Ingredients
- 1/4 cup HP Sauce, or Worcestershire
- 4 cloves Garlic, minced
- 1 tsp Ground coriander
- 1 tsp Cumin
- 1 tsp Oregano
- 1/2 tsp Dried ancho, chipotle or regular chili powder
- 1/2 tsp Salt
- 2 lb Beef tri-tip roast
Instructions
- Combine HP Sauce, garlic, coriander, cumin, oregano, chili, salt, pepper, and 1 tbsp water. Pour half of the mixture into a large freezer bag, reserving the remainder for basting. Pierce beef all over with a fork and place into the bag with the marinade. Refrigerate for at least 1 hour, or up to 48 hours.
- Preheat grill to medium heat and grease.
- Place the roast on the hot grill, close the lid and cook, turning occasionally and basting with reserved sauce, for 15 to 20 minutes or until digital instant-read thermometer reads 140F.
- Move the roast to a cutting board, tent with foil and let stand about 10 minutes before carving thinly across the grain.
- Serve with corn salsa and extra HP Sauce for dipping.

How to Slice Tri Tip: The ONLY Correct Way to Carve Tri-Tip

So you have cooked a Trip Tip and now you are wondering how to slice this triangular piece of beef.
Carving a whole piece of meat is always a daunting task. It’s especially important to get it right with Tri Tip, as you can seriously mess the tenderness.
In this post, I’ll be sharing the correct way to slice a whole Tri Tip.

How to slice Tri Tip step by step
Slicing tri-tip isn’t difficult so long as you understand a few key details. Watch it done in my video below, or keep reading to get the step by step instructions.
1. Identify the direction of the grain
This is where things can go wrong for some people.
You need to think back to the start after you trimmed the silverskin and fat cap off the Tri Tip. Which way was the grain running? It started on the outer corner and spread out like a fan.
The grain starts on the outer point and fans out and the grain points towards the pointy end of the Tri Tip.
This end has the grain running all the way down into the tip.
2. Start at the pointy end and slice until you reach inner corner
Remember you need to cut across the grain to achieve a tender bite, cutting with the grain will result in a tough and chewy meal, similar to biting on a rubber band.
I personally prefer to keep the slices around ¼” thick, as it tends to give a more tender bite. Or you can slice it thicker at around ½” and sear both sides and then serve as individual steaks.
3. Slice the remaining part of the Tri Tip
Once you have sliced down to the outer corner, you need to turn the Tri Tip 45 degrees and begin slicing again as the grain changes direction at this point.
By slicing the Tri Tip like this, you will ensure the whole piece is sliced against the grain, you will know that every piece is as tender as the last.
Do you cut Tri Tip with or gainst the grain?
It sounds like an easy question, but if you know what a Tri Tip looks like, you also know that the answer may not be as easy.
The Tri Tip gets its name from its easily recognizable shape of being triangular with 3 distinct points.
This is where it gets tricky, the grain of the meat starts in one corner and fans out across the entire piece of meat. Unlike a full packer brisket , that has two muscles overlapped that the grains run in different directions. The Tri Tip is one singular piece of meat.
The answer is, we need to cut it against the grain.
How do you know which way the grain runs in meat?
The fibers or grain in meat can be more visible in higher-end beef . With the intramuscular fat running in between the fibers, it is quite easy to tell which way the grain is running.
In leaner meats , it is still visible but you just have to look a little closer.
Trip Tip is a unique cut, with the grain fanning out and spreading. This is where most get confused on the direction of the grain, especially when trying to slice it up after cooking it. But there is a trick to it which we will go over.
Why is my Tri Tip chewy?
The most likely reason is you cut it with the grain. The fibers cannot be pulled apart easily. Unlike when you cut across the grain, you can easily put a slice of meat apart.
But slicing meat the same way the grain is going, you are effectively making a rubber band, it will be chewy and tough. The funny thing is, the same cut of beef sliced against the grain will be a tender melt-in-your-mouth experience.
Should I cut the fat cap off Tri Tip?
The short answer is yes.
I know a lot of people feel you need to leave it on. Tri Tip cooks quickly and the fat cap has no time to render down.
The other reason to remove it is because it is hiding something, that is silverskin and you need that removed as that will give your Tri Tip a chewy texture once cooked and it will not matter which way you slice it.
How thick should I slice a Tri Tip?
I feel the best thickness is around ¼” thick. It allows for a good outer crust to soft tender meat ratio. By keeping the slices relatively thin, they seem to be more tender when chewing as well.
You can also slice it thicker, to around ½” thick but I only do this if I wish to serve the slices as individual steak. I will also give the sides a very quick 30 second sear on a cast iron pan or hot plate.

Carne Adobada Tri-Tip Tacos

The “Adobada” in the title of the recipe refers to the tangy chili marinade with deep, rich flavor. While adobada is typically made with cuts of pork, I use the tangy marinade for beef tri-tip in this recipe. I always love using Swift Meats’ wholesome ingredients.
This is a great recipe for summer entertaining that the whole family will love! The meat can be marinated ahead of time, grilled and cut up so that the tacos can be assembled and served or set out like a taco bar. - Chilies – I use a mix of guajillo, chiles de arbol and chipotles in adobo sauce in this marinade. The dried chilies are reconstituted in hot water and blended with canned chipotle chilies in adobo sauce, onion, garlic, lime juice and orange juice.
- Citrus – The freshly squeezed lime juice and orange juice added to the marinade help to tenderize the meat.
- Onion – While onion is used in the marinade, the beef tacos are also served finished with a simple spiced chopped onion mixture to add some fresh flavor. I love the contrast of the raw onions over the meat.
- Tri-tip – Not only is steak a great source of protein, but the lean meat lends itself well to grilling. Look for a tri-tip with good marbling and bright red color. When cutting the tri-tip, always cut against the grain.
The tri-tip comes from the portion of meat at the tip of the sirloin. There is only one per cow, making them highly sought after. The lean cut is rich in beef flavor and extremely tender. Because of its lean nature, it is best served grilled. Tri-tip is frequently found cooked in the Santa-Maria style of BBQ, also known as California BBQ. Simply seasoned meat is cooked over a red oak, open-fire grill with the meat being raised and lowered over the flame.
Since it’s a lean cut, tri-tip is best cooked using high heat, quick methods like grilling. I marinate the meat ahead of time, quickly grill it, then slice it and serve over tacos. The cooked tri-tip can also be sliced and served over rice and beans as a burrito and rice bowl .
Traditionally, both al pastor and adobada are made with pork, though I use tri-tip in this recipe. The marinade is similar, but the cooking style is where things really differ. With al pastor, marinated pork is loaded onto a spit (with pineapple) and slowly cooked over a flame. With adobada, it’s typically cooked quickly on a grill.
Ingredients:
For the adobada tri tip:.
- 6 guajillo chilies, stemmed and seeded
- 3 chiles de arbol, stemmed and seeded
- 1 chipotle chili in adobo, plus 1 tablespoon of the adobo sauce
- ½ medium yellow onion
- 5 cloves garlic, smashed
- ½ cup freshly squeezed orange juice
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon dried oregano
- Kosher salt, as needed
- 1 (2-pound) Swift Meats beef tri-tip
For serving:
- ½ medium yellow onion, finely diced
- ½ cup (packed) cilantro, chopped
- 1 medium serrano pepper, seeds removed and diced
- 1 tablespoon freshly squeezed lime juice
- 6" corn tortillas, warmed
- 1 medium Hass avocado, pitted, peeled and sliced
Instructions:
For the adobada tri-tip:.
- Add the guajillo chilies and chiles de arbol to a medium bowl and pour hot water over the top, letting it sit until the chilies soften, about 10 minutes.
- Add the softened chilies and ¾ cup of the soaking water to a blender with the chipotle and adobo sauce, onion, garlic, orange juice, lime juice and oregano. Blend until smooth, then season to taste with salt.
- Add the Swift Meats beef tri-tip to a large bowl or resealable container and pour the marinade over the top, turning to coat. Cover and refrigerate for at least an hour or up to overnight.
- When ready to grill, remove the meat from the marinade, wiping off any excess marinade. Heat the gas grill to medium-high.
- Add the tri-tip and sear for about 8 minutes. Turn the meat over and cook for an additional 8 minutes. Turn and cook once more for another 5 minutes. Repeat until a thermometer inserted into the thickest part of the meat reads 130ºF. A 2-pound tri-tip should take a total of about 25 minutes to cook.
- Remove the meat from the grill and let rest on a cutting board for 15 minutes.
- Thinly slice the meat and set aside on a serving platter.
- In a small bowl, stir to combine the onion, cilantro, serrano and lime juice. Season to taste with salt.
- To assemble the tacos, lay slices of the steak onto the tortillas and top with avocado and a spoonful of the onion mixture. Serve immediately.

O's game blog: The road trip begins at Fenway Park
In their search for more runs, which they obviously hope lead to more wins, the Orioles are in Boston tonight. They play a three-game series at Fenway Park to begin their penultimate road trip of the season.
They play there remembering that they swept a series at Boston in mid-April, scoring 23 runs on 31 hits. In that set, they were 15-for-37 (.405) with runners in scoring position.
But over their past four games, the Orioles scored one, two, one and zero runs. They lost 2-0 to the Rays on Sunday to lose that series and suffer their sixth shutout. The Orioles have 22 hits in the past four games, batting .179 with a .502 OPS as they went 1-for-20 with runners in scoring position.
At 82-62 (.569), the Orioles have the second-best record in the American League and fifth-best in the majors. They begin play tonight a half-game out of first place in the AL East with 18 games remaining in the regular season.
The Orioles ended the year going 9-4 versus the Rays and the are 29-17 in division games.
The Orioles did not lose a series in their first eight within the division this year, going 6-0-2 in those series and 19-7 in those games. In the last six division series, they are 2-3-1 and 10-10 over 20 games.
They are 7-3 against Boston, sweeping a three-game series, going 2-1 in the next series and 2-2 in the most recent one. The Orioles have outscored Boston 64-42 in the season series, batting .267 with a .789 OPS. Their team ERA is 3.96, allowing a .242 batting average and .691 OPS to Boston hitters.
The Red Sox (72-71) still have faint playoff hopes. They are four games out of the third and final AL Wild Card spot, but they are behind both the Tigers and Mariners in that chase, with those clubs 3 1/2 games out.
The Red Sox lost Sunday to the White Sox, but took two of three from Chicago in the series. Overall though, they have lost six of eight and 11 of their past 16 games. The Sox are 11-19 since Aug. 6.
Boston is 33-39 at home and 9-13 at Fenway Park since the All-Star break. They are 18-28 since the break and 2-5 in September. Boston is 18-18 in AL East play.
Like the O’s, Boston batters have struggled recently. The Sox have scored just 20 runs their past eight games and 63 in the last 20, going 7-13. In those 20 games, they are batting .221 with a .648 team OPS.
O's lefty Cade Povich (2-7, 5.76 ERA) takes the mound for the Orioles. On Aug. 17, he allowed two runs and six hits over 6 1/3 innings on 89 pitches versus Boston. In his last game on Tuesday, he pitched 7 1/3 scoreless with no walks and 10 strikeouts against the White Sox.
Povich has allowed five runs or more five times this year while giving up three runs or fewer seven times.
With his big game versus the White Sox, the only other Orioles rookie in club history with 10 strikeouts, zero walks and zero runs allowed was Kyle Bradish on Sept. 22, 2022.
Povich also became the third rookie lefty in club history with a scoreless start that included 10 strikeouts. Steve Barber did that on July 28, 1960 versus the Kansas City Athletics, pitching a one-hit shutout. And Billy O'Dell did that on June 9, 1957 at the Chicago White Sox.
Righty Brayan Bello (12-7, 4.75 ERA) will make his 27th start for Boston. For the year over 142 innings, he has a 1.380 WHIP, allowing 9.1 hits per nine with 3.4 walks and 8.6 strikeouts. Over his past three games, he has allowed five, zero and four runs.
In three starts this season against the Orioles, he is 2-1 with a 2.76 ERA and 1.102 WHIP. In five career starts, he is 3-2 with a 3.71 ERA and 1.200 WHIP.

The Fed may soon cut interest rates. That could make your next trip abroad more expensive.
The U.S. Federal Reserve may start cutting interest rates before year’s end. That could make future trips abroad more expensive for the nation’s travelers.
That’s due to how interest-rate policy affects the strength of the U.S. dollar.
Here’s the basic idea: An environment of rising U.S. interest rates relative to those in other nations is generally “dollar positive,” said Jonathan Petersen, senior markets economist and foreign exchange specialist at Capital Economics.
In other words, rising rates underpin a stronger U.S. dollar versus foreign currencies. Americans can buy more stuff with their money overseas.
The opposite dynamic — falling interest rates — tends to be “dollar negative,” Petersen said. A weaker dollar means Americans can buy less abroad.
Fed officials in June signaled they expect to cut rates once in 2024 and four additional times in 2025.
“Our expectation for now is the dollar will come under more pressure next year,” Petersen said.
However, that’s not necessarily a foregone conclusion. Some financial experts think the dollar’s strength may have staying power.
“There have been quite a few headlines calling for the U.S. dollar’s demise,” Richard Madigan, chief investment officer at J.P. Morgan Private Bank, wrote in a recent note. “I continue to believe the dollar remains the one-eyed man in the land of the blind.”
Why the U.S. dollar gives a ‘discount’ overseas
The Fed started raising interest rates aggressively in March 2022 to tame high pandemic-era inflation. By July 2023, the central bank had raised rates to their highest level in 23 years.
The dollar’s strength surged against that backdrop.
The Nominal Broad U.S. Dollar Index is higher than at any pre-pandemic point dating to at least 2006, when the central bank started tracking such data. The index gauges the dollar’s appreciation relative to currencies of the nation’s main trading partners such as the euro , the Canadian dollar and the Japanese yen .
For example, in July 2022, the U.S. dollar reached parity with the euro for the first time in 20 years, meaning they had a 1:1 exchange rate. (The euro has since rebounded a bit.)
In early July, the U.S. dollar hit its strongest level against the yen in 38 years.
A strong U.S. dollar gives “a discount on everything you’re purchasing while you’re abroad,” Petersen said.
“In a sense, it’s never been cheaper to go to Japan,” he added.
A record number of Americans visited Japan in April, according to the Asian nation’s tourism board. Benjamin Atwater, a communications specialist at InsideAsia Tours, a travel agency, attributes that partly to the financial incentive bestowed by a strong dollar.
In fact, he personally recently extended a work trip to Japan by a week and a half — instead of opting to travel elsewhere in Asia — largely because of the favorable exchange rate.
Everything from meals, hotels, souvenirs and the rental car were a “great value,” said Atwater, who lives in Denver and has long wanted to travel to Japan.
“It was always portrayed as one of the most expensive places you can go, [but] I was getting some of best steaks I’ve ever had for like $12,” he said.
How interest rates affect the U.S. dollar
In reality, the dynamics driving dollar fluctuations are more complex than whether the Fed raises or lowers interest rates.
The differential in U.S. rates versus other nations is what’s significant, economists said. Fed policy doesn’t exist in a vacuum: Other central banks are also simultaneously making interest-rate choices.
The European Central Bank cut interest rates in June, for example. Meanwhile, the Fed has kept rates higher for longer than many forecasters anticipated — meaning the rate differential between the U.S. and Europe has widened, helping support the dollar.
“The Fed’s on hold, other central banks are getting ready to ease and the Bank of Japan (BoJ) seems stuck in a moment,” J.P. Morgan’s Madigan wrote.
“If Japan wants the yen to stabilize, policy rates need to move higher,” he added. “That doesn’t appear to be happening anytime soon. With the ECB expected to cut ahead of the Fed, I expect current euro weakness to also prevail.”
This is happening against the backdrop of a relatively strong U.S. economy, which also generally supports a strong dollar, Petersen said. At a high level, a strong economy means there will generally be higher economic growth and/or inflation, which means a greater likelihood the Fed will keep interest rates relatively high, he said.
A strong economy also typically incentivizes foreigners to park more money in the U.S., he said.
For example, investors generally get a better return on cash when interest rates are high. If an investor in Europe or Asia were getting perhaps 1% or 2% on bank account holdings while such holdings in the U.S. were yielding 5% , that investor might shift some money to the U.S., Petersen said.
Or, an investor might want more to hold more of their portfolio in U.S. rather than European stocks if the economic growth outlook wasn’t good in Europe, he said.
In such cases, foreigners buy dollar-denominated financial assets. They’d sell their local currency and buy the dollar, a process that ultimately bids up the dollar’s strength, Petersen said.
Exchange rates “all come down to capital flows,” he said.
While these dynamics also hold true in emerging markets, currency fluctuations can be more volatile than in developed nations due to factors like political shocks and risks to commodity prices like those of oil, he added.
