as in Sorbillo or Michele so if you’re looking for an equally delicious experience but without the crowds, then this is the place to be.

pizzeria matteo naples

The pizza here I thought was delicious, although not quite as tasty as the one from Attilio or Sorbillo. The crust wasn’t as soft as the other places but the toppings were top notch. Expect to pay no more than 15 euros a person for dinner and drinks here.

Location: Via dei Tribunali, 94, 80138 Naples NA

Pizzeria Da Attilio

Pizzeria Attilio Naples

I first found out about Antilio from watching Ugly Delicious by David Chang. In his first episode, they explore pizza in different parts of the world. Mark Lucali, a famous NYC pizza chef in his own right, travels to Naples to try out the “original style pizza”. They visited Antilio and the pizza just looked absolutely amazing. I knew I had to go.

I came on a weekday as soon as they opened and was the only one in the restaurant. I met the pizzaolo himself and was able to watch him make his famous pizzas right in front of me, snapping photos and videos along the way. He seemed like he was quite used to the action now, especially after Netflix has made him an inevitable celebrity for US food travelers.

pizzeria attilio

I ordered the star shaped pizza. This is like a normal margerita pizza but with corners that have been rolled to a point and stuffed with ricotta cheese. In total, he has 8 corners perfect for 8 different slices stuffed with delicious fresh ricotta cheese. The pizza was topped with salsiccia, bufala cheese, and all around deliciousness.

pizzeria attilio

This pizza was absolutely divine. The dough was kneaded and cooked to perfection in his wood oven. The texture was a perfect mix between chewy and soft allowing you to taste just the subtle hint of the oven char. The cheese and the meat complimented each other perfectly. The sauce was of the top quality you’d expect from San Marzano tomatoes. I was greeted with the rich and creamy flavors of the ricotta that was the perfect ending to each slide. All in all, a must visit!

Location: Via Pignasecca, 17, 80134 Napoli NA

Pizzeria Imperatore 1906

Pizzeria imperatore 1906 naples

I walked by this pizzeria after eating at Sorbillo and it looked very appealing. As the name suggests, Pizzeria Imperatore 1906 has been operational for over a hundred years now and they know their stuff very well.

I came here the following evening and got a table right by the oven, admiring the pizzaolo and his craft. The pizzas here are cooked in the traditional way and it was one of the best pizzas I’ve had. The dough is absolutely superb and char just perfect. The staff were also very friendly and the vibe was perfect. If you are looking for an alternative to Michele and Sorbillo without the wait, and with a more warm atmosphere than Matteo, then this is the spot to be.

pizzeria imperatore 1906

Pizzeria Concettina ai Tre Santi

Another amazing pizzeria I ate at was at Tre Santi north of the main center. I found Tre Santi just by perusing through Google Maps and I’m glad I did. It’s a bit of a more modern youthful take on the traditional pizza. I think the owner is a younger guy who is putting new twists in his pizzas allowing for more topping combination that what would normally be “Acceptable”.

The inside is a nice atmosphere too with lots of energy and pizzas being dished out constantly. The pizzas themselves were absolutely divine as to be expected.

Other things to eat in Naples

It’s clear that Naples is a destination for foodies. There is so much deliciousness to consume in this town it’s a bit overwhelming. I didn’t even eat non-pizza Italian food when there are so many shops that serve amazing pastas and seafood. Prices in Naples are very affordable compared to say nearby Amalfi coast so you’ll never worry about breaking the bank.

naples food

Although I didn’t eat at many other places, here are some other foods that are a must try on your

Tandem d’asporto

Tandem D'asporto

This is not a pizza restaurant but it’s located in the old town and is a must visit for anyone that likes home cooked Italian food. Tandem is known for its ragu and meatballs which is the perfect way to mix it up in between pizza sessions. Also, if you’re feeling like you’re running low on protein and overdosing on carbs, you probably are and this is the perfect remedy to that.

Located in the old town nearby to many of the famous pizzerias, this little shop dishes out some of the best meatballs with ragu sauce I’ve ever had. This place is definitely more of a to-go type of spot but they have other locations where you cans it down and have a proper meal. Nevertheless, for €6, get the Cuzzetiello which is a thick bread with round and crunchy edges stuffed with meatballs and ragu.

Tandem d'asporto ragu

This is the perfect to-go dish and you’ll be in meatball heaven. Alternatively, skip the carbs and just get the meatballs with ragu with nothing else. Make sure not to skip on the provolone cheese!

Sfogliatelle Attanasio

sfogliatelle Naples

If you like desserts and pastries, look no further than eating the sfogliatelle in Naples. Famous to the Campania region, the sfogliatelle is a mix of a croissant, cannoli, and absolute deliciousness in one pastry. It’s essentially a crispy croissant textured pastry stuffed with ricotta cheese with powdered sugar sprinkled on it.

Sfogliatelle Attanasio

There is no better place in the world perhaps than at Sfogliatelle Attanasio. It’s located right near the central train station and is a must visit as soon as you step outside. The lines are long but that means you are in the right place. Attanasio serves these pastries warm and fresh out of the oven. I’m not a dessert person normally but this pastry really blew my mind. The combination of the sweet juicy crunch of the pastry combined with the warm and sweet ricotta was something out of this world.

Best of all, these are only €1.30 each and they have two versions of them: Crispy and soft. Both are a must try but the crispy with its sugary juices are my preferred. Whatever you do, do not go anywhere but Attanasio. I tried sfogliatelle from a few other shops and it was akin to eating boxed pizza after dinner at Sorbillo.

The Serious Eats Guide To Pizza In Naples

pizza tour in naples

A few months ago, my wife and I spent all of 24 hours in Naples on our way home from Sicily. It was probably the second-most pizza-packed 24 hours of my life (the first being when I took my Colombian brother-in-law on a whirlwind pizza tour of New York). We hit over a half dozen pizzerias over lunch alone, and a few more for dinner.

Nobody said the life of a Serious Eater is an easy one.

We talked to pie-men, timed ovens, watched dough being stretched and topped, and all that other fun, nerdy stuff that pizza-obsessives enjoy doing. (Ok, my wife may have been a bit of an unwilling assistant in this endeavor. Bless her for always being a good sport).

Here now, I present to you the Serious Eats guide to Eating Pizza in Naples.

Identifying a Neapolitan Pizza In The Wild

If you're to ask the Associazone Verace Pizza Napoletana —one of the few certification organizations that dole out authenticity certificates to pizzerias around the globe—what constitutes a true Neapolitan pizza, you'll be met with an extraordinarily stringent set of rules. God help the pizzaiolo who claims to be making true Neapolitan pizza and gets audited on his process.

Among the criteria (which is outlined on this 11 page document ) are such things as:

  • Compressed yeast, biologically produced, solid, soft and beige in colour ,with quite an insipid taste and a low degree of acidity must be used. Yeast must be purchased in packages ranging from 25-500 grams. (Saccharomices cerevisiae) (See Italian Decreto Ministeriale. 21/03/1973 e 18/06/1996). The use of Natural yeast is also permitted (see appendices).
  • The dough must be made by slowly adding flour (1.7 to 1.8 kilograms depending on protein content) to a water, yeast, and salt mixture over the course of ten minutes and must mix on low speed for precisely 20 minutes.
  • The dough should have a final pH of 5.87, ±10% and a final density of 79 grams per cubic centimeter
  • When stretched, the center of the dough must be no more than .4 centimeters (±10%) in thickness.
  • The following variations of fresh tomatoes can be used: "S.Marzano dell'Agro Sarnese-nocerino D.O.P"., "Pomodorini di Corbara (Corbarino)", "Pomodorino del piennolo del Vesuvio" D.O.P."
  • Certified mozzarella di bufala campana D.O.P, mozzarella S.T.G.

And so on. I sense a lucrative business in certification guarantees would be possible if an enterprising lawyer decides to take it up.

Natural Gestation Habitat: Wood-Fired Oven

The traditional domed, wood-fueled ovens that a Neapolitan pizza is baked in has remained identical in design for several hundred years. Made with stone or brick and completely sealed (aside from the door and the chimney), it's this oven that allows a pizzaiolo to stoke wood fires (oak, ash, beech, or maple are recommended, though there is no restriction other than that it must be free of moisture or excessive smoke) up to crazy high temperatures. A minimum floor temperature of 905°F and a minimum air temperature of 800°F are required.

There are strict protocols in place for oven sizes—the dome must be 45 to 50 centimeters high, while the door must be 22 to 25 centimeters. The floor space is defined at 140 to 150 centimeters in diameter.

To aid browning of the upper surface, a pizzaiolo might lift the pie up to the top of the dome of the oven for a few seconds as the pies finish, a process that should take between 60 and 90 seconds. Talk about fast food!

Remember folks: these are all rules set up by the extraordinarily strict Associazione Verace Pizza Napoletana . It's not to say that excellent Neapolitan- style pizza can't be made via methods that don't quite fit their stringent criteria. Most pizzerias we love in New York wouldn't make the cut for veracity, but they sure as s$%t are damned delicious nonetheless.

Identifying Markings: Leopard-Spotted Bottom

When inserted into the oven, the moist, loose Neapolitan pizza dough should instantly start to puff, creating bubbles with thin walls and micro- bubbles on top of them, with even thinner walls. These thin walls will quickly brown in the air of the oven and against the hot stone floor while the rest of the pizza will remain more pale. It's this interplay of smoky, slightly bitter notes that comes from the charred spots and the soft, mild, pale dough in between that gives a Neapolitan pizza its great complexity.

By-Products: Soupy Center

Unlike a crisp-crusted New York-style or hefty deep dish Chicago-style pies, a Neapolitan pizza will have a soft, tender, nearly soupy center. Some folks find this off-putting. I personally like the sauce, oil, and whey-soaked bits of tender crust that form down in there, and I'll fight my wife for my share of it.

Other Characteristics: Sparse Toppings

There are two "basic" Neapolitan pizza styles that cover the vast majority of the pizzas you'll find in Naples: the Pizza Marinara , which combines tomatoes, oregano, olive oil, and garlic (and in which "the green of the oregano and the white of the garlic has perfectly amalgamated"), or the Pizza Margherita which uses tomatoes, olive oil, fresh mozzarella di bufala (water buffalo milk mozzarella), and basil leaves (applied before cooking so that their green color has been "slightly darkened by the cooking process.").

That's it , as simple as that. Some of the fancier pizzerias will offer variations with toppings, but in all cases, the toppings are added extremely sparsely, with an eye towards balance and simplicity. You will never see an American-style "Pizza Supreme," that is so loaded with toppings that the crust is entirely lost. Neapolitan pizza is first and foremost about the interplay of dough, sauce, and olive oil.

How Neapolitans Eat Their Pizza

Option one: knife and fork.

At a sit-down pizzeria, this is how it's done. You will never see a pizza come pre-cut into "slices," as that would cause the very soupy toppings to seep underneath and turn the whole thing soggy. You could try to manually cut it into slices, but they'll be so floppy that you'll need several extra fingers just to hold them out.

In other words, perhaps Donald Trump should consider moving to Naples.

Option Two: The Quad-Fold

Before I'd actually been to Naples, I'd heard over and over that "pizza in Naples is always eaten with a knife and fork." Always.

I don't know whether things have changed in recent years or it's simply misinformation, but Naples actually has a very lively no-utensils-required street-pizza ("street-za?") scene, with many of the older pizzerias selling whole pies out of display windows on the street for only a euro or two.

So if they don't cut them into slices, how does one eat them? The Quad-Fold . The pizza is placed on a sheet of heavy duty paper, folded in half once, then folded again, much like you'd see in a Paris crepe-shop.

What you end up with is a tidy little pizza package, ready to be picked at with your fingers, or waiting for you to dive right in mouth first. Does it disturb the sauce and cheese distribution? Yeah, sure it does. But Neapolitan pizzas are a pretty slapdash affair to begin with. Don't worry, it'll still taste plenty good.

Where to Get Pizza in Naples

It's impossible not to run into a decent pizza if you take a stroll down Via Tribunali, a street which runs between the train station and San Domenico Maggiore. Most of the old pizzerias in Naples are in that neighborhood, getting sparser and sparser as you move away. Here's a map of eight of the best and most notable—a good full days' eating if you want to plan a trip around pizza.

View Pizza in Naples in a larger map

The Street-za

Sure, you can sit down at any one of these fine and historic establishments, but their real draw (particularly for pie-heads with a schedule to keep!) are their heated outdoor display windows, where for a couple euros (usually less!), you can grab a hot pie to go.

Antica Pizzeria e Friggitoria Di Matteo

The best of the Street-za's we tried, though it may have been luck of the draw—our pie had come fresh out of the oven, the crust still crackling slightly as it was folded. Very sparse on the cheese (what can you expect for a single euro?), but a bright tomato sauce and a great charred flavor to the tender crust.

This is the pizzeria President Clinton visited during the 1994 G7 summit in Naples. You can see his picture up on the wall.

Pizzeria di Matteo

Via dei Tribunali, 94, 80138, Naples, Province of Naples, Italy ( map ).

Il Pizzaiolo del Presidente

Riding on the coattails of the fame that Clinton's visit brought to Di Matteo, the brother of the pizzaiolo at Di Matteo opened up his own restaurant—this one actually named after Clinton—just down the block. Even though the place should technically be called Il Fratello del Pizzaiolo del Presidente, we won't knock him for it, because his product is (almost) every bit as good as his brother's.

Via dei Tribunali, 120-121, 80138 Naples, Province of Naples, Italy ( map )

Antica Pizzeria Port'Alba

At over 182 years old, Pizzeria Port'Alba is widely regarded as Napoli's first pizzeria, and as such, perhaps the first official pizzeria in the world. Am I allowed to disparage such a storied pie? I won't hold back—the pie we had was a little pale and lacked significant charring, but the texture was still wonderful, with a melt-in-your-mouth tenderness and bright, fresh-tasting tomatoes.

Via Port'Alba, 18, 80134 Naples, Napoli, Italy ( map )

The Classics

Once you move out of the street-za and 1 euro+ category, a couple of pizzerias immediately jump out as must-visits.

Pizzeria Trianon Da Ciro

Equally swamped with tourists and locals alike, Trianon is a sprawling, three floor pizzeria that offers more than 20 toppings variations. Check out the work station on the first floor as you walk in for an up-close view of the action. Just don't expect the harried pie-men to stop and smile for the picture.

The pies at Trianon are nothing to scoff at, but certainly not the best in Naples. If you find the traditionally soupy Neapolitan pie to be too wet, you may well prefer the pies here, which come out with sturdier, denser crusts, and a drier top. It's almost dry and crisp enough to pick up a slice with your hands.

While the sauce is as bright and fresh as anywhere, the cheese you'll find is drier and stretchier than most.

Via Pietro Colletta, 44/46, 80139 Naples, Province of Naples, ( map )

Pizzeria Da Michele

Yes there are lines. Yes, it's packed with tourists who want to "eat at that place Julia Roberts at at in Eat, Pray Love!". Yes, the service is quick (though in Neapolitan fashion, always friendly). And yes, they WILL kick you out of your seat if you plan on lingering.

All that said, the line moves fast, and its easy to forgive the servers their brusqueness when your pie appears in front of you.

The pies are cooked rapid fire in the brick-lined wood-burning oven in the front of the dining room. They cook so fast that two pizzaioli work in tandem, one lowering a pie onto the oven floor just as the other removes one.

I pulled my timer out (as I always do at a first time pizzeria visit) and measured the cook time for the pies.

One minute nine seconds! Seriously! It's the fastest pizza cook time I've ever recorded anywhere. The resultant pies are also significantly different than most I've had.

They're soft. Very soft. Like, the texture of a thick blanket, soft. And wet. Very wet. Good luck even thinking of eating these guys with anything but a fork and knife.

Da Michele uses sunflower oil rather than olive oil on their pies (an Italian sign on the wall explains that they want to let the tomatoes and cheese stand out—I say they just want to save a few bucks), but the pies are nevertheless spectacular.

If you don't like soupy pizza (Serious Eats Overlord Ed is in this camp), you may well find it disappointing. Negative online reviews are most often of then "this was so soupy" or "the sauce slid off the pizza onto my boyfriends shoes when we were walking down the street" variety.

But if you can handle the wetness, you'll find a perfect balance of char, bread, bright tomatoes, and fior di latte (they don't use buffalo mozzeralla here either) that melts on your tongue in a way like no other pizza I've had.

Via Cesare Sersale, 1, 80139 Naples, Province of Naples, Italy ( map )

The Best: Pizzeria Starita

Luckily, the best pizza I tasted in Napoli happens to be available right here in New York as well. Starita is run by Antonio Starita, a legendary pie-maker who loves to chat with customers as his team makes his fantastic pies (that he doesn't speak any English and we speak no Italian, but that didn't stop him from trying to engage us).

And yep, that's the same Antonio Starita who trained protégé Roberto Caporuscio of Kesté in the West Village. Last year, Don Antonio opened in midtown, near Times Square, also run by Caporuscio. The pizzeria is named after Antonio Starita, and features a menu with some serious nods to his pizzeria in Naples.

The Margherita pie is a little firmer than the true Neapolitan style you'll see at Da Michele, but to my mind, it's the perfect level of soupiness to crispness. The juices definitely pool in the center as you eat (take a look at the photo up at the top of this post), but the edges and underbelly still retain a thin, thin layer of crispness that adds textural contrast to the whole deal. It's a really exquisite pie.

Starita may well be better known for his Montanara pie, a pizza which is first deep-fried before being topped with sauce and smoked mozzarella and finished off in the oven. The end result is extra crisp, well-puffed like a cruller, and not at all greasy.

The seasonal appetizers we tried were also fantastic. I particularly enjoyed our ricotta-stuffed deep-fried zucchini blossoms which were rich in the center and crisp on the outside.

Pizzeria Starita

Via Materdei, 27, 80136 Naples, Province of Naples, Italy ( map )

Also Notable: Europeo di Mattozzi

Ed's favorite pizzeria in Naples is Europeo di Mattozzi, a healthy 20 minute walk from the downtown cluster of pizzerias, and a big step up in terms of decor and service. It's a charming restaurant with some seriously delicious food beyond the pizza.

We enjoyed the octopus salad, as well as a dish of pasta with clams and broccoli, perfectly simple, and perfectly delicious.

The pizza itself was also great, though to my mind, a little too firm and cheese-laden. It's understandable why some might call it the best in Naples, though.

We enjoyed our mini food tour of central Naples. This gave a great snapshot of Napoli, the people and the food they love. Food was tasty and the guide informative. Do at beginning of your stay if you can. - ChappersRu (TripAdvisor Review)
An amazing tour when you have a broad view of Napolitan gastronomy. I’lll never forget the tastes here because Naples is much more than “the land where the pizza Margherita was invented”. Aldo also is a great and funny guide that made our visit much more interesting! - Patacosta (TripAdvisor Review)
This is a great tour. Francesco was a great guide – knowledgeable and friendly and very helpful with recommendations at the end of the tour. He really gave us a great flavor of the city, both food-wise and culturally! - Campion97 (TripAdvisor Review)
What a great experience! Had the good fortune of having not one, but two fantastic guides, Leandra and the main man, Francesco. Thanks to this tour, I not only learned and tasted amazing Neapolitan cuisine (yumm does not even begin to describe the food), but also about the city, its history, and the warmth and hospitality that Napoli has to offer. - Richardnolan (TripAdvisor Review)

Pizza, Pasta and Culinary Tours in Naples, Italy

I was just in Naples for a few days, checking off a bucketlist trip to the birthplace of the pizzeria. Neapolitan pizza is adored for its quick, high heat bake; its leopard spotted cornicione (perimeter) and somewhat juicy/soupy middle. It’s the original “pizza” but of course, it’s not as widely known in America. In fact, a lot of North Americans tend to prefer the sturdier, crispy/crunchy/chewy combo you’ll find in Detroit, New York City and even on some Chicago pizzas.

I did end up trying Sorbillo and Da Michele (the place Julia Roberts swooned over her margherita), but both disappointed. I needed a towel to clean up the dripping wet mozzarella di bufala, and the crusts left me wanting more. A trip to Caiazzo solved that (you’ll see in the video), with a trip to the Valhalla of pizza: Pepe in Grani.

I also took a Culinary Backstreets tour, as I’ve done in a few other cities. The tours here go deep into the local food scene, and I’d recommend it if you’re a culture seeker, really craving to learn what it means to eat and live like a Neapolitan. Hope you enjoy my highlights here (specific pizza recommendations follow it).

Best Things To Do in Naples, Italy

“You either love it or you hate it,” said a friend of mine. It was the first thing I ever heard about the Italian city of Naples, and the phrase’s authenticity remains intact after all these years. Naples is unlike any other city in Italy: It is busy, loud, and dirty on one hand (many people say it feels like stepping into a Middle-Eastern bazaar) and creative, friendly, and picturesque on the other.

Naples is probably one of the most controversial cities in Italy. People either love it or hate it, it seems. Italy’s third-largest city is famous for its Neapolitan Pizza and a gateway to Pompeii, but not many people actually choose to stay in Naples . But there are actually a lot of really interesting things to do in Naples, Italy.

Top Things to do in Naples Italy

Neapolitan pizza.

Yes, in Naples, Pizza is a point on the itinerary. Neapolitan-style pizza has been heralded the world over for being the true pizza, however, those who’ve been to Naples know that no two  pizzaioli  (pizza chefs) make the same pizza. In short, there is no one authentic Neapolitan-style pizza , though many will argue otherwise .  To discover which pizzaiolo’s pizza is your favorite, there’s no other way than by visiting Naples. Here are a few tips to help you on your way.

Some pizza chefs in Naples believe that there are only two kinds of pizza:  Margarita  and  Marinara . A marinara pizza, put simply, is dough, garlic, and sauce; and a Margarita pizza is dough, sauce, and cheese. While this doesn’t do much for the Hawaii-style pizza lover, don’t let the simplicity fool you; these are the makings of the best pizzas on earth.

Naples National Archeology Museum

Speaking of Pompeii, its most striking artworks were carried off to the National Archeology Museum . While this means that they are not on display in Pompeii (which is OK, in my opinion, because there is already plenty to see in Pompeii), it also ensures that they won’t be buried for another 1500 years the next time Mt. Vesuvius explodes.

Here’s my advice: Go to Pompeii first, then go to the National Archeology Museum. Is it worth it? Yes, yes, and yes. The artwork, statues, and artifacts are absolutely striking and give you yet another side to the fantastically preserved city. The museum also includes many of the statues from the Farnese Collection. The famous art collection is split up between the National Archeology Museum and Capodimonte Museum. To really appreciate the exhibits, you should definitely get the audio guide when you tour the museum.

Phlegrean Fields

One of the most confusing sights ever, the Phlegrean Fields is a large volcanic area, not a single location. It encompasses everything west of Naples (to the coast) as well as several islands, including the famous Ischia and Procida.

To do the area justice, you should spend at least two days there. The tickets (4 euro) give you access for two days. This includes, most importantly, the famous Cave of Sybil in Cuma, the striking crater lakes, the Flavian Amphitheater, and the Baia Archeology Museum and Park.

The tickets exclude, most importantly, the Solfatara, a bubbling lava lake once believed to be the entrance to hell, and the underwater city of Baia. The Solfatara costs an extra 6 euro, and the underwater city can only be seen from a glass-bottomed boat, which is easily chartered in Baia for a fee.

When you consider the sheer size of the Phlegrean Fields and the large number of exceptional sights, it seems like it’s worth a visit. But because the area is so spread out, and none of its ruins are as well preserved as those found in Pompeii and Herculaneum, the jury is divided.

If you have a limited time in Naples and you’ve never seen Pompeii, visiting the Phlegrean Fields is not worth it. If you’ve already seen Pompeii and you’ve got two spare days, expand your circle of ancient experience and see where the richest of the rich Romans once lived. The area’s volcanic activity has resulted in a large number of natural thermal spas.

Castles of Naples

Castel sant’elmo.

This medieval castle sits on top of a hill near Certosa di San Martino, overlooking the city of Naples. It was built between 1200-1537 and is still in use today.

Castel dell’Ovo

This seaside castle was built on the island of Megaride, which is now a peninsula in the bay of Napoli. Built in the 5th century, it is the oldest castle in Naples.

Castel Nuovo

The Castel Nuovo – also known as Maschio Angioino – is located right in the heart of Naples. It was built in 1279 and used as the royal seat for kings of Naples, Aragon, and Spain until 1815.

Capodimonte Museum

The grounds of this museum alone are enough to make it worth a visit. Located in a beautiful park on a hilltop that overlooks Naples, the museum was built for one reason, and one reason only: to house the  Farnese Collection . One of the most important art collections on earth, it includes works by many famous Italian painters and sculptors.

Its paintings are located inside the Capodimonte Museum, and its sculptures are in the National Archeology Museum. Many works are featured besides those of the Farnese Collection, including some excellent Caravaggios. A portion of the museum is dedicated to contemporary art, including some freaky Andy Warhols. The Capodimonte Museum is definitely worth it.

The Royal Palace in Caserta

A 40-minute train ride gets you to Caserta, and the trains leave Naples central station every 20-30 minutes. The Royal Palace is located across the street from the Caserta train station, making it easy to visit on foot. The palace was built by Charles of Bourbon, who was King of Naples in the mid-18th century. He wanted it to be more grand than Versailles.

I’m not sure whether his architect, Luigi Vanvitelli, failed, or whether the grounds are not well kept, but I found the palace bland. The hedges and the grass were not closely manicured, and very few flowers were in bloom. From the outside, the palace did not impress me in any way other than its sheer size. Inside, the rooms were beautifully decorated.

Besides having a picnic on the lawn—with a 40-meter manmade waterfall cascading in the distance—my favorite part of the visit was the gold leafing and ancient Venetian glasswork inside. Entrance costs 8 euro. The grounds are so large that a bus service runs around the grounds; a round-trip ticket (from the castle to the end of the grounds and back) costs 1 euro.

I suggest immediately catching the bus and taking it to the far end of the grounds; indulge in the English Garden, then walk back beside the waterway. Buses leaving from the palace and going out to the grounds are not crowded; coming back is another story. Is the Royal Palace in Caserta worth it? Not unless you’re traveling with children

Underground City of Naples Italy

Ok, so I’ve come around to accepting that there are other things to do in Naples than eat pizza. It was tough though and took something as tremendous as Naples Underground, or Napoli Sotterranea, to prove it to me. It’s as creepy as any underworld tale, but there’s a friendly guide to take you through the twisting, winding passages below the streets of Naples.

Underground of Naples Tickets

There are a number of  Naples underground tours , each beginning in different parts of the city, with each tour revealing different sections of Naples Underground. The tour my girlfriend and I took featured the underground remains of a Greek-Roman theater. It began in the vicinity of the Duomo di Napoli.

The small gift shop at the ticket office has a window in the floor that offers a glimpse into the world below. English language tours leave throughout the day, and when we arrived without reservations, we only had to wait 15 minutes for the next tour. I can now attest that the experience is well worth your time and money.

Naples Underground Tour

We followed our guide down a deep, long stairway until reaching a series of large rooms with towering ceilings. Our guide explained the ancient method of constructing homes in the area over 2400 years ago, which created the underground city that we were now walking through. The inhabitants dug large holes to excavate stone that they then used to construct houses. The large holes were subsequently used as wells.

After enough people had populated the area, there were so many wells that they were connected to create massive underground aqueducts. At one point, the aqueduct was so large that it connected Naples to Rome, a distance of nearly 140 miles.

The aqueducts were eventually closed down when cholera swept through Europe and they were never again used to provide drinking water. During WWII, some of the people in Naples decided to use the underground city as a bomb shelter; creepy toys and graffiti from that time period can still be seen.

A few of the rooms are still used today, some for biology experiments, and some to serve as a venue for art shows. There were also rooms with water in them, making for a stunning visual experience.

Explore by candlelight

My favorite part of the tour was the candle-lit trip through some very narrow passages. This part of the tour, however, may not appeal to people of large bearing or those with claustrophobia. Everyone in the group is given a candle and taken on a short journey through thin passages and into a room that features some pretty incredible sights.

I’m going to leave those sights a secret, however. I can’t give it all away! The tour guides are very good at creating fun surprises and I wouldn’t want to ruin the anticipation and excitement for readers who will one day take the tour.

Though the underground city has been mapped for over fifty years, the endeavor still struggles to raise enough money to unearth more of its incredible remains. When our guide showed me a map that depicted the size of the underground city, I was amazed to find that it stretched well beyond the current borders of Naples. Our tour, we were told, includes less than 1% of the giant, Naples Underground.

Is Naples Worth a Visit?

Naples is unlike any other city in Italy: It is busy, loud, and dirty on one hand (many people say it feels like stepping into a Middle-Eastern bazaar) and creative, friendly, and picturesque on the other.

It is definitely not a quiet, romantic Italian town like Siena or Verona. Threats of pickpockets and a pervasive garbage problem keep many travelers from even visiting the city, while a one-of-a-kind culinary scene, inexpensive shopping, and a vibrant waterfront make it a must-see for others. If you haven’t guessed already, I fall in the latter group.

The first time I visited Naples, I was immediately taken aback by its sheer bustle. I still attest to seeing a family of six—with a pet—whiz past me on a moped. The streets are small and the traffic is frantic. And the large outdoor market in front of the central train station is overwhelming and seemingly chaotic. However, once I became accustomed to the energy of Naples, I discovered the unique qualities that fueled it.

The people in Naples are friendly and welcoming, and always willing to help. For example, the clerk at the hotel where I usually stay is always giving guests tips on the best things to see and do. He also warns of pickpockets and provides extensive advice on how to carry money and cameras. In the stores and restaurants, people are quick to ask you where you are from and to welcome you to their city.

Naples Castles, Markets, and Architecture

The things to do in Naples are its two castles, the Naples National Archaeological Museum—considered the most important archeological museum in Italy—, tours of its underground city Sotterranea, and a waterfront full of beautiful sailboats and traditional fishing boats. The bay of Naples, on which the city sits, provides a clear view of the ancient Vesuvius volcano that buried the nearby city of Pompeii in 79AD. The Castle dell’Ovo is located on a tiny island that is joined to Naples by a short bridge and is free to visit. Castle Nuovo , which costs 5 euro to enter, is the more striking castle, with ancient stonework and dramatic towers.

Finally, the architecture of Naples won’t be forgotten, as huge churches, cathedrals, and other strutures of Medieval, Renaissance, and Baroque periods are found throughout the city. My favorite spots are the Piazza Dante , which boasts a great statue of Dante, and the Piazza del Plebiscito (especially at night). With Naples, I’ve found that looking beyond the crumbling apartment buildings provides an exciting glimpse into a city that is truly unlike any other on earth.

The markets in Naples are a great place to find clothes, shoes, purses, sunglasses, hats, and so on. However, they are known for pickpockets, so keep your money hidden or spread out between different pockets. If you try on shoes, the venders will provide you a seat. And, bartering is a way of life in the markets, so never pay the listed price.

Foods to try in Naples

From a culinary perspective, Naples offers traditional Italian foods that cannot be found anywhere else—not even in other Italian cities. Neapolitan pizza is, of course, at the forefront and you have your pick of top pizzerias in Naples .

The street food, which is sold from open storefronts around every corner, is some of the best in Italy. Fried panini stuffed with meats and cheeses, arancini (deep-fried risotto balls stuffed with mozzarella), calzones, and an assortment of fried vegetables and potatoes (sold for 30 cents a piece), should not be missed.

Further, the pastries in Naples are incredible. Sfogliatelle is a horn-shaped pastry that looks like it is made with circles of layered flakey crusts. Traditional biscotti are also served, though bear no resemblance to the dried, crunchy biscotti found in the United States. And espresso in Naples is definitively some of the best in Italy.

As you can see, Naples is worth a visit and there are plenty of attractions to keep you busy for a few days and fill the time between Pizzas.

Meravigliosa! (Wonderful!)

We had an absolutely wonderful time at the Naples pizza making class. Our instructor was awesome and we came away from the class feeling so much more confident in our pizza-making abilities. The price included everything needed to make the pizza (which you then get to eat) as well as bottled water and either a glass of wine, beer or soda with your meal. They also brought out bruschetta and some small dough balls for us to have while they cleaned up from the dough making and set up for the pizza making! Would definitely recommend!

Pizza on a rustic table

10 of the best pizzerias in Naples

The city’s top pizza makers put their name, heart and, most importantly, their hands into what they make, says guidebook author Domenico Mazzella

F or the past three years, the best pizza in the world hasn’t come from Naples, but from the town of Caserta, about 20 miles north, where Francesco Martucci’s I Masanielli – on an unprepossessing main road just outside the town centre – has hung on to top billing in the listings of authoritative guide 50 Top Pizza , run by influential wine and food journalist Luciano Pignataro .

But if you’re in the birthplace of pizza, how do you choose from the thousands that ply their trade in that city?

You can look for plaques on restaurants stating their membership of either the Associazione Pizzaiuoli Napoletani (APN) or the Associazione Verace Pizza Napoletana (AVPN). But there are hundreds of those and, especially since Neapolitan pizza was Unesco-listed in 2017, many pizzerias have, in my opinion, let standards fall and become turistico.

The important thing is that the person whose name is on the shop front is the one in the kitchen tossing the dough. If they put their face, name and hands to it, every pizza is a masterpiece.

My tick list for a good pizza starts with its looks. The crust must be round, regular and at least 2cm high, with little well-browned bubbles all over, and the centre must be soft, not crispy. Sliced into, the dough must have a nice, open structure, showing that it was well proved. And the base must be speckled brown but not burnt, and without the yellow sheen you see when too much flour is used in the rolling out (making it taste bitter). The top must be a harmonious mix of red tomato sauce, pure white mozzarella and vivid green basil leaves in the case of the classic margherita .

Here are 10 Neapolitan pizzerias that, for me, merit the name.

Lombardi 1892, old town

lombardi exterior

The Lombardi family have been making pizzas here for four generations, since 1892, when Errico opened the restaurant. Today it’s run by his great-grandchildren, cousins Enrico and Carlo Alberto, who take turns at the counter – no one else is allowed near. The secrets of the family profession, handed down from father to son, can be tasted in the quality of their pizza – carefully chosen ingredients and dough made in the age-old manner, with a few innovations to make them lighter and tastier. The handsome old building, with a tiled, wood-burning oven built in 1947, and an attractive, marble-clad front adorned with four griffin sculptures, turns out thousands of pizzas daily for the many faithful customers. Via Foria 12-14, pizzerialombardi.it , open Tues-Thurs noon-3.30pm and 7pm-midnight, Fri-Sun noon-3 .30pm and 7pm-1am

Gorizia 1916, Vomero

Pizzaiolo at the counter inside Pizzeria Gorizia

Near this upmarket district’s central Piazza Vanvitelli, this historic pizzeria has long been close to the hearts of Vomero residents. It was founded by Salvatore Grasso in 1916 and is now run by his grandchildren, who oversee the work of their staff with great attention. The margherita here is textbook – all the rules are respected and the exquisite aromas of the cheese and basil seem to give a flavour of times past, as do the waiters in bow ties and the early 20th-century architecture. Via Gian Lorenzo Bernini 29-31, gorizia1916.com . Open daily 11am-4 .15pm and 6 .30pm-1am

Starita, Materdei

man making dough

Don Antonio’s pizzeria is an institution in the narrow streets of the Materdei district. It began in 1901 as a wine cellar and kitchen, becoming a pizzeria and friggitoria (purveyor of fried foods) in 1948. It featured in the 1954 film The Gold of Naples, with Sophia Loren as a young pizza maker. Today, Antonio directs proceedings, with his children and longstanding employees. In his hands frying becomes a work of art: one speciality of his that many have tried to copy is fried-then-baked pizza. Starita has everything for the full Neapolitan experience: historic premises, working-class area, a master of tradition in the kitchen and long queues of patrons waiting for the curtain to go up on real pizza. Via Materdei 27/28, pizzeriestarita.it , open Tues-Sun noon-3.30pm and 7pm-midnight

Pizzeria da Attilio, Montesanto

Attilio Bachetti in his Pignasecca pizzeria

This pizzeria is in the middle of Pignasecca market, where thousands of Neapolitans come every day to inspect the fruit, veg and fish stalls. Attilio’s parents founded the place in 1938 and his mother, Maria Francesca, was for years the pillar of the restaurant, known for her delicious fresh pasta and desserts, which are still available. But the real surprises are of Attilio’s own making. Impeccable traditional pizzas – marinara , cosacca (with pecorino instead of mozzarella) and margherita – make him one of the masters of the art of good dough. His amazing creativity can be seen in an eight-pointed-star pizza with stuffed crust, bacetti (rolls of dough filled with cheese, herbs and nutmeg) and the many other specialities that have made this tiny place a massive success. Via Pignasecca, 17, pizzeriadaattilio.com , open Mon-Sat noon-4pm and 7pm-midnight

Pizzeria Tutino, Porta Nolana

tutino exterior

Very close to the main train station, off a road leading to Porta Nolana and its ancient street market, Tutino has personified generous Neapolitan-ness since 1960. It’s hard to find anywhere else that sticks so faithfully to the traditional pizza a portafoglio . Literally “wallet pizza”, it’s a small version, served folded up in paper to take away. Founder Nonno Giuseppe has passed the art on to his children and grandchildren. Today, Lino, Michele and Sandro, helped by various young relatives, make their tasty pizzas with no frills but no stinting on ingredients. With the still-sizzling pizza in your hands, you’re advised to wander down through the city gate and “give thanks” at the 13th-century Santa Maria del Carmine church. Via Cesare Carmignano 79, on Facebook , open Mon-Fri 8am-10pm, 8am-midnight Saturday

Antic a Pizzeria Port’Alba 1738

pizzeria port’alba exterior

A claim to have been founded in 1738 makes this the city’s oldest pizzeria. Truth and legend are intertwined in its long history, and many famous people are said to have eaten here. And this is all quite easy to believe, given its position under one of the old town’s most impressive gates, Port’Alba. The restaurant has been run by the Luciano family since 1940, with Gennaro currently at the helm. He’s a true master at the pizza bench, with real respect for tradition. His “flavours of Amalfi” pizza, with anchovies, yellow tomatoes, lemon and basil, is not to be missed. And, like Tutino, he is famous for “wallet pizza”. Generations of Neapolitans remember eating his little margherita, folded in four and wrapped in brown paper. Via Port’Alba 18, anticapizzeriaportalba.com , open Weds-Mon, noon-midnight

Pizzeria Fratelli Cafasso

a margherita coming out of the oven at Cafasso

A stone’s throw from Diego Armando Maradona stadium, in the middle of the Fuorigrotta district in western Naples, Cafasso is the perfect place for post-match celebrations. It was founded in 1953 by Don Peppino and his wife Elena, and now the fourth generation, brothers Antonio and Ugo, run the pizza bench and front of house respectively. It’s a simple and atmospheric place, where close attention is paid to the mix of flours that create a light and flavourful dough. The secret of its success is that the original “Cafassi brothers” recipe has never been changed. Via Giulio Cesare 156, on Facebook , open Mon-Sat noon- 3.30pm and 7.30pm-11pm

Pizzeria De’Figliole, old town

Fried pizza with pork and greens at De’Figliole

There’s a pizza even older than the wood-oven baked variety, and that’s the fried pizza. It’s two discs of dough with a rich filling of pork scraps and ricotta. It’s then deep-fried for just a few seconds. This is the speciality – indeed, the only offering – at pizzeria De’Figliole. The venerable Immacolata and her family carry on a tradition started in 1860. Women have always been in charge here, and fried pizza was traditionally the food that poor Neapolitan housewives used to fill the bellies of their children. Via Giudecca Vecchia 39, on Facebook , open Mon-Thurs 10am-10.30pm, Friday 10am-11pm, Saturday 10am-midnight

Pizzaria La Notizia, Posillipo/Vomero

dough, basil, tomato and mozzarella on a board with olive oil jug

Good pizza can make a street famous, especially if there are two fine pizzerias on it. On the side of Posillipo hill, Via Caravaggio snakes up from the Lauro district, and the great baroque artist – who frequented a few taverns himself – would no doubt be proud to see the two La Notizia pizzerias on the street that bears his name. That founder and master pizzaiolo Enzo Coccia makes his margheritas with seven types of tomato, and his filled pizza with pork scraps cooked in extra-virgin olive oil, shows the passion he brings to his work. The original restaurant, at no 53 , is all about staying faithful to tradition, while the second, opened in 2010 at no 94 , has a more experimental take. Whichever one you try, if you go at the weekend there will be a long queue, but it’s so worth the wait. Via Michelangelo da Caravaggio 53, and Via Michelangelo da Caravaggio 94, pizzarialanotizia.com , open Tues-Sun 7pm-midnight

Pizzeria Di Matteo, old town

Antica Pizzeria e Friggitoria di Matteo Naples ItalyAntica Pizzeria e Friggitoria di Matteo

When Dean Martin sang, “When the moon hits your eye like a big pizza pie,” in the 1950s, Salvatore Di Matteo’s pizzeria had already been running for 20 years. The arrival of the US Navy during the war saw his pizza bases get a bit bigger, and beer appearig alongside wine on the drinks menu. Di Matteo’s success has always been down to good quality at good prices. In a great location on the decumano maggiore (one of the city’s three main Greek/Roman thoroughfares), the pizzeria has a hatch (pictured) on the street, selling pizza and the fried snacks Neapolitans love to eat along with it, but the true experience is had inside, in one of several noisy, friendly dining rooms. Service has to be quick, especially at lunchtime, because of the sheer numbers dropping by. Among their numbers in 1994, when Naples was hosting the G7 summit, was president Bill Clinton: it’s said that he asked for a Coca-Cola, but found a “wallet” pizza thrust into his hands instead. Via dei Tribunali, 94, pizzeriadimatteo.it , open Mon-Sat, 10.30am-3.30pm and 7.30pm-11pm
