However, once you go to one, your life will be changed forever. We must confess, while our memories of Basque Country are starting to fade, the T-bone steak we had at the Cider House will be forever remembered.

The Basque Country (País Vasco or Euskadi) has a long tradition of cider making. Cider houses were originally the place for villagers to purchase cider. As cider tasting was a certainty, people would bring along some snacks; not even in the good old days was it a bright idea to drink on an empty stomach.

Today however, they are much more than shops, they have evolved into restaurants. And not any restaurant, but one you will remember forever.

Basque Cider Houses (or Sagardotegi in their local language) are a mix in between a bodega (the cider barrels are generally on display) and a restaurant.

People from the region have a reputation for eating a lot, and only top quality foods. The cider house’s menu will be no different and we can guarantee it is very likely one that you will struggle to finish!

The typical Cider House menu will go as follow:

  • A cod omelette
  • Chorizo cooked in cider or pil-pil cod (it depends on the place)
  • T-bone steak
  • Cheese board

All of the above will be shared for your table and will come with as much cider from the barrels as you want.

It will cost you around 35€ per person. A bargain if you keep in mind that the T-bone steak we had in Basque Country is, to the day, one of the best (and biggest) slabs of meat we have ever had.

It is important to say that cider is a seasonal product. But do not worry, some Cider Houses are opened all year long. However, if you visit during the season, instead of bring served a bottle they will open the barrels and people will queue to fill their glasses. Such a great experience!

The best Cider Houses in San Sebastian and Bilbao

Traditionally they were located in the country outside San Sebastian. While that is still the case, luckily for you, nowadays you can find some in the cities too.

  • Galtzagorri Sagardotegia: Located outside the city centre this is the one we went to and absolutely loved it! Traditional and full of locals. The meat was superb.
  • Asador Arriaga Sagardoregia : Located in the historical city centre. One of the most famous ones in the city. Their reputation and the fact that it is always full speaks for itself.

We stayed in this stunning hotel in the city center (Not the historical city center, in the modern part of town). The hotel is normally for business so we got a pretty good deal (61€ per night) as we visited on a weekend when the hotel does not have much use.

  • Txirrita Sagardotegia: Located near La Concha beach. Rustic styled with all the flavour.
  • Lizeaga Sagardotegia: Located outside the city this sixteenth century house is as authentic as it gets. They have been cider producers for more than 450 years.

If you are on a budget an do not want to spend much in accommodation we stayed  in  Pension Aida.  It is a basic hotel but renovated and in a very good location.   We paid 49,50€ per night for a double room.

This is one trip you simply cannot miss! Get ready for an assault on your senses as we take you to the springtime Cider celebration!

Deep in the green, lush, rolling hills of Gipuzkoa you can find, if you know where to look of course, isolated farm houses that during the spring, literally roar with the sounds and voices of locals partaking in a long established ritual. That of the Sagardotegi or Cider House/Restaurant!

There are different ciders to try, all pressed from the previous autumn’s crop. Just be careful to make sure you get it in the glass as it flies out from huge barrels. It’s not just Cider though, as the tradition inevitably involves eating… Have as much delicious salt cod omelette, grilled cod with peppers, expertly grilled, prime bone-in ox steaks as you can manage, and you will always find enough room for the traditional dessert of walnuts, Idiazabal cheese and home-made quince jelly.

A huge favourite with the locals, a trip to the Sagardotegi is a real insight into how Basques and food go hand-in-hand. Groups consist of all ages and numbers but all respond to the call of “Txotx!!” whereupon diners, glass in hand, make it to the barrels to sample the freely pouring cider! A truly Be delicious experience and one of our favourites.

SAGARDOTEGI: THE BASQUE CIDER HOUSE

The production of cider has a long history in the Basque Country, going all the way back to the 11 th century. The sagardotegi was originally where locals would go to buy cider and they would typically take a meal with them so they didn’t drink on an empty stomach.

This eventually developed into the tradition of the sagardotegi functioning as a restaurant and a place for social gatherings.

Today, sagardotegis are typically old farmhouses located mainly in Gipuzkoa, around San Sebastian , however, they can be found all throughout the Basque Country.

For 35-40 € you receive a set menu that is pretty much always the same. It usually consists of:

First Plate: Tortilla de Bacalao (cod fish omelet) Second Plate: Bacalao al pil pil (cod fish in a garlicky sauce) Third Plate: Txuleton (enormous aged ox steak) Dessert: Walnuts + local cheese with membrillo (quince jelly)

All you can drink cider

And of course there is cider and you can drink as much as you like, and even become a connoisseur in the process since there are normally several different types of cider to sample. The cider comes from giant wooden barrels (kupelas), which are opened periodically when someone yells “Txotx!”

The cider shoots out of the tap and must be caught several meters away and as close to the ground as possible. This is done for aeration purposes and its incredible fun.

The entire sagardotegi experience is one that shouldn’t be missed and could easily be the highlight of any trip to the Basque Country.

Sagardotegi Season

Apples for the cider production are harvested from September to November and then left to ferment. The official start of the cider season kicks off around the middle of January and runs until April or May. The cider houses are generally only open during the cider season.

However, there are a few that stay open all year round. One such is Petritegi and its located just 15 minutes outside of San Sebastian.

Experience a Basque Cider House

Since most sagardotegis occupy old farm houses, this means that they are mostly located in the green hillsides of the Basque interior . You will find the largest concentration in Gipuzkoa, particularly around the towns of Hernani and Astigarraga .

Because of their remote locations, cider houses can be a bit tricky to get to – particularly if you don’t have a vehicle.

Of course, an option is to rent a car . However, if you want to enjoy a sagardotegi to the fullest, you will probably be drinking a fair amount of cider since it really is all-you-can-drink. For these reasons, it’s usually a good idea to let somebody else take care of the driving .

The most convenient way of visiting a cider house is by taking part in this Cider House Experience from San Sebastián . This has only recently opened, but the wine bar looks as though it will be really good in a short while. The cooking class is held in a completely new kitchen, and Chef Mikel was brilliant. He has cooked to 3star Michelin standard in Spain and the UK, and his knowledge of food and wine is superb. He also relates really well to all the class participants. From my point of view, I would have preferred some more complexity to the dishes, but this has to be something which can be done by someone with minimal cooking experience, so I can forgive that. How to Visit a Cider House Near San Sebastian, Spain

If you are visiting San Sebastian or around, definitely leave time to experience cider tasting and gastronomy of the Gipuzkoa province in the northern part of the Basque Country. 

Cider is known here as  sagardoa , and cider houses are called sagardotegi in Basque, or sidreria in Spanish. In the Basque country, the main apple growing region is near the town of Astigarraga, a few miles from the city of San Sebastian and from the French border. 

Cider tasting is an excellent day-tour from San Sebastian, Bilbao or Biarritz.  You will  learn all about cider-making, drink a lot of it, have an authentic meal and participate in a fun local tradition of txotx . 

If you are fond of authentic non-touristy activities, go for a  txotx .  This is definitely a living tradition that Basques seem to enjoy.  Cider tasting experience is a good way to meet local people.  

Just be aware that cider tasting is incomplete without a lot of Basque food.  Count on getting very abundant lunch or dinner at a cider house.

Where to Taste Cider In or Near San Sebastian?

Cider is served  in bottles  at most local bars and restaurants in the Basque country.

You can taste cider accompanied by typical food, right in the center of San Sebastian at one of the cider houses .

For example,  Txirrita Cider House is right in the center.  This cider house offers all the traditional and vegan and vegetarian meal options.

Salaberria   sidreria is another option in town.

From San Sebastian to Rioja Wine Region

If you are looking for an even more authentic cider experience and, perhaps, interested in a tour, take a short 10-15 minute car or a bus ride from San Sebastian to the  Astigarraga area.

M ost of sagardotegis are in the north part of Gipuzkoa  close to the towns of Astigarraga, Hernani, Urnieta, and Usurbil.

Cider houses can also be found in other parts of Gipuzkoa, in the northwest of Navarre  and the  northern Basque country .

Tours  can include a walk through an apple orchard and through cider-making facilities, and tasting cider directly from barrels.

Tours usually run on the weekends between June and October, and every day during the txotx season, from January to April.

Some cider houses will stop guided tours during cider-making season between October and December. Depending on a house, they may take the first week of January off.

A tours and a tasting typically cost 12 to 15 euros per person.

My tour at Petritegi cider house included an apple-tree orchard, the cider museum and the cellars. The family follows the cider-making tradition from the 18th century. Cider tasting was accompanied by cider-cooked chorizo sausage.

You may want to confirm whether there is the availability of tours in English, as some cider houses do not have permanent English-speaking staff.

Most cider houses offer tours that include tasting from barrels ( txotx ) and a gastronomic feast, a full traditional menu for 35-40 euros per person.

There are also options to make-your-own-cider, various activities for kids and concerts.

It is recommended to make your tour bookings a few days in advance to guarantee a spot on a tour.  There is usually a minimum group requirement for a guided tour to run.

Txotx Experience

Txotx (pronounced “chotch”) is a ritual of tasting cider straight from the barrel.

Txotx season typically runs from approximately mid-January to the end of April. 

During this time, at the cider houses in the hills surrounding San Sebastian, you can enjoy  unlimited cider  from huge 20,000-liter barrels called kupelak. 

You are given a special thin cider glass.  A “cider man” opens a tap and pours cider to your glass from the height.  Drink it all at once and get a new pour.  It is unlimited!

You also get to taste traditional Basque foods right in the cellar.  Reserve your spot in advance, as these events are extremely popular among locals.

The Best Cider Houses Near San Sebastian

The best cider houses in the Astigarraga area are:

Astarbe Sagardotegia offers tours in English where you will learn the history of the house, visit the orchard, taste cider from the barrel with a cheese pintxo and chorizo cooked in cider. 

Astarbe also offer txotx experience and traditional meals.

Petrilegi is a popular traditional cider-house with a family feeling to it.

There are two tasting rooms and a dining room with barrels. Wooden furniture,  friendly hosts and service, and simple fresh local food.

Petrilegi cider house offers a variety of experiences, including cider tours in English.

Zapiain cider house is also very popular.  They offer traditional txotx experience every night starting late January. You can reserve your txotx online.

No formal tours are currently advertised, but you can enjoy txotx with the Basque menu for 33 euros, as well as the a la carte menu.  You can inquire about the txotx experience  throughout the year .

They are open all year round, every day except Mondays.

Family-owned cider house with top quality cider, Zelaia offers txotx experience   and traditional dinners. They do not propose official guided tours.

Zelaia cider house offers a  vegan menu in addition to its traditional menu.

How to Drink Basque Cider?

Cider is a naturally fermented apple juice drink with an alcohol content of approximately 6%. Natural cider does not contain preservatives or added sulfites, and thus it has to be drunk soon after making.  Natural cider from northern Spain is made in a dry style. It is  distinctly acidic and sour. 

Cider takes some time getting used to.  I took me a couple of tastings to appreciate it.  I love its freshness and zesty taste.  Locals seem to drink a lot of cider.  You can find an empty crate for like 12 cider bottles next to each table at a sidreria. The crate get which gets filled during a dinner and replaced with another one.

Basque cider is drunk in small quantities. Pour no more than 2 or 3 fingers into a large and thin cider glass.  Cider is served a small quantity at a time, as it has to be drunk right after pouring when the aromas are still present in a glass.

Drink it in one shot and do not leave any cider in a glass.

Cider has to be filled with bubbles before serving, therefore, at cider houses, cider is served from large barrels and it gets oxidized before reaching your glass and during pouring.

The optimum temperature for serving cider is  10-12ºC. Before opening the bottle, take it upside down and shake lightly such that the sediment mixes with cider, pour immediately.   Today, many cider bottles are closed with a special type of synthetic cork with an aerating opening which helps to provide for the oxidation of cider during pouring.  Pull the cork out until you see the carved out part and pour cider through it without fully removing the cork from the bottle.

Foods Paired with Basque Cider

Basque cider houses offer various pre-fixed menus for groups of 2, 4 and up.  This way you will taste a full range of dishes that have been paired with cider for hundreds of years.

These are simple foods, however cooked from the freshest products using the traditional recipes.  

The menu looks very similar in all cider houses.

Typical dishes include cod omelette ( tortilla de bacalao ), fried cod  ( bacalao frito ), grilled Atlantic mackerel ( txitxarro ), cider sausage ( txistorra ), charcoal-grilled T-bone steak ( txuleta ).  Yes, these are all hard to pronounce, however, give it a shot, just read ‘ tx’  as  ‘ch’.

For a dessert, taste local cheese ( queso idiazábal ), quince marmelad ( membrillo ), and walnuts ( nueces ).

For those looking for vegan and vegetarian options, there is a salad, some sidrerias offer expanded vegan and vegetarian menus.

  • In Laudio/Llodio.  San Blas Festival.  Exhibition and sale of agricultural and artisan products, rural sports, elaboration of blood sausages, dance and music shows, a tribute to the baserritarras of the area, tasting of chestnuts, burning and scraping the pig,... and Txarripatas Gastronomic Contest (pig hands). From Febuary 3rd.
  • In Kastrexana (Barakaldo).  Pilgrimage to the Sanctuary of Santa Águeda.  It is the patron of women and fertility. The main pilgrimage on February 5th, and two others: one the previous Sunday and another the following Sunday. On February 4th, choirs and gangs roam the streets singing in honor of the Holy and accompany their songs with rods and sticks ("makilas") with which the ground is beaten rhythmically.
  • In Vitoria-Gasteiz.  Feast of Saint Agatha.  Traditional rounds singing couplets in honor of the martyrdom and death of the saint in the neighborhoods, accompanied by the sounds produced by rods and canes that hit the ground to the rhythm of the couplet. February 4th and 5th.
  • In San Sebastian, Anoeta, Astigarraga, Irun or Tolosa.  The party of the boilermakers . Several groups emulate the Hungarian Zingaros who arrived in the city to sell their products during the Carnivals. It is a peculiar way of announcing carnivals. February 5th.
  • In Rivabellosa.  Truffle Fair.  V Fair of truffles and artisan products related to it. Live cooking and contests. February 6th.
  • In Mundaka.  Carnivals: Aratuste.  The most important carnival in Bizkaia, since 1841. In the morning the men come out in their white dresses like atorrak, and in the afternoon the women like lamiak. They represent themes of Basque local mythology.
