At the forefront of industry

The hospitality and tourism industries are amongst the fastest-growing employment areas worldwide. Due to this growth, employers require individuals with the necessary skills and education to lead the next generation of hospitality and tourism businesses.

These industries are facing new global challenges, compelling companies to adapt. Tomorrow’s hospitality and tourism leaders will not only need to learn to act according to the norms of their profession – but also develop the competencies to think critically, measure satisfaction and performance, and apply a set of tools to achieve standards. You’ll gain the skills needed to support tourism and hospitality businesses' transition to a global sustainable economy. You will explore how to do this through service innovation, processes of continuous improvement of service quality which are increasingly directed by technological innovation, and the adoption of sustainable and responsible business practices.

A degree for a sustainable future

Sustainability is at the heart of our degree, you’ll develop a deeper understanding of the sustainable development goals, and the role tourism and hospitality play in influencing visitors and guests behaviours. You’ll explore how this can be utilised for social, cultural, and economic benefits for local communities, and how we can reduce negative environmental impacts at local, national, and international levels.

You’ll explore how sustainable digital technologies are used to build resilient infrastructures and global supply chains, foster innovation, and support the developments of destinations both locally and internationally.

Core Modules

Hospitality Principles and Practice

It is essential that service providers understand the needs and wants of their customers. In order to be successful we need to identify who our customer is and what their characteristics are. This module will provide practical training in our award-winning restaurant and bar as well as examining the customer journey and developing trends.

Digital Hotel and Resort Management

Hotels and resorts are a very important, challenging and one of the largest sectors of the hospitality and tourism industry. This module aims to develop your understanding and skills for how to efficiently manage rooms operations through each stage of the guest journey. The module explores contemporary digital technologies to enhance guest experience and includes practical sessions where you will gain proficiency in one of the world’s leading property management systems.

International Organisational Management Skills

This module introduces you to the competencies required by managers in the international business environment, while developing your skills in critical areas of personal effectiveness and relationship management. Through the use of international case studies and contemporary management theory, you will reflect on organisational structures, individual and group behaviour, responsiveness in changing business situations and the influence global trends have on the increasing ‘connectedness’ of organisations and people in a cross-cultural environment.

Dynamic Tourism Environment

This module will examine the dynamic nature of the global tourism environment and the response strategies of tourism businesses. Critical themes include the changing nature of the tourism industry and consumers, safety and security, digital technology, the ability to travel ‘freely’ (or not) around the world and how businesses are striving to implement more effective sustainable tourism policies. This module will enhance your employability skills with a focus on data trend analyses, industry audits and the identification of critical challenges and best practice across the sector.

Work Placement

Work Placement (optional)

You will gain valuable work experience on a 48-week work placement. This is an exciting opportunity to put what you have learned into practice, broaden your experience and demonstrate your abilities to potential employers.

Revenue and Profitability Management

In this module, you will develop skills in the interpretation and analysis of financial and management data to positively influence profitability and cash flows. You will build your understanding of the critical aspects of delivering profitable hospitality and tourism businesses. You will also have the opportunity to demonstrate your mastery of these principles in an innovative hospitality and tourism management simulation. The simulation will support learning, and you will critically evaluate the impact of your decisions on the creation of revenues, efficient use of costs controls, maximisation of profits and viability of cash flows.

Marketing and Social Media Management

The hospitality and tourism industry faces a huge challenge in terms of adapting and promoting services in an interconnected world. Marketing is essential for any business to remain competitive and successful, so you will examine the use of marketing tools. You will examine the tactics, strategies and ways that marketing managers use social media communications to secure business.

Resource and Talent Management

Within this ever-changing and dynamic business environment, now more than ever before, organisations must be able to assemble teams of people with the necessary skills, attitudes and behaviours to meet their business objectives. To this end, our managers will need to be actively involved in recruiting, engaging, developing and retaining the right talent. Taking an inclusive perspective, all employees have the potential to make a real contribution to the achievement of the business, and therefore talent management of all staff must be a key management focus.

Plus one option from:

Gastronomy and Sustainable Food Management

Gastronomy is the study of the relationship between culture and food. As a module developed for food lovers it will provide you with an appreciation of food within various cultures. Also, current trends and food issues such as sustainable practices and how they impact the industry today and into the future will be studied.

Dynamic Events and Experience Management

You will explore the dynamic nature of the events industry and experience economy, the importance of effective stakeholder management, policy-related issues, contemporary event trends and the overall role of events for tourism and destination development. Event impacts will be analysed and event typologies will also be reviewed. Based upon well-established models, you will gain a sound understanding of planning and designing event experiences within the contemporary environment, as well as the effective implementation and evaluation of event projects.

Managing Bars and the Night-time Economy

The bar sector and night-time economy offer some of the hospitality industry’s most dynamic and challenging operating environments. This module evaluates a range of both the more traditional aspects of bar-retailing, such as ensuring profitability through inspirational management while operating within the scope of current licensing regulations, and exciting opportunities now being presented by digital technologies in enhancing both the customer experience and operational efficiency.

Tourism Operations and Innovation

Providing a competitive visitor experience, while generating profits, is the ultimate performance goal for tourism operators. This becomes increasingly challenging in a very competitive and dynamic environment. Accordingly, tourism operators must seek innovative solutions to performance gaps to ensure long-term success. This module will examine the current practices of tourism operators in terms of revenue management, capacity management and offering an outstanding visitor experience. The above will develop essential professional and employability skills.

Independent Research Project

This module provides you with the opportunity to demonstrate your capabilities in researching, planning and delivering an industry-related macro or micro-based project independently. You can either self-select your own topic or choose from a list of contemporary industry projects. This project focuses on cultivating the desired graduate attributes of professionalism, critical enquiry, problem solving, enterprise, creativity and innovation and in enhancing your professional profile to enrich and facilitate independent learning and development for graduate career opportunities.

Strategic Financial Management

In this module, you will build upon both practical and theoretical financial concepts developed through earlier modules. You will gain commercial awareness and understanding of strategic organisational finance and will learn how to synthesise and evaluate business performance and strategy.

Plus two options from:

Strategic Change Management

In an increasingly fast-paced and changing global environment, it is more important than ever that a business can navigate its way to a successful future. This module will evaluate different strategic change management tools in supporting businesses to seize new opportunities and treat risks/threats.

Business Process Improvement

This module provides you with the ability to identify how a process within the business can be improved. A process is a sequence of activities that takes an input and transforms it into an output. Activities consume time and other resources. One way to improve performance is to redesign processes so that they consume less time and resources.

Tourism Trends and Futures

This module will review tourism trends and strategic challenges facing destinations as they strive for sustainable competitive advantage and future-proofing their offer. Various macro forces continue to influence the strategic direction of destinations with new risks and opportunities arising. Destinations are implementing more inclusive and sustainable strategies to navigate their way through a more turbulent environment. But the question remains, can they successfully future-proof themselves? You will develop your professional skills and knowledge in destination management, trend/data analysis and strategic management of destinations.

Global Expansion Strategies

This module complements the international dimension of the programme and aims to promote the complexities and issues hospitality and tourism organisations face when attempting to enter overseas markets to seek growth globally. Hospitality and tourism organisations increasingly seek to operate outside of their own boundaries in diverse and less understood market environments. Management skills are required to successfully exploit new overseas market opportunities through the use of both traditional channels and new media opportunities to deliver integrated marketing strategies offered by the latest innovative technological developments.

The modules listed above for this course are regularly reviewed to ensure they are up to date and informed by industry as well as the latest teaching methods. On occasion, we may need to make unexpected changes to modules – if this occurs, we will contact all offer holders as soon as possible.

Course options

Research methods.

The Research Methods module aims to help students to develop an understanding of the research process and prepare students to undertake research leading to successful completion of their dissertation. It enables students to conduct research independently and also provides them with the knowledge, skills and understanding required to develop their proposal for their dissertation. Students are required to identify an area of research and develop research questions to be answered or hypotheses to be tested in the industry context relevant to their course of study. The module covers ideas, techniques, and methods relevant to different stages of the research process, stressing the interdependence of each stage in conducting effective, coherent and rigorous research.

STRATEGIC HUMAN RESOURCE MANAGEMENT

This module recognises the importance of human resources to the successful operation of hospitality and event organisations but will emphasise the strategic aspects of Human Resource Management (HRM) that influence the development of organisations. Hospitality and event companies need to develop and implement effective human resource practices and policies to achieve competitive success, especially in the current economic climate. The module is intended to provide an opportunity to review models and concepts underpinning Strategic Human Resource Management (SHRM) and current trends and issues in the strategic HRM for international hospitality and event industry. It therefore approaches the economic, social, environmental and cultural aspects of managing hospitality and event businesses world-wide from a critical perspective and asks students to consider how societal and organisational advantage can be achieved through strategic approaches to the management of HR. The module will provide a grounding in the knowledge and application of strategic HRM practices within the global hospitality and event industry such as Employee Resourcing, Employee Development, Pay, Appraisals and Performance as well as Employment Relations. The content of the module will review several case studies from the hospitality and event industry.

SERVICES MARKETING FOR EVENTS, TOURISM AND HOSPITALITY

This module is designed as an introduction to marketing. The module is divided into two distinct elements, firstly the principles of marketing are covered, and secondly the industry specific application of marketing is analyzed. The module also creates an opportunity to facilitate 'real life' decision-making and enhances a wide range of study skills, such as independent research, analytical skills as well as critical thinking. As such the goal is to contribute to resourcefulness and resilience and to develop digital capabilities linked to the topics covered. Consequently, students   develop skills relevant for employability.

OPERATING SYSTEMS & SUSTAINABILITY

This module is designed to provide students with an understanding of how tourism and hospitality operations function systematically. The systems approach adopted will enable students to critically analyze the interrelationships between systems theory, systems design and systems analysis in tourism and hospitality businesses. This approach will facilitate a critical appraisal of the sustainability and effectiveness of operational types and an evaluation of the potential for improvement. For those students with a background in tourism and hospitality, this module will provide a sufficiently distinct approach for them to gain new insights while offering students without any prior knowledge a framework to facilitate their understanding of new material

STRATEGIC MANAGEMENT OF INT'NL HOTEL COMPANIES

This module examines a strategic approach to the management of international hotel companies. International hotels are key drivers of the hospitality and tourism sectors around the world and because they do business across borders, they are complex operations to manage. The numerous challenges for international hotels in the coming decade need dynamic strategic thinking, global cultural awareness and innovative management approaches. It is critical that management of such operations takes place within a guiding strategy. The contemporary strategic dilemmas facing international hotel companies will be the focus of this module, underpinned by current academic research, practice and debates. The module aims to provide students with the knowledge, skills and opportunities needed to become future leaders and managers of international hotel companies. The strategy theory covered in this module will also have relevance to management of other parts of the hospitality sector.

ACCOUNTING & FINANCE FOR THE SERVICE INDUSTRY

Managers in the service industry need to be able to measure and analyse the financial, social and environmental performance of the business to underpin decisions in the management and investment setting. In this module, students will learn how to critically evaluate financial information and data available in annual reports, financial analysts’ reports and other relevant sources. Using the principles and practices of financial analysis offered in this module, professionals in the service industry will be able to continuously optimise their firm's performance and enhance the profitability of investment decisions.

REVENUE MANAGEMENT

This module is designed to develop an understanding of revenue management (RM) in the international hotel industry. This has become a major strategic tool in the successful operation of these businesses. The module provides an overview of the RM, looking at all aspects of this activity from a variety of perspectives – strategic, marketing, operations and human resources. Contemporary issues surrounding RM, such as the implications of using algorithm pricing and augmented decision-making, will also be debated from different perspectives.

ETHICS AND CSR

This module introduces students to the study of ethics and applies this to tourism, transport, hospitality and events. Within the last decade significant attention has been paid to the issue of ethics and sustainability in these industries. Issues such as: corporate social responsibility, global reporting, ethical consumption, to name but a few, are becoming increasingly central to business practice. This module will offer students the opportunity to reflect upon their own understanding of ethics and corporate responsibility. It will introduce them to a range of theoretical approaches to understanding ethics and ethical responses to business situations, as well as provide the opportunity for in-depth reflection and critique on ‘real life’ scenarios. In so doing, this module adopts the University's curriculum framework, which aims to develop learners with strong Global and Cultural capabilities, Sustainability, Resourcefulness and Resilience while enhancing their Employability and Digital capabilities.

BUSINESS ANALYTICS IN SERVICES

Corporations, governments, entrepreneurs, and various organisations around the world are using data to extract patterns and generate insights to support strategic decision-making and create innovative solutions to business problems. This module will equip you with the fundamental concepts and tools needed to understand the emerging role of visual analytics in service organisations, will show you how to use a leading business intelligence platform -Tableau-, and will inform you how to best communicate your data with industry professionals for making better business decisions. Emphasis will be placed on applications, concepts, visualisation, interpretation, and communication of results, rather than theory and calculations.

BUSINESS PLAN

Students will have the opportunity to learn about the different approaches that aim to answer the question: how do I plan, assess and implement a new business venture? Business plans are essential not just for the successful implementation of start-up ventures, but also for continued business growth, including strategic competitiveness. A good business plan underpins business success on all levels and becomes a major guideline to sound management practices. All students will find much value in the business principles inherent to the planning process, which will lead to an enhanced commercial understanding. This module¿s content and outcomes build solidly upon undergraduate business-related courses from level 4, 5 and 6, as well as any accumulated business experience. It doesn't just reiterate much of the theory previously learnt, but also applies it in a create and innovate way to emphasise creative business development, profitability, growth, and sustainability. It holistically addresses preferred business outcomes and brings all its components together. This module is also designed to give students an entrepreneurial- and industry-focused alternative to the traditional academic dissertation (MANM387).

CONTEMPORARY ISSUES IN SUSTAINABILITY

Sustainability has become a major issue in contemporary service operations, including in the hospitality, tourism, transport, events, and related sectors. However, managers do not necessarily understand the specific aspects of sustainability which their business has an impact upon or is impacted by. Further, managers are not always familiar with the tools of sustainability assessment and have limited comprehension of how a robust sustainability audit can aid in reducing operational costs, improving corporate image, and increasing customer patronage. This module will introduce students into the array of sustainability-related issues that a business in hospitality, tourism, transport, or events may face and explain how these issues can be identified and assessed. The module will provide students with an opportunity to undertake a sustainability audit of a business and reflect upon the challenges of such audit¿s undertaking.

DESIGNING DIGITAL SERVICES

This module aims to provide you with a number of service design techniques and models by which current and cutting-edge digital technologies can be designed into existing and new service journeys, therefore delivering service innovation through design and technology to create business value. You will be exposed to research-informed, practice-relevant teaching and a series of innovative design workshops using emerging service science and service logic thinking to help develop innovative digital solutions or improve current ones to address current managerial and sustainability issues.

HOSPITALITY INFORMATION SYSTEMS

This module is designed to offer students a critical overview of current hospitality technology systems, their interfaces and integration into functional operations. It informs students about issues, benefits, and problems related to the use and management of information systems in the hospitality business. The module demonstrates how systems support information management, and how the technologies that facilitate the acquisition, storage, processing, analysis, and use of information are valuable business resources. It introduces contemporary and innovative information technologies that will revolutionise hospitality and create new business value.

Semester 1 & 2

Dissertation.

The dissertation is optional for all MSc programmes and is the final element of the programme, providing an opportunity for a sustained period of independent study and research. It allows students to concentrate on topics that are of particular interest to them and it draws upon a range of different aspects of the taught programme particularly the Research Methods module (MANM386). Students can build upon their knowledge and topics learnt from programme-specific modules studies in semester 1 to develop and define their research idea and questions. It also gives an opportunity for students to work independently with an individual supervisor. There are two forms of dissertations: An academic dissertation. This form of dissertation follows the standard academic pattern of identifying a topic arising from a gap in the literature and developing a methodology to explore this area in-depth. A business or applied dissertation. This form of dissertation starts with an emerging business problem, either provided by an industrial partner or with their co-operation in the process, and seeks to provide a research-based solution to or exploration of the problem. All forms of the dissertation seek to develop the same learning outcomes and follow the same assessment criteria. In some cases, taught modules, in addition to Research Methods, may be pre-requisites of taking a particular form of dissertation so that students are adequately prepared.

Traditional business courses in accounting, economics and law are complemented by hospitality marketing, meeting/event management, lodging management, hospitality facilities management, food and beverage management and international tourism. All of these courses help to give you a solid foundation required for any number of hospitality specialties.

Some of the many areas you can focus your career within hospitality management:

  • Cruise management
  • Event management
  • Hotel management
  • Resort management
  • Restaurant management
  • Tourism management

We stress experiential learning in our program. If you plan to successfully lead, manage or direct others in the industry you must have industry experience. Our goal is for each of our graduates to be qualified for an intro-level management job (or management training position) upon graduation. As former managers in the hospitality industry we realize that gaining industry experience is an important part of our degree requirement.

All undergraduates must complete two internships, accumulating more than 500 hours of work experience in two distinct areas of hospitality. These two experiences provide a great opportunity to explore different and unique facets of the industry, and to expand your knowledge and discover your ideal career path. Whether on campus or off campus, part time or full time, job or internship, you can choose the work experience that best suits your schedule and interests.

With this degree in hand, you'll have a wealth of career options both in South Dakota and throughout the United States and will be well-prepared for post-graduate studies if you choose to continue your education. Additionally, our faculty brings significant industry experience to the classroom, adding a unique dimension that you just won't find with a general business education.
