The ballykeefe experience.

Discover the origins of Irish Whiskey here at Ballykeefe Distillery. We aim to educate and entertain you as our expert tour guide takes you back through the ages of Irish whiskey to where it all began at its birthplace. The tour will be a journey through every part of the Ballykeefe operation, which has revived the lost traditions of a family farm distillery, with a unique commitment to environmental protection, carbon neutrality and sustainability.

Our distillery tours are offered by appointment only, on a request basis. Tours may be arranged, Monday to Friday (excl. Bank Holiday Mondays), subject to availability and our production schedule.

What to expect

You will visit each stage of the brewing and distilling process, from the mill house, to the brewhouse, to the breath taking copper pot stills to the warehouse and our on site bottling plant. You will see up close every step in the process and also enjoy and have explained the many different aromas and smells at each stage of the brewing and distilling process.

Secrets of a Master Distiller

Many secrets will be revealed in how our Master Distiller ensures only the best brew makes it through to the distillation. How he makes the “cut” of spirits that will go to the casks and what is discarded. How does he achieve the flavors and consistency and why are the barrels and climate so crucial at the final stages of the process.

We will also explain the magical “Angels share” that Mother Nature takes from every barrel as it ages silently in our warehouse for years. You will also be told of our exceptional water source, from an aquifer 260ft beneath the surface of the rich Ballykeefe earth, right here on our farm. This crystal clear water picks up its unique flavour from the permeable rock of Ballykeefe limestone.

Finally, with your thirst for knowledge satisfied, there now comes the moment to quench another desire. For this, you will be taken to enjoy the wonderful ambience of our exquisite tasting room, transformed from the horses stable. There we will share samples of our fantastic products, which we are certain you will enjoy even more, knowing their history and the craftsmanship devoted to their making.

Ballykeefe Distillery

Ballykeefe Distillery is The Birthplace of Irish Whiskey. It is located among the beautiful Irish countryside of the medieval capital, Kilkenny City. At Ballykeefe Distillery they produce a range of super-premium spirits in an eco-friendly environment.

The first written account of distilling whiskey in Ireland comes from Kilkenny in 1324. It was written in the Red Book of Ossory. The word “Whiskey” is an Anglicisation of the Gaelic phrase “uisce beatha” which means “water of life”.

Take the tour of Ballykeefe and discover the roots of Irish Whiskey. Tours are available from the months of April to October and can be booked through the website.

Kilkenny Whiskey Guild 

The first written account of distilling in Ireland comes from Kilkenny in the 14th century with the Red Book of Ossory and the Kilkenny Whiskey Guild are celebrating and highlighting this history.

The Kilkenny Whiskey Guild is a collection of 10 establishments throughout Ireland's Medieval capital. Each premises will stock a minimum of 60 Irish Whiskeys and will assist in the customers experience through knowledgeable staff, tasting flights, food pairings and mixology.

Regular whiskey events will be held in each of the Guild Houses designed to heighten the public’s knowledge of Irish Whiskey history production and various styles. The guild aims to make Kilkenny the leading Whiskey tourism destination in Ireland.

Our tour guide, Dan was exceptional. Dan was not only kind, good humored and accommodating, but has an incredible wealth of knowledge. His thoroughness of the Irish Gaelic language and history helped bring Ireland’s beauty, people and history to life. He is a great professional but very, very pleasant as well. He ensured that his customers were well taken care and comfortable. He explained every site with great depth of knowledge and patience. My husband and I consider ourselves lucky to have Dan as our tour guide. It was not only our experience but the other members of the tour conveyed the same sentiments as well. What a beautiful way to see the Irish countryside. Our tour guide, Marcus was wonderful, so knowledgable and kind! We were blessed with amazing winter weather (with not a single drop of rain on our 3 day trip) and were able to see Ireland at it's finest! The trip was well-paced, nothing seemed too rushed and we had plenty of time to explore the town of Dingle. Expectations wildly exceeded. From the moment we gathered in central Dublin, our guide and driver Joe O’Connor made the five days a glorious adventure in the South West of Ireland. Whether on a tour or on ones own, the scenery and sites would have been marvelous (though it is hard to imagine we could have covered nearly as much on our own during the time). With Joe’s storytelling, clear narration as he drove and passion for Ireland, the tour couldn’t have been better. The days were chock-full yet without a hurried feel and the evenings in Galway (one night) and Killarney (three nights) gave us a chance to experience the vibrancy of each town. When we booked it, we knew that the tour was going to be special, but little did we know that we would have such a fantastic guide. Our guide, Peter, was phenomenal. He is a wealth of knowledge and history, taking the time to share the depth and complexity of Ireland's rich culture and complex history with us. I cannot say enough about our brilliant tour guide Colm. He was always organized, prompt, kind, funny and interesting. I was in awe of his tremendous knowledge about all things Irish~ geography, history, politics, social and environmental. He was so informative and added much to my learning of this wonderful country. Colm always kept us informed of our schedule each day and added some amazing experiences I'll never forget. (loved the Celtic Dance and the sheep-dog demonstration!). Our tour bus was immaculate and with only 8 of us there was plenty of room and comfort. Colm has a wonderful way of including everyone and really made this tour far outreach my expectations. I loved the way the tour was organized. Our daily stops were well chosen~ beautiful and interesting. The tour booked our accommodations and they were both fantastic~ one a quaint bed & breakfast and the other part of a town pub. Each provided delicious breakfasts, had comfortable, clean rooms and great service. I really appreciated the pace of this tour too. Ample free time was allotted so I did not feel rushed and could enjoy all the locations. Our driver, Ian, was funny, knowledgeable, articulate and kind. In addition to his knowledge of history, he had us all laughing with his stories of growing up in Ireland. His driving was professional and we felt very safe - I can’t imagine driving the Ring of Kerry myself!! The scenery was amazing and included castles, beaches, distilleries (would have liked a guided tour of Kilbeggan Distillery), Dingle Penninsula and various small towns where we ate everyday - we were even encouraged to “pull a pint” at one of the pubs. So much fun! We only had 12 people on the tour and they couldn’t have been nicer; in addition to sharing lunches each day, we even met a few nights at local pubs in Killarney to share a glass of wine (or Guinness) and listen to local music. We could not have been more pleased with the Rabbies tour we were on. With only 9 passengers on board a bus that could hold 18, we were able to quickly enter and exit the bus at every stop. Our driver, Joe O'Connor was a total delight with his love and knowledge of Ireland and teaching us some traditional Irish songs as he drove along the tour routes. Each day was filled with various sights from a chocolate factory, a whiskey distillery, watching a collie dog herd sheep, the Cliffs of Moher, beautiful beaches . landscapes, castles and so much more. Joe engaged everyone on board and encouraged questions and conversations while we were travelling. We were so fortunate that our first tour experience was so terrific. Let’s note that comments had been made the entire tour, especially in Belfast, that Ireland is the only place in the world you can go and listen to live music without expecting to buy a drink. We went in and notice many ppl standing so assuming that it’s just like all the other places we had been in where standing room only with live music. We had listened to one whole song and we’re deciding if we were to stay. Even if we were not staying my intentions were to tip ($) the band in good spirit. A server aggressively came up to us demanding we buy a drink or get out. He then used his body to physically push me out the door way and trapped my mom in to call her rude many times over. He was shouting at us and physically assaulted me. I was scared and left very upset. This man was physical with me, a woman and extremely aggressive. I put in a complaint to our tour and he called but the coward decided not to return the call. I do not recommend here. Then, we went down to the garden bar to listen to some fantastic traditional Irish music. Downstairs was packed and it was hard to get a seat, but it was well worth it. No problem with the staff they were friendly and efficient. The food was terrible. Ordered cajun chickens pannins which were soggy the chicken was boiled and tough as for cajun some kind of sauce was thrown over them not cajun. Chips were frozen and some not edible. 2 of us had the roast said it was nice but for the price charged it could've been a bigger portion. We had just visited a locla castle and were ready for a good meal and a Guiness. This building has an interesting history of its own that is detailed on the menus. You can even get a picture with a statue of the original proprietor before you leave! How cool is that? I had the fish and chips and was pleased with the size of the piece which was laid on a good sized pile of chips. A small bowl of mushy peas comes with the meal. The service was speedy and attentive. We did not wait long for a server and drinks. Actually, one server got to us early and another came up not knowing we had already been served. All four of us enjoyed our meals and my wife had some left over to take with us. Be sure to roam around the premises a bit and take in the cool old building sites. The Kilkenny Whiskey Guild is a collective of 10 establishments throughout Ireland’s Medieval capital. Each premises stocks a minimum of 60 Irish Whiskeys and will assist in the customers experience through knowledgeable staff, tasting flights, food pairings and mixology. Regular whiskey events are held in each of the Guild Houses designed to heighten the public’s knowledge of Irish Whiskey history production and various styles.

Ballykeefe Distillery

Ballykeefe Distillery produces a super-premium whiskey, exceptional gin and a special vodka at their eco-friendly on farm distillery in the picturesque Kilkenny countryside using the traditional Irish method of triple distillation. The straw that comes from the harvest , is used as bedding for the cattle during the winter months, and the ale that’s made in the brew house here in the distillery, is extremely high in protein and we feed that back to our cattle here on the farm.

Ballykeefe is 100% sustainable as Morgan & Anne Ging wanted to revive a lost tradition of family farm distilling and in so doing hand on to their children a more diverse, ecological and sustainable family operation. Ballykeefe  Distillery received a bronze in Ireland’s inaugural Food & Drinks Business Awards earlier this year for “Sustainable Factory” in recognition of their innovation through excellence with a focus on smart factories, new technologies, quality, safety and security of produce. The tour will educate and entertain and of course tasting is a prerequisite for imbibers.

Highbank Orchard & Distillery

Rod & Julie Calder Potts are organic royalty at home and abroad, producing a multi award winning range of apple based products on the family farm Highbank which dates back to the 17th century. Once the home of Ireland’s hop growing industry, the first apples were planted six years later and have gradually taken over from the hops. Rod and Julie grow a number of varieties to make traditional farm pressed apple juices, luxurious Highbank Organic Orchard Syrup – Ireland’s answer to maple syrup – and a clutch of farm brewed natural organic ciders. Investment in a 253ltr high tech pot still means they also produce 80%proof pure spirit from their own freshly squeezed apples, which is completely unique in Ireland.

The fertile Kilkenny limestone soils are uniquely suited to producing Proper and Medieval Ciders, vinegars and a range of delicious syrups and juices. All production is to the strictest of organic standard including Medieval herbicides are used. Estate Spirits include  Kilkenny Crystal Gin, liqueur and apple vodka.

History of Smithwick’s

In the 13th century, Irish monks settled at St. Francis Abbey. For more than 300 years the Abbey grew in size. However, the arrival of Henry VIII and the Reformation in 1537 meant that the Abbey was forced to close its doors.

The Smithwick's Experience is located on Parliament Street in Kilkenny.

When John Smithwick moved to Kilkenny in the 1700s the penal laws for Catholics were in full swing, meaning he couldn’t own property or run for elected office. Shortly after his arrival in Kilkenny, John went into the brewing business with Richard Cole on a piece of land that Cole had leased from the Duke of Ormond in 1705, who lived in Kilkenny Castle.

Smithwick spent decades keeping his business affairs private. Locals liked doing business with the mysterious Mr. Smithwick. His name had earned respect, although the laws still forbid him attaching it to anything. When penal laws were finally revoked in the late 1700’s the Smithwicks were finally free to take their rightful place in Kilkenny society.

Edmond Smithwick finally got the Smithwick name over the brewery’s gate in 1827. Under Edmond’s leadership, trade skyrocketed in 10 years from 5,000 barrels to 40,000 barrels in 1860.

In 1892 Smithwick’s won 1st prize in Dublin’s Rotunda Exhibition of Brewers and Distillers, officially landing it on the Irish brewery map.

In 1930, Walter Smithwick marketed the brewery’s naturally-conditioned bottled ale as Smithwick’s No.1 and large slogans referring to it began to appear on buses, trams and in newspapers across Ireland.

Smithwick’s Experience Opens Its Doors

In August, 2014 the highly anticipated Smithwick’s Experience opened its doors in Kilkenny.

Located in the old Victorian brewing building on Parliament Street, the multi-sensory and interactive experience takes visitors on a journey through the medieval origins of brewing on the site of the St. Francis Abbey Brewery to the arrival of John Smithwick in the 1700’s, and right up to the present day.

Hop heads are fully immersed in the history of Smithwick’s, Ireland’s oldest beer brand, the fascinating heritage of the Smithwick’s family and its place in Kilkenny, a city steeped in ancient history and brewing tradition.

When you arrive, there is free parking available outside our main gates on Distillery Walk. There is also free parking available at Distillery Lane car park and on Main Street Midleton.

Train Regular trains depart from Cork’s Kent Station to Midleton daily.

Public Bus Local Bus services are available 7 days a week. The nearest bus stop to us is located at the end of Distillery Walk.

Plane From Cork Airport, bear left and follow the N25 Waterford Road until Midleton town.

Ferry Nearest Ferry Point is Ringaskiddy 21 KM from Cork. Leaving Ringaskiddy follow signs for Cork City initially and then follow signs for Waterford N25. Leave the N25 at Midleton.
