Make sure you preheat the grill for at least 30 minutes to heat soak it and get best results.

• ▢ 1 Ninja Woodfire Pro Connect XL
• ▢ 1 Ninja Woodfire Pro Connect XL Griddle Plate
• ▢ 1 Bag of Pellets
• ▢ 1 Pizza Peel

Ingredients

• ▢ 1 Ball Pizza Dough
• ▢ 1 Cup Pizza Sauce
• ▢ 1 Cup Shredded Fresh Mozzerella Cheese
• ▢ 2 tablespoon Parmagiano Regianno Grated Cheese
• ▢ 1 TBSP Olive Oil

Instructions

• Load the Ninja with your favorite pellets.
• Set the Ninja to Aircrisp 450F or 232C and make sure you turn on the woodfire button.
• Let the Ninja heat-soak for at least 30 minutes.
• Right before you make your pizza set the Ninja to the Grill High setting.
• Make your pizza and brush the crust with olive oil.
• Switch the Ninja back to the air crisp setting, and make sure the woodfire button is on. You can skip the preheat settings by holding the start button down for 3 seconds.
• Put your pizza on the flat top and cook for 3-8 minutes. Check it at 2.5 minutes and 5 minutes. You are looking for melted bubbly cheese and no burning on the crust.

Making a Perfect Pizza – Step by Step

Making a perfect pizza is really easy…you can do it at home and have better results than most bought pizzas! Here’s how you can make one at home! 🙂

Ingredients for Dough

• 2 1/2 cups all-purpose flour
• 1 1/2 tsp. salt
• 5 tbsp. oil
• 1 1/2 tsp. sugar
• 1 1/2 tsp. instant yeast (use 2 tsp. for colder climates)
• 2 pinches of baking powder
• warm milk mixed with a bit of water for kneading

Instructions

STEP 1:   Prepare the pizza sauce

You can buy this ready-made, but I always prefer knowing what goes into my pizza sauce. Here is my recipe for a simple pizza sauce. Do not go overboard with the spices, you want this simple and naturally flavorful.

Blend 2-3 tomatoes, 1 capsicum, 1 green chilli, small onion and a grated carrot together until smooth. Heat a bit of oil in a pan, like a tbsp. or even less. Then add a bit of garlic paste, followed by 1 tbsp. tomato paste. Once that’s cooked for a couple mins, add the blended mixture and simmer. Add salt and a tsp. of sugar followed by a bit of tandoori masala or cumin powder or oregano or you can just leave it plain and unspiced according to your taste. Let it simmer until thick and all the water is gone. Then use accordingly! 🙂

 Leftover sauce can work perfectly in burgers or sandwiches or even as a base-sauce for pasta

STEP 2:   Get all your toppings ready. I’ve used shredded leftover tandoori baked chicken (recipe HERE )   I’ve also used chunks of pineapple, some sweet corn, red & green capsicum/bell pepper and some sliced red onions.

You can use any topping of your choice. You can make it a meat pizza, veggie, combo…whatever you like. Just make sure your toppings are not soggy otherwise your pizza will be a sloppy mess.

STEP 3:   Now prepare the dough. This pizza was a 12 inch one, and it is enough for 3 very hungry people or 4 if you have any sides like garlic bread, fries, salad…etc.

Mix all the dry ingredients and the oil, then slowly start adding the warm milk a little at a time. Get it to a soft dough, the softer the better, knead it very well for at least 8 minutes or more if possible.

Dab a touch of oil all over the dough, then cover it and place it somewhere warm. Leave it to rise to double its size, takes about 30 mins to an hour depending on the weather.

Once risen, punch it down, give it a quick knead and then roll it out to about 12 inches diameter and place on your greased pizza pan/tray. Again cover the tray with a light cloth/towel and let the base rest/rise slightly for about 15-20 mins

STEP 4:   When you check on it after 20 mins, it will have slightly puffed up. Take a sharp knife and make tiny slits all over the base. This helps the pizza rise evenly during baking once the toppings are on it. Missing this step can leave your pizza bubbly in some parts and flat in others, not a pretty sight! 🙂

STEP 5:   Once you’ve made the slits, apply a coating of your pizza sauce as evenly as you can.

STEP 6:   Now grate some cheese, mozzarella preferably, and sprinkle a light layer all over. This helps ‘grip’ the toppings to the base later on.

STEP 7:   Now add your toppings one at a time

Make sure you don’t over-pile your pizza. Be generous but not overly so. Remember, the base has not been baked beforehand. Too much weight could restrict the base from rising well during baking. 🙂

STEP 8:   I like to drizzle some ketchup over the cheese. It gives the pizza a magnificent color once baked. If you like, you can sprinkle some oregano on the pizza or chili powder if you like it extra spicy.

Once done, bake the pizza in a pre-heated oven at 180C for about 20-25mins. Keep an eye on it and adjust the baking time according to your oven. It could take more or less time.

FINAL RESULT! And you have your perfect home-made pizza, just like that! When you get the pizza out of the oven, give it some time to rest (about 5-10 mins) so that the cheese can settle and cool very slightly. Slice it up into 8 slices and serve with fries or a salad and garlic bread. Don’t forget a cold drink!

Yes you can. I have a niece Yes you can. I have a niece who cannot take cheese, so I just beat an egg or two with a bit of salt and pepper and drizzle it over her pizza. It helps hold everything together, just like the cheese does. 🙂

Can I half bake the crust before adding the toppings? Coz whenever i make pizza, the middle part doesn’t get cooked and thus the edges becomes over baked…. Can you figure out why?

12 Best Tips for Homemade Pizza

As a kid, my mom would prepare homemade pizza for us as a treat. Unfortunately, I didn’t really like it back then because my mom would use toppings that I detested at the time, such as peppers and mushrooms. I would have been much happier with a frozen pizza.

Thankfully, one day I saw the light and realized that homemade pizza is SO much better than frozen (crazy concept, I know!). So as a teen, I became obsessed with making my own pizza and trying to recreate the flavors that I loved in store-bought and restaurant pizzas.

Over the years, I learned a few tips and tricks to make the process easier and get the most out of homemade pizza. Today I’d like to share some of those tips and tricks with you!

1 - Cook your pizza on a preheated surface

If you’re going for more of an artisan, pizzeria feel to your pizza, it’s best to cook it on a preheated, heavy surface. There are many options available for this: a heavy-duty baking sheet, a pizza stone, an upside-down cast iron skillet, etc. Use whatever you have available! But make sure you preheat your surface in a hot oven for at least half an hour before baking your pizza.

2 - Cook your pizza at a very high temperature

Restaurant pizza ovens can get very hot. To recreate that taste, it’s important that your oven temperature is high enough. I recommend 500°F.

3 - Cook your pizza on parchment paper

When I first started out making homemade pizza, I would dutifully dust my pizza peel with cornmeal, lay my pizza dough on top, create my pizza, and transfer it to the oven. The cornmeal helped to make the pizza slide off of the peel, but boy did it ever make a mess. Some of it would inevitably end up on the oven floor and burn. Not fun.

Then I discovered parchment paper! It makes the transfer SO much smoother, and there’s a lot less mess. I will say that the crust doesn’t get quite as crispy using parchment as opposed to cornmeal, but it’s very much worth it in my opinion.

4 - Think outside the box with your sauces

It’s easy to get stuck in a rut and only reach for your typical red pizza sauce. But there are so many more options out there! Here are just a few ideas:

• ranch dressing
• refried beans
• Alfredo sauce

5 - Don't overcook your protein

I recommend slightly under-cooking your protein since it will cook a little bit more once it’s on your pizza. For example, don’t cook your bacon until it’s crispy because it will be singed once the pizza comes out of the oven.

6 - Get creative with your toppings

As with my sauces tip, I recommend branching out with your toppings. I’ll be the first to admit that I love a plain pepperoni and cheese pizza. But it’s really fun to experiment with creative toppings!

7 - Brush your crust with an olive oil and garlic blend

I’m not sure where I learned this trick, but it really amps up the flavor of your pizza! Simply pour extra virgin olive oil into a dish and add minced garlic. Then, before adding any other toppings,  brush your crust with it, making sure to get some pieces of garlic on your crust as well.

8 - If you crave a crispy crust, par-bake it first!

Not gonna lie, it can be a challenge to get homemade pizza crust crispy and done all the way through. To help combat this, you can par-bake the crust. Simply slide it onto your preheated cooking surface and bake for about 5–8 minutes, or until beginning to brown. Remove from the oven, cool slightly, and add the toppings to the browned side.

Bonus tip: You can par-bake several pizza crusts in advance, cool, and freeze. Then you can have them on hand when the pizza craving strikes!

9 - Avoid the urge to over-top your pizza

Again, if you like a crispy crust, try your best not to over-top your pizza! I know, I know. It’s easy to get carried away. After all, you want to make the most epic pizza known to man. But if you mound on the toppings, it makes it hard for the crust to get fully cooked. Rein it in a bit and your pizza will love you for it.

10 - For a cracker-like crust, use tortillas!

For an extremely thin and crispy crust, you can use flour tortillas for your base! It’s super easy and convenient, and the results are wonderful. I like to par-bake the tortilla first, top, and cook until the cheese is melty.

I mean, look how crispy that is!

11 - Get creative with your cheese choices

I know I’m starting to sound like a broken record, but variety is the spice of life, people! Mozzarella is great and all (I love it on pizza!), but it doesn’t have a punchy flavor. Things like Parmesan, feta, goat cheese, brie, and even sharp cheddar make for an interesting pizza. Try pairing a more intense cheese with mozzarella and see if you enjoy it!

12 - Season your pizza with salt and pepper

Just like any other dish that you cook, pizza benefits from a sprinkling of seasoning. Just be careful to not go overboard with salt if your toppings are already quite salty.
