There are many flights to Manila International Airport which situated in the capital of the Philippines. Despite being a huge and diverse city, travelling around Manila is easy with its tram, metro, bus and taxi services. Holiday in the Philippines 2024/2025

For a country boasting upwards of 7,000 idyllic islands – the world’s second-largest archipelago – the Philippines barely registers as a place for a luxury holiday. We’re not really sure why, because it’s a stunning array of islands surrounded by world-class diving and landscapes.

After being governed by the Spanish for 350 years and the Americans for nearly 50, the Philippines’ culture is starkly different to its Southeast Asian neighbours. Traces of their rule remain with English spoken widely, Catholic churches pepper its landscapes instead of temples and simple flavours are served rather than spicy curries.

But it’s the scenery in the Philippines that’s the real star. While most waters around the country are excellent for diving, Bohol’s coastline is a magical marine world like no other, with strings of rainbow-coloured reefs. Its interior is blanketed in jungle-clad mountains, with the iconic Chocolate Hills serving up sweet views.

Elsewhere, the tiny lively island of Borocay boasts beaches so white they look like they’ve been lifted from a Bounty advert. But if there’s somewhere you simply can’t miss on a holiday in the Philippines, it’s the azure lagoons and jaw-dropping limestone karsts of Palawan and specifically El Nido – islands consistently lauded as some of the best in the world. But make sure you hop around a selection of its enchanting islands – you won’t be disappointed.

The islands of Bohol and Panglao dovetail perfectly, combining natural splendour, relaxation and buzzing local life. Base yourself in Panglao, its strips of powder-soft sand fabulous for sun-seekers and its beaches studded with a great selection of bars and restaurants serving authentic food and drink.

A hop over to Bohol is a must, for it’s the land of adventure, where forested peaks, rice fields and sleepy villages cover its interior. Sitting right at its heart are the otherworldly Chocolate Hills, a mysterious collection of mounds that are lush green in the summer and brown in the dry season – hence the name! You might spot the miniature bug-eyed Philippine tarsier clinging on to trees, the wildlife jewel of the island, while out and about either exploring on foot or kayaking along the jungle-fringed rivers.

With a 4km stretch of sand called White Beach, the island of Boracay doesn’t disguise its beauty in exotic names. White by name and beautifully white by nature, the sand on Boracay is so soft it squeaks between your toes – the perfect spot for daytime lounges and relaxing evening strolls. The turquoise sea that laps it promises pristine snorkelling and diving, while blue-sailed boats bob on the surface. The nightlife here is the heartbeat of the island, one which is charming rather than tacky, while boutique shops and cafés tease you down snug alleyways for a taste of local life.

You can’t take a trip to the Philippines and not visit Palawan , for its islands of Coron and El Nido form a mesmerising chain of limestone karsts so sublime our own travel fantasies would struggle to conjure up something so staggering. This landscape rivals anything found in Halong Bay, just here you’ll likely only be joined by far fewer tourists. Every angle you see from is impressive – on the beach, aboard a boat or below the waves, its vivid coral gardens and marine life a haven for snorkellers and divers. It’s no surprise that the islands, which form part of the Bacuit Archipelago, are often voted as some of the world’s finest.

Located on the south-eastern corner of the island of Negros, Negros Oriental is a paradise for divers. Renowned Apo Island lies a short boat ride away, where coral-encrusted walls, a house reef and astounding ocean life combine for an impressive display of the natural world. Negros Oriental has lots for non-divers as well, with lakes, rugged peaks and delightful towns making a wander of the island’s interior worthwhile.

If the rest of the Philippines is rarely a feature of many people’s holiday plans to Southeast Asia, then Siargao falls right off the map. A tiny teardrop-shaped isle, Siargao is a completely remote escape where you’re enveloped by nature and the gorgeous beaches are all yours. Surfing is a big part of the island’s culture but beyond it lies a mix of secluded pools, caves and coral reefs. For a luxury base from which to explore, Nay Palad Hideaway is an intimate retreat that feels more like a family home, with every detail from the food to the activities you try tailored to your liking.

Where to stay in the Philippines

A collection of dreamy azure lagoons, limestone karsts and emerald-wrapped islands, the Philippines screams exoticism. The country's array of luxury beachfront resorts give you a front row seat (and bed) to these gorgeous landscapes, so you can relax amid the paradise scenes on the likes of Boracay, Palawan or Bohol.

The best time to visit the Philippines

With over 7,000 islands scattered across approximately 115,000 square miles, it’s inevitable the weather slightly varies depending on which island group you’re visiting.

Generally, though, the best time to visit the Philippines is during its dry season from November to April. December to February sees the country at its coolest, with temperatures not deviating too far from 26°C. Plan a holiday early in the dry season (November and December) and you’ll see its islands at their most lush, including the Chocolate Hills. Visit in April and the famous hills will live more up to their name, turning a chocolate brown.

May can be a great little window in which to travel to the Philippines. While temperatures creep up to around 32°C, the rains are yet to get started and the crowds have already thinned out in anticipation of the wet season.

June to November marks the wet season where humidity is higher. While many get scared off by the term ‘monsoon’, many days are packed with sunshine hours and the rains (up until July, usually) only consist of short, intense downpours once dusk falls. This is especially the case of central islands such as Bohol and Cebu, and Palawan in the west.

Once August hits, the threat of tropical storms and typhoons increases but the central and western islands (Bohol, Cebu, Palawan) are least affected, protected by the country’s eastern chain. However, August and September is great for surfers heading for Siargao, where they’ll be greeted by monster waves. Surf’s up!

Philippines travel essentials

Hepatitis A, Typhoid, Polio and Tetanus-Diphtheria vaccinations are currently recommended and the Philippines is deemed to have a risk of Malaria and the Zika virus. If you’re entering the Philippines from a Yellow Fever zone, possession of a valid Yellow Fever inoculation certificate is required. For any current travel health advice, you should seek guidance from your GP at least four to six weeks prior to travel.

The time difference is GMT +8 hours.

The flight time from London to Manila is around 13 hours.

The currency is the Philippine peso.

British passport holders don’t need a visa to visit the Philippines.

Useful information for planning your holiday in the Philippines

The two main languages spoken in the Philippines are Tagalog, which is most common in the north, and Cebuano, which is spoken in the south. More than 100 other languages and dialects are also spoken in the Philippines, including Spanish, which is used across the country. Most Filipinos are bilingual, speaking at least Tagalog/Cebuano and another language most likely to be English.

The currency of the Philippines is the Philippine piso (PHP), although it’s often called the peso in English. The US dollar is also a widely accepted currency. Credit cards are widely accepted in major cities and popular tourist destinations, and you’ll find ATMs in all cities and many smaller towns.

You should try adobo, made from chicken or pork simmered in soy and vinegar with garlic and black pepper, lechon de leche (roasted suckling pig) and crispy pata (deep fried pig’s knuckles or trotters). Pusit (dried squid) and dried fish are eaten as a snack, often dipped in vinegar or a ubiquitous coconut, soy, vinegar, and fish sauce.

Desserts include the bright purple puto bumbong rice cake, bibingka, a coconut and egg cake cooked in a clay pot, and halo halo, a type of ice-cream sundae. Fresh coconut juice is widely sold, and local craft beer is growing in popularity. Tanduay (local rum) and tapuy (sweet rice wine) are worth trying, as is lambanog, a potent coconut liqueur.

Light, casual clothes are recommended in the Philippines, although you’ll need something warmer if you’re travelling into the mountains. You should also dress modestly and cover your knees and shoulders when visiting churches and temples out of respect.

A tip of 10% is expected in restaurants in the Philippines, but if a service charge is already included an additional 5% is appropriate. If you get a taxi with a working meter, round up the amount, and although guides and drivers will appreciate a tip, this is at your discretion.

In the Philippines, you can visit rumbling volcanoes, pristine beaches, and lush rice terraces, explore vibrant cities, or have a backcountry adventure. You could explore the capital’s storied past on a guided walk though the historic Intramuros district in Manila , see active volcanoes and emerald crater lakes, visit a local family to learn how to cook, or gaze out at the amphitheatre-like rice terraces on a trek to Batad .

The Philippines has many facets and whether you want to see dolphins and whales, visit a traditional village to learn about the Ifugao culture , or enjoy an island-hopping adventure around Boracay , you’ll find plenty to do when you’re looking for something more active than a day on a white-sand beach.

From private island escapes to simple beach-side bungalows, the Philippines offers a good range of places to stay in almost all locations. You could choose to stay in a large-scale modern hotel in Manila or opt for something more intimate such as a restored urban villa decked out in contemporary style. On the coast, you’ll have a choice of thatched cabanas at a dedicated dive resort, overwater cottages in secluded coves, or an escape to an exclusive resort on a private island with idyllic views. In some areas, such as northern Luzon, options may be more limited, but our country specialists have sought out the best country inns to get you close to the most significant sights in the area.

If you’re arriving in the Philippines from a country that is considered to have a risk of yellow fever by the World Health Organization (WHO), then you may be asked to provide proof of vaccination against the disease upon arrival. Speak to your doctor for up-to-date advice.

Check that your passport will be valid for at least six months from your arrival date in the Philippines and ensure you have at least one page free from stamps.

Tipping : Isn’t traditionally expected but is becoming more common due to western influences. Upscale restaurants and hotels will likely include a service fee in your bill but feel free to tip an extra 20-50 PHP directly to waiters, maids and bellhops. Leave a 10 percent tip for a great tour guide or masseuse and if you’re travelling by taxi, jeepney or trike, it’s considered polite to round up the fare.

Etiquette: Smile! You’re in the Philippines where a friendly, positive attitude conquers all. With that in mind, losing your temper is frowned upon and causes a deep sense of hiya – shame. Be prepared to answer lots of questions from curious locals and avoid using blasphemous language in this devoutly religious country. It’s also important to show respect for elders, dress modestly and remove your shoes before entering someone’s home. If you’re dining with locals, dishes are often served in communal bowls – be sure not to take the last serving. Ask permission before taking photos of people and do not take photos of government buildings, military personnel or any political demonstrations.

Religions : In contrast to much of Asia, Christianity is the dominant religion in the Philippines due to decades of Spanish rule. Around 90 percent of the population identify as Christian, most prominently Roman Catholic, and you’ll find stone colonial-style churches dotted across the country. Filipinos tend to be deeply spiritual, particularly the older generation, and religious fiestas are a cultural highlight throughout the year. Minority religions include Islam, Buddhism and Animism.

Expect a year-round tropical climate with occasional downpours in the Philippines. You can enjoy some relief from steamy temperatures though in the cooler, pine-scented Luzon highlands. The dry season is the best time to visit, which broadly falls between November and May, although this can vary due to climate patterns like La Niña and El Niño. While the wet season stretches from June to October, the most tumultuous months in the Philippines are August and October, when typhoons and tropical storms rage. It’s best to avoid travelling then as ferries and flights may be cancelled and roads can become impassable due to the rains.

Traversing the Philippines, which is home to over 7,500 islands, can feel like an overwhelming task. Buses are a painfully slow way to travel and are often accompanied by non-stop power ballads or movies played at full blast. However, budget carriers like Philippine Airlines and Air Asia have now made short trips to hotspots like Cebu and Davao a cinch. In fact, the airline industry has largely overtaken the country’s slower and more perilous boat network. Ferries are still useful for island hopping though and companies like Supercat and Cebu Ferries offer a surprisingly swish experience, complete with jazzy safety videos.

There’s one form of transport you just can’t ignore in the Philippines: the jeepney. These open-backed trucks were originally left behind by departing US forces. Now mass produced, the colourful vehicles are a part of daily life and come decorated with fairy lights, bible quotes and pop lyrics. Look for routes painted onto the side of the van and expect a squeeze; locals will pile in, hang off the back and even ride on the roof, occasionally accompanied by roosters. Trikes (motorbikes with a side car) are a less cramped option and ideal for short trips. In Manila, GrabCar and Uber are just catching on.

Don’t expect to find Asia’s fiery curries and heavily-seasoned soups in the Philippines. The local cuisine is far humbler, based around heaps of rice and grilled or barbeque meat. Saying that, more adventurous eateries are on the rise in large cities, where chefs are adding a modern twist to traditional meals. Then there’s the ubiquitous fast-food chains on every corner, from McDonalds to Filipino staples like Jollibee. Try the national dish, Adobo, which consists of  pork or chicken marinated in a rich soy-based sauce. Expect few vegetables, you’ll be lucky to get a side of sweet potato leaves or pak choy, but local markets are laden with tropical fruit.

Along the coast there’s fresh seafood on offer, including the Filipino version of ceviche, Kinilaw. When it comes to drinks, San Miguel reigns supreme but if you’re brave enough, the local rum and spirits certainly pack a punch. You’ll soon discover that the Philippines has a real sweet tooth, evidenced by its sugary white bread, three-in-one Nescafe sachets and wacky ice cream flavours like corn and purple yam. Don’t miss Halo-Halo, a bowl of ice cream drenched in evaporated milk and topped with everything from syrup to beans, fruit and cornflakes. By contrast, you might want to avoid the infamous Balut, an unappetising duck embryo.

Many aspects of American culture have been incorporated into Filipino life and nowhere is this more apparent than the country’s glitzy megamalls. These glassy havens of air conditioning, designer stores and international brands have a presence in almost every urban hub. Prices might be slightly cheaper than western equivalents, but the shopping experience is largely the same. If you’re after something more adventurous, seek out local open-air markets like Divisoria in Manila, a flea-style mecca showcasing everything from homeware to trinkets and clothing.

Shopping for souvenirs? Then you’ll find a range of indigenous art and religious artefacts straight from local villages. A trip to the Cordillera region will leave you wanting to pick up a carved wooden idol, the likes of which guard the rice terraces. If textiles are your thing, shop for a malong from Mindanao, a versatile wrap-around that’s covered with intricate needlework. Pair this with a coconut-shell necklace or bag yourself some shiny pearls, sourced from the seas around Palawan and Mindanao.

You’ll be hard-pushed not to encounter a festival when you visit the Philippines, given that the calendar is bursting with them, particularly between January and May. This is down to the country’s strong religious roots, with many holidays closely linked to the Roman Catholic calendar. While each town, city and neighbourhood pays tribute to its own patron saint with an annual fiesta, Easter Holy Week is closely observed across the country with church services and street processions.

National celebrations also preside for the Flores de Mayo in May, where parades and parties are held in honour of the Virgin Mary. If you’re visiting in January, head to Kalibo to experience the vibrant Ati-Atihan festival held for Santa Niño, which is renowned for its extravagant float parades and street dancing. Due to its cool mountain climes, Baguio City puts on a stunning flower festival in February and eye-catching events like the Giant Lantern Festival in San Fernando and Clark’s International Hot Air Balloon Fiesta are also worth making a detour for.

History of the Philippines

The history of this paradise archipelago is largely characterised by its 300-year rule by Spain . Before Europeans arrived on the islands, the Philippines had strong trade and cultural links with Chinese, Indian, Arabic and Malay nations. Hispanic colonisation began in 1521 when Portuguese explorer Ferdinand Magellan arrived, leading a fleet for the Spanish . 

Just over 20 years later the islands were named after King Philip II of Spain and settlements began to take root across the archipelago, particularly in Cebu and Luzon , where the city of Intramuros, in modern-day Manila , was built. You can still explore the historic walls and buildings of Intramuros during a Philippines tour package today, home to Spanish -era landmarks such as Manila Cathedral and Fort Santiago. Following the conquistadors, missionaries converted the Filipinos to Catholicism , which still remains a strong element of the national culture. Much of the upper-classes prospered under Spanish rule, whilst on the other hand, the majority of workers were subject to poor conditions on vast Spanish -owned agricultural estates. Nationalist feelings gained momentum from mid-19th-century onwards, culminating in failed revolutions and the bloody Philippine-American War. The USA claimed the Philippines from Spain and attempted to ‘ Americanize’ the population, although the unrest of two World Wars made this a turbulent period in the country’s history. In 1946, the Philippines gained independence and today continues to look towards a bright future.

The 5th-largest island country in the world, the Philippines has a rich natural ecosystem, ranging from thick rainforested highlands and towering volcanoes to El Nido’s pristine beaches, flanked by prehistoric rock formations. Award-winning dive sites, such as the Tubbataha Reefs, situated off the southeastern coast of Palawan and home to half of the world coral species, attract avid divers and marine enthusiasts to explore its underwater world. Kumusta! Welcome to the Philippines. Located on the island of Luzon – the largest of the county’s 7641 islands – Manila is the Philippines' lively capital. Your adventure officially starts with a welcome meeting at 6 pm, where you’ll meet your local leader and fellow travellers. If you arrive before then, take some time to explore the city and get your bearings. A walk around Rizal Park, conveniently located in the city's centre, is a great place to start. In the evening, maybe get your group together for dinner and sample some regional specialities, like abodo (pork marinated in vegetables and spices) and buko pie (coconut pie).

After breakfast, dive into a guided tour of multicultural Manila. Taste the different flavours that have been cooking up in the country over the past few hundred years with food tastings in the Muslim Quarter and the world’s oldest Chinatown. While you’re in Chinatown, sit down with your group for lunch in a restaurant that was once a fire station. When you’re full, hop on an eco-friendly bamboo bike and ride around Intramuros – a historic walled area that was constructed by the Spaniards in the 16th century. Enjoy a free evening, where you can relax and unwind before your early start tomorrow.

You’ll set off for Crow Valley at 4 am this morning so you can get an early morning view of the crater of Mt Pinatubo. You’ll arrive at the foot of the trailhead by a 4WD jeep. The hike isn’t easy – but the views of the crater lake at the top are definitely worth it. Formed after Mt Pinatubo erupted in 1991, the rainwater lake is framed by dramatic cliffs. Reward your body with a traditional lunch in Tarukan Village with the Aetas, the earliest inhabitants of the Philippines. The chieftain and a local interpreter will join you, making it a unique cultural experience. Do as the Aetas do and eat the meal – which will be laid out on banana leaves – with your hands. When you’re finished, head to Abe’s Farm – a countryside guesthouse with a pool.

From March to May, there may be some erosion of the path due to rainfall which will make the drive longer and the trek shorter. Please note that there are several stream crossings in ankle-deep water on this trek, so please be prepared for your footwear to get wet.

Wake up early and head for Banaue, travelling through rice fields and mango plantations. Break up the drive with a stop in Bacolor – this town was devastatingly destroyed by the Mt Pinatubo eruption. Visit the local church that has been half buried by lahar – yet locals still use it to worship by climbing through the upper windows. Hit the road again before stopping off for lunch at a local restaurant. You’ll arrive in Banaue in the late afternoon, where you can enjoy a free evening before exploring the rice terraces tomorrow. For dinner, maybe ask your leader for recommendations on where to try pinikipan (a local chicken dish).

Jump on the local jeepney this morning to Sadel, where you’ll start the trek through the UNESCO listed Banaue rice terraces. These rice terraces were created by the Ifugao people and can be traced back 2000 years. A feat of engineering, the terraces were crucial to the survival of the people and are now known for their combination of functionality and beauty. Stop for lunch in Batad, where you’ll have the opportunity to talk to local Ifuago people in the village and try some rice activities. Return to Banaue in the late afternoon and spend the rest of the day as you wish.

Another day, another trek through rice terraces – this time you’ll start in Bontoc and hike along the Maligcong Rice Terrace to Faverey village. Listen to stories from a Kalinga local guide along the way and find out about their traditions. When you arrive in Faverey, you’ll learn about one pretty unique tradition in the village – the practice of living with deceased family members. Hike back to Bontoc and refuel with lunch before continuing to Sagada in a comfy private vehicle.

Get to know Sagada on a half day tour around the town. Your local guide will bring you to some of the key spots, like the Hanging Coffins – an ancient burial tradition where coffins are suspended on a cliff – and the Lumiang Cave – home to coffins over 500 years old. Next, head to the home of famous Spanish photographer Eduardo Masferre, where family members will show you his rare photos chronicling the Ifuago way of life in the 1930s. The afternoon is then yours to explore Sagada in your own way – maybe you’ll check out the coffee plantations (and sample the delicious Sagada coffee) or explore local farms.

Wake up bright and early this morning at around 5 am for breakfast at the Kiltepan viewpoint, where you’ll catch the Sagada sunrise. Then, drive to Baguio, affectionately called the City of Pines due to the greenery that thrives here. When you arrive, you’ll have a free afternoon. Maybe walk around Mirador Hill and Eco Park – a Japanese-inspired garden – or the Igorot Stone Kingdom – a modern-day castle. Later, come back together as a group for an interactive dinner with a famous local chef. Get hands-on by selecting the ingredients for your traditional Cordillera meal at the market, then join the chef and his wife for a live cooking demonstration. When you’ve picked up some tips, tuck into the grilled goods you helped prepare!

Get to know Baguio culture today by visiting the local art studios and galleries, which showcase a mix of traditional and contemporary pieces. These mountain-based women are working to scale their businesses and need this vital support. You’ll be guided through the studio, where you can meet local artists and learn about their craft, and maybe even try some traditional techniques yourself! Head back to Manila in the afternoon and perhaps rally your group together for a farewell dinner.

Today is a free day in Manila. You’ll have another welcome meeting at 6 pm tonight to meet your new group members and leader. Until then, relax in Manila and maybe explore some of the parts you missed the first time around. If you're looking for a souvenir, head to Bonifacio High Street, where you'll find lots of modern shops, or explore the Quiapo street market for more traditional finds. After your meeting, perhaps get your group together to sample foods like lechon (whole roasted pig) and longganisa (Philippine sausage).

This is a combination trip, meaning your local leader and group members will likely change today.

In the morning, take the short flight from Manila to Puerto Princesa. When you arrive, you'll instantly see the slower pace of this island compared to the busy capital. Puerto, as the locals call it, is the capital of Palawan and has been internationally recognised as the cleanest and greenest of all cities in the Philippines. Head onto a local community eco farm where you'll get to learn how local snacks are prepared with herbs and spices, and enjoy a delicious farm-to-table lunch. Later, travel out of Puerto Princesa to the Iwahig River, where you'll see fireflies glowing among the mangroves by the river. It's a truly magical experience and the perfect way to spend an evening.

Head out this morning in a private minivan and drive to Sabang. Sabang is most famous for its Subterranean River that's 8 km in length and passes through a limestone cave that opens onto the ocean. Jump into a boat with a local guide and explore this great cave complex. After lunch, you may want to embark on an optional mangrove boat trip which gets you into the heart of the thick mangrove forests. You'll travel in small traditional boats down the river with plenty of opportunity for wildlife spotting. Tonight, drive to your private beach for the next two nights.

San Rafael Beach has basic beach cottages with private en-suite facilities.

This morning you meet up with your local guide who'll be walking with the group to meet the Batak Tribe – one of about 70 indigenous communities of the Philippines. If you're lucky enough to be there in the right season, you may be able to eat the fruit directly from the cashew trees. After finishing the hike, drive back to the beach chalets in San Rafael Beach. There's plenty of free time for a swim or to read a good book and relax into the evening.

The hiking route is generally quite flat, with only small rises along the way, but the path can be quite rocky, so shoes with a good grip are recommended. There are quite a few river crossings, so packing some sandals with a back strap and decent grip would be ideal if you don't want to get your shoes wet.

Say farewell to San Rafael Beach today and travel to El Nido in a private minivan. With a backdrop of marble cliffs and white sandy beaches, El Nido is the base for many island adventures. There are over 50 beaches to discover that are all accessible by the boats docked. It's easy to pick an isolated beach, book a local boat, pack some food and drinks and head out on your own adventure. The afternoon is free for you to wander around town, have a drink at one of the many beachside restaurants, do a spot of shopping or count how many different coloured tricycles you can spot on the streets.

This morning, head off on a full-day snorkelling trip, island hopping off El Nido. Pass by jagged limestone islands, rocky coves, virgin rainforest and white sandy beaches. The snorkelling is just as spectacular, with beautiful coral and many different species of colourful fish. After an included lunch, venture out on various trips to lagoons throughout the afternoon. Your evening is then free to do as you wish.

You'll have plenty of free time today in El Nido for beach activities. If you feel like some more adventure, maybe hire a kayak from El Nido town or jump on a boat out to one of the lagoons. You'll kayak on turquoise waters and lagoons with dramatic cliffs, surrounded by a plethora of tropical fish. If you want to see a picture-perfect beach, take an optional trip to Nacpan Beach. White sand and lined with palm trees, this is another beach in paradise and worth the drive out of town. Your leader can help you organise transport here if you are interested. Otherwise, hire a bike and get pedalling around El Nido town.

The great thing about the Philippines is it’s usually quite hot and dry whilst we are operating, so it’s great to go at any time between October to June. Please keep in mind that we don’t operate our tours during the main wet season (July, August, September). And in Asia, if it does rain it’s normally just for an hour or two and then it will stop.

Popular dishes include lechon – a whole roasted pig, and adobo – meat or seafood cooked in vinegar, salt, garlic, pepper, soy sauce and spices, while pancit is the local version of Pad Thai. At dampas market stalls, you can choose fresh seafood then take it to be cooked at a nearby restaurant.

The Philippines’ southeast Asian culture is mixed with a Western influence – a result of having both a Spanish and US colony. The Catholic religion comes from the Spanish, and the widely spoken English from America. Centuries-old baroque churches can be explored on a Southern Cebu trail while you’ll see fantastically decorated jeepneys transporting people in the cities. Two major festivals take place in January: Sinulog is a raucous religious celebration found particularly in Cebu City, while Ati-Atihan takes place in Kalibo, with street dancing and wild costumes.

Though inhabited for some 250,000 years previously, the islands of the Philippines became a coherent nation with a name under Spanish rule in the 16th century. A 19th century revolution failed and after the Spanish-America war, the US took over. The Philippine-American War between 1899 and 1902 gained the Philippines greater autonomy, though it was not until after World War II that it gained independence. The country suffered martial law and corruption under Ferdinand Marcos in the 70s whose wife Imelda had the infamous shoe collection. The nation has been recovering from Super Typhoon Haiyan, which killed 5,500 in 2013.

This is one of the world’s most biologically diverse countries, claiming over 100 mammal and 170 bird species that are found nowhere else on the planet - and more are still being discovered. Among unique species are the monkey-eating eagle, a saltwater crocodile that is considered the world’s largest reptile and the Tarsier, a tiny boggle-eyed primate found on Bohol. The islands are much loved by divers and a top spot for seeing migrating whale sharks – the largest fish in the world – and wrecks of World War II navy vessels (particularly around Coron) home to a myriad of fish.

Bohol and the Chocolate Hills

This island province of Bohol, which can be reached by plane or a ferry from Cebu, claims two of the Philippines’ top attractions - the Chocolate Hills and the Tarsier monkey. The strange but scenic Chocolate Hills, of which there are well over a thousand, are remains of a coral reef that dates back to the ice age. These limestone mounds turn from green to brown as they dry out in summer. The tarsier, a pocket-sized primate with huge eyes that is found only in the Philippines, can be seen in sanctuaries on Bohol.

Boracay is the Philippines’ answer to Ibiza, a party island about an hour’s flight and quick boat transfer from Manila. It’s a bustling resort with white sand beaches and good nightlife and like many places in the Philippines also good for snorkelling and diving, with easily accessible reef. Pick an offshore island if you want to chill out in simpler surrounds though.

Glorious Palawan, the Philippines’ western-most island group, boasts mountains and rainforest. Coron, El Nido and Puerto Princesa are the main hubs but there’s still relatively low tourism development. The Unesco-listed Puerto Princesa Subterranean River flows through a series of dark caves you can explore by boat. Bacuit Archipelago off El Nido meanwhile boasts stunning natural limestone karst systems that rival Vietnam’s more famous Halong Bay. You can also experience world-class wreck diving around the Calamian islands of Coron Bay.

Cebu is the mostly densely populated island in the Philippines. Cebu City (the county’s second largest) is a hub for ferries to other islands and a big resort area in its own right with a Chinese and Spanish influence in its landmarks. The island also has great white sand beaches but its best known as a dive centre. The famous Sinulog festival is celebrated with street parties in Cebu City on the third Sunday in January.

This region in the northern part of the Philippines archipelago is home to frenetic capital Manila, particularly known for its colourful decorated jeepney buses. Southern Luzon is a mountainous region with the county’s largest lake and the spectacular Tagaytay volcano-within-a-volcano, which can be seen on a day trip from Manila.
