"The ability to get anyone who wants to come in to see our tanks and talk about beer with the people making it -- that is what we do for a living," said Gabriel Magliaro, an owner of Half Acre Brewery.

That philosophy no longer works in an increasingly competitive craft beer landscape, which is why Goose Island is adding public tours and an 89-seat tasting room to its brewery. Both are expected to launch early next year.

Ken Stout, Goose Island’s director of consumer experience, said the lack of public access long nagged at him, but the industry’s growth has made opening the brewery’s doors essential.

“Lagunitas opened that beautiful tasting room,” Stout said. “Revolution has a great tasting room. There are all those new brewpubs. We are the most-known brewery in Chicago, but people don’t know where our brewery is.”

It’s an obvious missed opportunity in an industry where craft beer has become an experience and ideology almost as much as fermented grain in a bottle or can. Sixty-one percent of American breweries in 2013 had a “significant onsite distribution presence,” either as a brewpub or a taproom, according to the Boulder, Colo.-based Brewers Association.

Tours and taprooms are among the most effective methods of connecting with an audience, said Julia Herz, director of the Brewers Association’s craft beer program.

“There are many positives, including a deeper connection with the local community, an avenue for sales and event revenue, a place for extended education and also an option to interface directly with the appreciators of their craft beers,” Herz said by email. (The Brewers Association has not counted Goose Island as a “craft brewer” since Anheuser-Busch InBev bought the brewery in 2011).

“Tasting rooms often are the birthplace of many of today’s craft brewers’ greatest ideas,” Herz said. “A tasting room is a place where brewers who pay attention can get instant feedback and a read on how beer lovers respond to their offerings.”

Gabriel Magliaro, an owner of Half Acre Beer Co., said the tenor of his Lincoln Avenue brewery changed as it opened to the public — first tours, then a bottle shop and, in late 2012, after the brewery had been in business for five years, a taproom.

“The ability to get anyone who wants to come in to see our tanks and talk about beer with the people making it — that is what we do for a living, in my opinion,” Magliaro said. “The people who come are in it for the beer, but also the camaraderie and spending time with people elbow-to-elbow at the bar. They’re in it for the experience.”

Half Acre is planning to expand its Lincoln Avenue taproom by about 60 percent and build a taproom at its forthcoming second brewery, on Balmoral Avenue, which is expected to begin production by the end of the year.

For most breweries “it would be crazy not to” have a taproom or offer tours, Magliaro said.

“Financially it’s a good thing, and to not share what you’re doing at the source with the people who care most about it, why wouldn’t you do that?”

Craft beer was far less experiential when Goose Island opened the Fulton Street brewery in 1995. And it wasn’t so long ago that Chicago brewing barely extended past Goose Island (there was Rock Bottom, Piece Pizza and a smattering of suburban brewers), but Stout said the brewery can’t fight change anymore. The Chicago metro area has more than 50 operating breweries with many more in planning.

“There’s no better marketing device than getting people in your brewery,” he said. “They get to touch the beer and smell it and feel it, and talk with people who love telling the story. You’ve got to get them in your house and show them a great time, and that we’re credible.”

Credibility has become particularly important for Goose Island since becoming part of Anheuser-Busch InBev, leading to a robust discussion of its “craft” merits. Stout acknowledged as much, and offered a comparison to his college music-listening days.

“When The Replacements came out, they were underground and sounded great,” Stout said. “After a few albums, they got outside of just being played on WXRT and it was like, ‘Oh man, they’re not as good as they used to be.’ We’ve got a little of that going on.”

While Goose Island’s expansion isn’t directly tied to Anheuser-Busch buying Goose in 2011 — the expansion “is all generated by Goose Island revenue and profit,” Stout said — Goose production has been up considerably since exporting some of its brewing to A-B plants in New York and Colorado. So in that sense, the expansion can be directly tied to Goose’s ownership. Stout said the tour will not shy from that part of its story.

“We don’t want to hide it because it’s the truth, but we want to give context,” Stout said.

“Our biggest challenge four or five years ago was keeping up with demand,” Stout said. “That’s not an issue now.”

Goose plans to operate the tasting room Thursday through Saturday during January and February, then expand to five or six days a week. Brewery tours, which will last 60 to 75 minutes, will cost $10 and include three two-ounce samples, plus a Goose Island-branded nonic pint glass. Reservations will be available online.

The taproom, at 1800 W. Fulton St., will feature eight taps, Stout said, some of which will be the beers that Goose Island is pushing nationally — like IPA and 312 wheat and pale ales — along with the Chicago- and draft-only Green Line pale ale, beers from its Fulton and Wood series and a rotation of others (Stout mentioned Matilda and Sofie as possibilities).

Renovation is being done by local contractors that include Right Way Signs and Icon Modern.

NEAR WEST SIDE — As part of a move to open the Goose Island Brewery to the public for the first time, the brewers at Fulton and Wood will debut a new taproom this week.

Starting Thursday, the taproom at 1800 W. Fulton St., offering eight Goose Island brews on tap, will be open from 2-8 p.m. Thursdays and Fridays and noon to 6 p.m. Saturdays.

The taproom has been under construction since the fall, but the new bar and tours have been five years in the making, said Ken Stout, consumer experience director at Goose Island.

"To be in the mix and to be relevant, we've got to introduce ourselves to Chicago better than we ever have," Stout said in the fall. "We're the most well-known craft brewery in Chicagoland, but nobody knows we're here."

The taproom will not serve food, but guests are welcome to bring their own, according to the brewery's website.

Before Goose Island was acquired by Anheuser-Busch in a 2011 sale, nearly all Goose Island beers were brewed at the Fulton Street brewery. Today, Goose Island's 312 Urban Wheat Ale, Honker's Ale and some seasonal beers are brewed in Anheuser-Busch facilities in Baldwinsville, N.Y., and Fort Collins, Colo., Stout said.

But most other brews continue to be brewed at Fulton and Wood, including draft-only Green Line, Matilda, Sofie, Oktoberfest, Festivity [formerly Christmas] Ale, the Fulton & Wood series and Bourbon County Stout.

The brewery opened in 1995.

Tickets to the brewery's new tours, which are offered at 3, 4, 5 and 6 p.m. Thursdays and Fridays and at 1, 2, 3 and 4 p.m. Saturdays, are on sale online for $12.

During the 45-minute tour, brew enthusiasts will sample Goose Island beers and visit the brewery's Innovation Room, where small-batch beers are created, the Wild Fermentation Room, Barrel Aging Warehouse, bottling line and other brewery sites.

In addition to samples, tour guests will also leave with a custom made pint glass.

Goose Island also offers tours at its original Clybourn brewpub location, which opened in 1988.

There are countless amazing Chicago breweries located throughout the city, each producing a variety of beers ranging from extra-hoppy IPAs to dark, decadent stouts. While we’ll never turn down an opportunity to check out the best bars in Chicago , sometimes it’s nice to have a sip of beer while learning about how it’s made. Luckily, local breweries are happy to take you behind the scenes and walk you through the process. The pandemic has caused many places to put a pause on tours, but there are still a number of interesting and informative options. Whether you prefer a tour that's short and sweet or one with plenty of complimentary samples, the best brewery tours in Chicago will give you the 101 on malts, hops, yeast and much more.

Best Chicago brewery tours

1.  dovetail brewery.

Dovetail Brewery

You'll get to taste three of Dovetail's beers during this lengthy (and super-informative) tour, but the most interesting moment comes when participants are asked to sample three different types of water. Dovetail uses reverse osmosis to try to replicate the water of Pilsen, the Bohemian city where the pilsner beer was born—the resulting liquid is noticeably different from what comes out of the average Chicago tap. The European-style touches don't end there; you'll also see a giant steel tub that is used to expose wild beers to natural bacteria in the air and a copper kettle that's more than 100 years old. When the tour is over, continue pretending that you're in Germany with a radler and a pretzel in Dovetail's taproom.

Booze included: Three .3L pours selected by the tour guide and a complimentary .3L Dovetail glass.

Tours:  The third Saturday of every month at noon. First come, first served. $30.

2.  Goose Island Brewery Fulton

Goose Island Brewery Fulton

This isn't where Goose Island got its start (that'd be the original Clybourn brewhouse) but plenty of beer has been brewed here since the facility opened up in 1995. After meeting in the adjoining taproom, you'll make your way through a tour of the brew deck, fermentation cellar, packaging line, innovation brewery and barrel-aging program. Beer is being made 24/7, so you're nearly guaranteed to spot some brewers hard at work.

Booze included:  You'll sample a variety of beers during the tour. Afterwards, you'll take home a free pint glass.

Tours: Every Friday through Sunday at 1pm, 3pm and 5pm. Reserve a spot here . $15.

3.  On Tour Brewing

  • River West/West Town

On Tour Brewing

Founded by a Deadhead homebrewer who used to follow Phish on tour (hence the name), this West Town brewery has been a critical darling since taking home two medals at the Great American Beer Festival in 2017. Tour participants will learn about the old warehouse they're standing in (which once housed a boiler manufacturer), taste the raw grains that go into On Tour's beer and reminisce about Trey Anastasio guitar solos over a few post-tour samples.

Booze included: Three five-ounce pours and a glass to take home.

Tours: The first Sunday of every month at 1pm. Reserve a spot here . $15.

4.  Hopewell Brewing Co.

Hopewell Brewing Co.

It takes about 45 minutes to hear all about this Logan Square brewery and get a closer look at its brewing facility, most of which is visible through the windows in its taproom. Still, it's interesting to see how an operation as small as Hopewell manages to keep its tap lines full in addition to bottling and canning some of its beers. If you want to learn a lot about brewing without walking very far, this is the tour for you (just don't forget to wear closed-toe shoes—they're required).

5.  Revolution Brewing Taproom

Don’t have a ton of time? Fundamentally against paying money for a walk through an industrial factory? Don’t need any more glassware or a ton of beer thrown at you during a tour? The Revolution tour at the Kedzie facility is for you. It goes backward, beginning in the 40-degree cold room where packaged beer stays chilled before going to a distributor. From there, you see a wall lined with pallets of empty cans, touch on the grain milling process, then walk through the brewhouse where you’ll see the brewing system. It may sound cursory and quick—and it is—but not every tour needs to be an encyclopedia of beer knowledge. Booze included  A can of "walking beer" to sip during the tour and a sample at the Innovation Station. You'll also get a free keepsake glass at the end. Tours:  Every Saturday at 1:45pm, 2:45pm and 3:45pm. Reserve a spot here . $15.

6.  Goose Island Clybourn Brewhouse

Goose Island Clybourn Brewhouse

Established in 1988, the Goose Island Brewhouse is an elder statesman of the city’s (heck, the country’s) craft beer scene. Such credentials translate to a 45-minute tour that's packed with history and culture, and tastings of some well-known beers, not to mention a sweet take-home (a logo pint glass!). If you're looking for a more comprehensive look at Goose Island's brewing process, check out the tour of its Fulton Street Brewery.

Booze included:  Several beer samplings and a commemorative glass.

Tours:  Every Friday through Sunday at 1pm, 3pm and 5pm. Reserve a spot here . $15.

7.  Temperance Beer Company

Evanston ended its status as a dry town in the ‘70s, but it wasn’t until Temperance Beer Co. came along in 2013 that the northern suburb gained its first craft brewery. Today, it remains a pillar of the local beer scene, providing folks with an inviting place to pick up a growler or hang out for a few hours. In the warmer months, you’ll want to stick around after the tour to take advantage of the patio and food trucks that swing by. 

Booze included: Three beer samples and one souvenir Belgium glass to take home.

Tours:  The third Saturday of every month at 3pm. Book a spot here . $10.

8.  Penrose Brewing Company

Penrose Brewing Company

About an hour west of the city is where you’ll find this brewery that specializes in Belgian-style beers. Started by ex-Goose Island employees, Penrose offers award-winning pours like Goofy Boots—a hazy IPA with intense hoppy flavors and notes of candied lime, ripe peach and dried mango—alongside wild beers and experimental small batch releases such as an imperial pastry stout (Neapolitan) and a kettle sour (Session Sour). During the 45-minute tour, you’ll walk through the brewhouse, fermentation cellar and packaging area to see how it’s all produced.

Booze included: One pint of beer, and you get to keep the glass.

9.  Miskatonic Brewing Company

Even if you’re just grabbing a beer at the bar, Miskatonic Brewing’s taproom offers a close-up view of the tanks and action. The Darien brewery doesn’t limit itself to one style so you can expect everything from a kettle sour with plum (Plum Long Tongue Liar) to a cinnamon mocha imperial stout (Dungeon Master: Gelatinous Cube). The tours are private—requiring a six-person minimum—and include a guided tasting.

Booze included: Four five-ounce samples and your choice of a 12-ounce pour.

Tours: Contact Miskatonic to schedule a date and time for a private tour. A two-to-three-week notice is typically needed. $35 per person.

Where to see Whooping Cranes in Texas

Whooping Cranes are one of the most endangered animals in North America, and spend the winter months on only a thin stretch of coastline in Texas. The good news is their numbers have slowly been rebounding in past decades, making it easier than ever to see one in the wild.

Every winter Whooping Cranes migrate from their breeding grounds in Canada to the central Texas coast, where they spend at least 5 months. Because they return to the same areas each year, finding them can be surprisingly easy if you know where to look.

The best places to see Whooping Cranes in Texas are Aransas National Wildlife Refuge and Goose Island State Park near Big Tree. They’re present in strong numbers from mid-November to late March. Boat tours out of Rockport and Port Aransas are the best way to get close up views, which cost between $85 and $112 per person.

The cranes feed in shallow marshes with brackish water, with crabs being their favorite food. When searching for cranes, avoid open sandy stretches of beach. That’s good habitat for small shorebirds, but you won’t find any Whoopers there.

When is the Best Time to see Whooping Cranes?

Technically Whooping Cranes can be seen on the central Texas coast as early as late October some years, and as late as late April. But it’s best to wait until all the cranes have flown in from Canada during the fall, and then search for them before they begin to migrate north in late March.

The best time to see Whooping Cranes in Texas is late November through mid March. This is when all ±500 cranes are expected to be on their wintering grounds along the coast, maximizing your chances of seeing one. They’re active throughout the day, although mornings are best for general bird watching and wildlife viewing.

Aransas National Wildlife Refuge

This refuge is huge, with an abundance of marshy habitat that attracts cranes. Luckily, the Whooping Cranes have favorite feeding spots they constantly return to, which makes finding them much less time consuming.

The best places in Aransas NWR to search for Whooping Cranes are Heron Flats Trail and the Wildlife Observation Tower. Heron Flats typically offers closer views, so check there first. The expansive marshes seen from the observation tower are a reliable spot, but the cranes here are usually only viewable from a great distance.

Any wet grassy area in the refuge could potentially have cranes. They’re sometimes also seen flying overhead, especially in the evenings. Be sure to separate them from the more common Sandhill Cranes.

Goose Island State Park

The main section of this park rarely has Whooping Cranes, so don’t head for the headquarters building. In fact, you don’t even have to pay to get to the good crane spot here.

The best spot to see Whooping Cranes at Goose Island State Park is in the open grassy field directly across from Big Tree. Follow signs along State Park Road 13 toward Big Tree. The cranes aren’t here at all hours, but multiple will visit this field on a daily basis.

The field isn’t very large, but that makes it easy to drive around and check for cranes. This is also a decent place to try for photos if you have a good zoom camera.

Seeing Whooping Cranes by Boat

Viewing Whooping Cranes by boat is by far the most exciting and memorable way to view these birds. You’ll see more total cranes this way, and get great views at close range.

If you’re serious about photographing a Whooping Crane and getting great photos, taking a boat tour is practically a must.

Not sure which tour to choose? Captain Tommy with Rockport Adventures has been doing Whooping Crane tours for many years and has a good reputation. 

Note that the wind over open water is always blowing, and it gets chilly. Even on warmer winter days be sure to wear layers for the boat tour. If it’s a colder day then really bundle up.

What’s the best weather for viewing Whooping Cranes?

The best weather to view Whooping Cranes is a partly cloudy to clear day with low wind. Temperature doesn’t have a major impact on the birds’ activity level, unless temperatures are near or below freezing. Avoid especially windy days if possible.

The Whooping Cranes are active in most weather conditions, unless it’s raining or very windy. They hunt and search for food daily, so weather doesn’t usually have a major impact on them.

Overcast days won’t provide as good lighting to make the colors on the birds pop, but you’ll still see them just fine.

Our famous beer began with a trip across Europe, when Goose Island founder (and unabashed beer lover) John Hall took a tour across the continent. Pint by pint, he savored the styles and selections of brews in every region, and thought to himself, “America deserves some damn fine beer like this, too.”

Craft brewing wasn’t widely known at the time, but upon return from his European sojourn, John set out to change all that. He settled down in his hometown of Chicago—a city perfect for craft beer, with rapidly evolving tastes and the largest system of fresh water on the planet. And then he got to brewing.

First he made some stellar beer. Then he invited his consumers in to watch his process at the brewery, bringing them behind the scenes every step of the way. The result was a new fascination with craft brewing, and beer that not only catered to people’s tastes, but challenged them as well.

That was back in 1988, and we haven’t slowed down since. By 1995, John’s beer had become so popular that he decided to open a larger brewery, along with a bottling plant to keep up with demand. 1999 brought even more growth, along with an additional brewpub, and today, what was once one man’s pint-filled dream has become the Goose Island empire you know and love.

Here’s where we tell you that in 2011, Goose Island Beer Company was acquired by Anheuser-Busch InBev. Since then, we’ve continued to brew beer that we’re proud of and now we get to share these beers with our friends both nationwide and internationally. We think that’s pretty neat. If you’re ever in Chicago, we’d love for you to stop by the brewery and have a beer with us.
