We offer complimentary, self-guided tours of the Mill everyday during our operating hours.   Witness the historic cider-making process in the learning center and cider-gallery, explore the Mill Store Marketplace and taste our beverages in the Tasting Room.

Milling around is part of the fun at the Fly Creek Cider Mill and there is no better place to start than by the Millpond. Located just behind the Mill, the pond is where water energy that drives the cider making machinery is held before releasing it through the turbine. It is also home to the Mill's friendly ducks and geese whose antics are entertaining to watch.  The new "Quack & Honk" Gemstone Mining Sluice is ready and waiting for you to find your hidden Gems!  The wheelchair-accessible boardwalk provides a wonderful place to sit, relax and enjoy a refreshing treat from the restaurant and bakery — all the while taking in the beautiful view.

Children will not want to leave without exploring Tractorland next to the Restaurant & Bakery: a kiddie play area for ages 2 - 6 with a paved little-trike track and a wooden climb-on tractor. Plenty of covered picnic tables are provided for mom and dad to enjoy a food and beverage treat while the young folks work off their energy.

Book onto our guided Thatchers Cider Tour, where you’ll learn about how we’ve been making cider here in Somerset for over 115 years. You’ll see how times have changed and no doubt you’ll hear a story or two about the Thatcher family. And of course, you’ll also get the chance to try a few ciders too!

What to expect from your Thatchers Cider Tour

Our tour is available for individuals (1-15 people) or groups (15-30 people) and lasts approximately 2 hours. Please note some of the buildings in our mill have narrow corridors and uneven floors, steps and stairs. Therefore we regret they are unsuitable for wheelchairs, mobility scooters, or similar mobility aids. Please read our terms and conditions before booking.

The tour is ÂŁ15.00 per person.

We’ll take you around the mill, where you will be shown how we make our cider from start to finish, with over 115 years of cider making expertise. The tour introduces you to our working mill and packaging hall, and whilst we always want to show you as much as we can, we can’t guarantee that every line will be operating during every tour.

At the end of the tour, you’ll get the chance to sample some of our Somerset Ciders, from the well-known brands, to our limited edition range.

A fantastic way to spend a couple hours in the heart of Somerset cider-making country.

Tour Terms and Conditions

  • Tours will consist of indoor and (weather permitting) outdoor areas.
  • Please wear suitable outerwear and footwear. We reserve the right to refuse participation on the tour if we consider inappropriate clothing is worn. This includes open shoes / flip flops / sandals.
  • Non slip soled shoes are advised.
  • Some of the buildings in our mill have narrow corridors and uneven floors. Therefore we regret they are unsuitable for wheelchairs, mobility scooters, or similar mobility aids.
  • We are a working mill and therefore some restrictions may be in force and for that reason all aspects of the tour cannot be guaranteed.
  • Minimum age for tour participants is 15. Only participants aged 18 years or over may taste our ciders.
  • If you are, or look under 21 please bring ID.
  • Our tours are conducted in the English language only.
  • We are afraid no dogs or any other pets are allowed on the tour.
  • We allow photography in the orchards but not in the cider mill.
  • Tours are weather dependant.
  • Booking in advance is required.
  • You may be required to sign acknowledging these and other terms of participation.
  • You participate on tours at your own risk.
  • Tour vouchers are valid for 12 months from then date of purchase.

With over 20 years as a cider drinker, maker, communicator, judge and advocate, I have learnt the knowledge of, and developed the contacts within, the cider community which enables me to provide a range of unique and bespoke tours and tasting sessions.

On the tours it's possible to get exclusive behind the scenes access to world famous cider makers and taste ciders before they have even been released.  

On the tasting sessions it's possible to taste rare and old UK ciders as well some of the ciders I have collected from my global travels (that are not available in the UK).

Explore Niagara On A Guided Craft Cider Tour

Our guests on the Niagara Craft Cider Day Tour will first get an in-depth understanding of the cider-making process from the knowledgeable staff at Niagara college’s Teaching Winery. After that, it is time of lunch at Silversmith Brewing Company in Virgil, which calls for a cool pint of cider. The third event on the day tour will be a Shiny Cider tasting and educational discussion at Small Talk Vineyards. The day tour ends with an educational tour and Ironwood Hard Cider sampling at Sunnybrook Winery which is Canada’s first and premium winery, located close to the lake in Niagara-on-the-Lake.

In this blog, we will be covering,

A. Experiences:

Explore Niagara On A Guided Craft Cider Tour

  • Niagara College Teaching Winery: Our guests on the Niagara Craft Cider Day Tour will first get an in-depth understanding of the cider-making process from the knowledgeable staff of Niagara College Teaching Winery. There will be a number of samples of their different ciders available. Situated at the foot of the Niagara Escarpment, take in the vista of their very own vineyard. This winery tour is about 40 minutes duration and includes a ticket for admission.
  • Small Talk Vineyards: This day tour is a third stop for an educational discussion and Shiny Cider sample at Small Talk Vineyards. There is Shiny Apple Cider all over and you will probably have seen the can before. Were you aware of their multitude of varieties? After discovering their additional cider selections, guests will embark on a tasting journey. This winery tour is about 40 minutes duration and includes a ticket for admission.
  • Ironwood Cider House – Sunnybrook Farm: This Day Tour ends with an educational tour and Ironwood Hard Cider sampling at Sunnybrook Winery, the original fruit winery of Canada, which is located close to the lake in Niagara-on-the-Lake. In addition to receiving a flight of their choosing, customers can taste some of the world’s top fruit wines! We are also going to stop here for lunch. Visitors will be able to place an order from the mouthwatering Ironwood menu. This winery tour is about 40 minutes duration and includes a ticket for admission.

  • For a complete refund, you may cancel up to 24 hours before the experience.
  • You must cancel at least 24 hours prior to the commencement of the activity in order to get a complete refund.
  • You will not receive your money back if you cancel less than 24 hours before the experience begins.
  • Less than 24 hours before to the experience’s start time, modifications will not be permitted.
  • The local time of the experience determines the cutoff times.

We met Mark at his family’s home, where he has a shed for the cider making in the back.  He took the time to show us around the property a bit and talk about how the different farmers and property owners in the area stay connected with each other.

Mark shared a bit about how he got started making cider (it wasn’t his first career, by far!).  His Cockagee cider won Best Irish Drink last year, and is notable as being the only cider in Ireland made using the ancient keeving process, a purely natural fermentation.  More on that in a bit!

Our cider tour started by spending some time in the shed where he makes everything, from start to finish.  In general, cider making involves three stages:  crushing the fruit, pressing out the juice, and allowing it to ferment.  There’s no brewing involved—the process looks more like that of champagne than beer.

Beyond this millennia-old process, though, there are dozens of variables that cider makers can choose.  From the types of apples to the fermentation to the machinery, there’s a lot of room for experimentation in the craft.

It was amazing to get this type of Irish cider tour, because most of the time you’ll be in a big commercial facility—a very different experience!

What is keeved cider?

Then we learned how they’re “keeving it real” (LOL never gets old).  Keeving is a process used to make naturally sweetened cider.  For this type of cider, you can only use cider apples (not eating ones, or a mixture), and the apples are first pressed to get the juice out—absolutely nothing else is added (no sugar, no water).

Natural wild yeasts eventually make their way into the juice to achieve the necessary fermentation.  Because this is all done totally naturally rather than adding yeast, this makes the total fermentation time for the cider 12 to 18 months, rather than the 3-6 weeks that’s normal.

Over the course of time the pectin in the juice makes almost a gelatin that rises to the top (it reminded me of my kombucha scoby).  This is such an interesting and rare process…while most of the French ciders are keeved, Mark is the only one in Ireland doing it right now (and only with the Cockagee cider, not his other ones).

After learning all about keeving, we went into the little tasting shed and Mark took us through several different cider versions he makes.

Ciderkin is the equivalent of “small beer”, using the second pressing (in old time-y days this was used as laborer wages).  His is (if I’m remembering correctly) around 4%, but historically this was even lower ABV.

My favorite fun fact according to Mark:   alcohol under 3-4% rehydrates your body, vs. dehydrating it… #themoreyouknow

We then tried his Windvane (50/50 eating and cider apples) with “a little bit of funk in it”.  Then it was on to the Lambhog (little hand, pronounced “Lavohg” in Irish).  It’s 100% cider apples but not keeved, which is what sets it apart from the Cockagee cider.

Cider apples are full of tannin, the same as red grapes, and so this gives the cider a lot of body and dries your mouth out more than what many ciders will (because they’re made more with eating apples).

And then the glorious Cockagee (the name of the cider apple it’s made from…its named after the color of the apple which translates to “goose-shit green” in Irish).

This is 100% keeved and made from the cockagee apples, and is absolutely delightful.  It drinks like a really great sparkling wine, full of body and nuance and different flavors.  It’s amazing!

Destination Cider: Normandy and the Tour de France

Each year the  Tour de France , the world’s most famous bike race, takes place over a period of 21 days (English speakers call each day called a “stage”), covering much of France and also passing into neighboring countries.

For the past year, the residents of the northwestern part of France, known as Normandy, have anticipated the great honor of hosting the “Grand DĂ©part,” the official start of the 103rd race on July 2. Nearly 200 cyclists representing 22 teams attracted throngs of tourists to the region, a region (luckily for me) otherwise best known for cider.

I was fortunate to be among the crowd both for the start of the race and to sample some of the region’s amazing array of ciders—“le cidre” in French.

Cider apple farmers in Normandy believe in their claim to the oldest of all cider-making traditions. One cider maker I spoke to, Philippe LĂ©crivain, thought there may likely be 500 or 600 cider producers in the region of Normandy.

Roadside cider, Calvados and pommeau are advertised every mile or so on hand-painted signs along winding narrow roads and roundabouts. Cider-loving visitors to this lazy, forgotten land may think they have discovered the very soul of cider’s attraction: a complete vacation from the hustle and bustle of productive, commercial, digital life, a place where the heart and soul are at the center of the sweet routines of daily life.

In France, le cidre is a farmer’s drink and a peasant’s drink. At a roadside tasting room I visited, a second-generation cider maker expressed surprise that the United States is experiencing a cider boom. Here cider is a mere step above water and is so taken for granted that rarely, if ever, is it listed among the wines on a restaurant’s menu. Only in one restaurant of a dozen did I see a producer or a product title beside a cider listed on a menu. Rather, cider choices are listed as Sweet (“Doux”), Dry (“Brut”) or Corked (“BouchĂ©) or, alternatively, by serving size: bowl of cider (a large round coffee mug), pitcher of 50 centiliters or pitcher of 1 liter.

Traditionally cider is a welcome drink any time of day, often served with peasant foods such as crepes or galettes. Locals joke that they drank plenty of cider as kids and were given Calvados (apple brandy) in their baby bottles.

That said, if you want to know what kind of cider is being served, every small town in Normandy seems to have its own cider maker or two, and you can go to their tasting rooms or to the local wine store and buy the bottles—cheap. The typical price for a 750ml bottle of cider is about 3 Euros (or $3.32 US).

The ciders being poured in restaurants are the same ciders being poured at local roadside tasting rooms. Restaurants seem proud to offer their local ciders along with the daily menu, which is often made up of featured dishes that vary daily.

Cider Selection and Style

In the town of Pontorson, near the start line, there were five ciders for sale at the store called La Cave d’Éric:

  • Cidre Fermier (5% ABV) by Maison Le Pressoir du Mont, cider maker Philippe LĂ©crivain of Pontorson
  • Le BrĂ©cĂ©en (4.5% ABV) Cidre Fermier du Val de SĂ©e from the town of BrĂ©cey
  • Coquerel (4.5% ABV) Cidre de Normandie from the town of Milly, available in Doux or Brut
  • Cidre RosĂ© (3% ABV) (fermented from fruit of rose-colored flesh) from la Maison Ecusson, founded in 1919 in the town of Livarot
  • CuvĂ©e des Druides (4.5% ABV) Cidre de RĂ©ception (Certified Organic) by Yves and Pascale Dufour in the town of Cherrueix

There was also, of course, a selection of Calvados, Pommeau (a mixture of Calvados and apple juice) and an odd beer/cider combination product called Saint-Michel Apple (4% ABV).

The character of ciders from Normandy does tend to differ from ciders domestic to the United States. This is largely because of the extra steps in the French cider-making process, including keeving, a natural separation step that occurs at a low temperature and very slowly in the early stages of fermentation. A characteristic sweetness was consistent in all of the ciders I tasted in Normandy.

Furthermore, there is a long history in the region of growing apples specifically for cider making (apples not good for eating raw); thus plenty are available to lend a detectable tannic flavor to the Norman ciders. Some of best performing apple varieties lately, according to local growers, are Avroles, Bedan, Bisquet, Noël des Champs, St Martin, Petits Jaunes and Moulin à Vent.

Cider-lovers who also appreciate a divine gastronomical experience will not be disappointed when visiting Normandy. Food is prepared and served with a simplicity yet attention to detail and flavor that is unlike the cuisine of North America, even at the best restaurants.

Usually, menu options are handwritten on a chalkboard and most likely include mussels and a few other fish and shellfish options. Beef entrecĂŽte and fries are almost always available.

As one example of the culinary nirvana I experienced, in a small 1,000-year-old hotel in Beauvoir with just 10 tables, a plainly dressed group of five local servers fed diners unpretentious and deeply satisfying meals, among them a piece of lightly breaded “plie” fish with perfectly steamed baby potato halves and a side of diced eggplant and herbs. Such meals are perfect with the bolĂ©e of fresh cider 
 and then why not sit around for another hour with an espresso and a crĂšme brulĂ©e? You might as well, because all of the stores and services are closed every day for a two-hour break over lunch.

Happily for tourists who want to enjoy such a meal, during the race most restaurants don’t fill up despite the assembled fans because the French are far more likely to pack a picnic of fresh baguette and cheese.

Cider Culture and the Tour de France

Both the Tour de France and cider are intimately linked in the culture of Normandy. Shopkeepers have painted their store windows with images of racers bearing bottles of cider tied to their backs. Locals turn out in droves to cheer as the cyclists pass each small town.

For cider lovers who may want to enrich their knowledge of the  Tour de France , it is a complex and impressive sporting occasion, with many fine points to learn and follow. The cyclists ride at the most 232 km (144 miles) per day, for a total ride of 3,519 km (2187 miles). Each day there is a stage winner and winners in other categories, including best climber, best sprinter and best young rider. On the following race day the best climber wears the famous red polka-dot jersey. The best sprinter wears the green jersey. The best young rider gets to wear the white jersey. The yellow jersey is worn by the cyclist who has the best overall accumulated time for all the stages.

To our friends in France, whether they are celebrating the Tour de France, mourning the fourteenth of July or just breaking bread in the park, we share a deeply heartfelt, “Bon appetit!”

Visit Nightingale Cider in Tenterden, Kent!

See what happens on our family fruit farm and in our cidery with a tour and tasting led by founder and cider maker, Sam Nightingale.

We run tours in the spring/summer on Saturdays for groups of up to 12 people.

Saturday 21st September 2024

Guests will enjoy a welcome drink and a chat in our tasting room before heading into the stunning orchards of Gibbet Oak Farm.

Upon returning to the cidery, the group will delve behind the scenes to see where we make, mature and blend our ciders.

The tour will conclude with a tutored tasting of a selection of our range, including tasting ciders direct from our tanks.

Tours take on average 1.5 hours. On completion, visitors are welcome to enjoy our taproom and purchase ciders to take home.
